壽司師傅話要睇貝類係咪新鮮,睇佢啲肌肉識唔識收縮就知道啦,次次食omakase最鍾意就係睇壽司師傅拍打啲貝類,睇住佢哋縮埋一舊真係好得意🤓當然食落係十分爽脆有口感,好新鮮呢

平時食帶子都係食佢新鮮軟糯嘅口感,但係呢度就用咗好不同嘅方法製作,先用和歌山既木材燒熱備長炭再微微炭烤帶子,肉嘅表面有焦香嘅味道,而裏面仲係保持住軟滑嘅質感,口感特別

喺吞拿魚入面,我一向最鍾意就係食肥美多油份嘅大拖羅,不過原來醬油漬過嘅吞拿魚赤身都係好好食的,經過醬油漬之後魚肉本身嘅腥味會冇咗,肉質仲會變得好柔軟,味道帶鮮甜😍而吞拿魚赤身上面落咗芥末籽作調味,少少刺激,但係入口嘅口感就更多層次

壽司師傅似乎唔係好肉痛啲海膽😬一件壽司上面放咁多海膽肉令人食指大動😍只需要配上師傅特製嘅醬油一啖放入口就已經令人滿足😎食完個口腔仲滿滿海膽嘅鮮味

樁魚嘅肉質好柔軟,而且味道甘醇,配上京都wasabi 漬作為調味,更加帶出到魚肉嘅甜味同埋有少少刺激味蕾嘅感覺

同樣地係十分創新嘅做法,師傅將牡丹蝦肉同埋蝦膏壓碎,整成他他嘅狀態,但係又唔會好似肉醬咁絲滑,反而保留咗蝦肉嘅質感

嚟到結尾,師傅用咗吞拿魚蓉手卷為呢一餐畫上一個句號,手卷入邊除咗紫蘇葉嘅味道之外,放咗青瓜更加係神來之筆,軟滑嘅吞拿魚蓉配埋爽脆嘅青瓜,仲有脆卜卜嘅紫菜,成件事都好圓滿

食完晒所有壽司之後,店員就拎埋最後嘅熱食俾我哋,好少食到加入魚湯製作嘅蒸蛋,成哥蒸蛋都充滿着海鮮同魚肉嘅香氣,仲有蜆肉、白果、魚肉等嘅食材喺入面,口感豐富得來味道仲好多層次,而佢嘅味噌湯睇落平平無奇,但係飲落就知道用咗好多材料熬製,鮮甜美味,飲完非常暖胃,再食埋最尾嘅柚子雪葩😉成餐飯食得好飽仲好滿足
