因為金鐘店冇位,所以今晚來尖沙咀店試。衣度有兩層,安排了往下層,張枱剛巧近窗,可望到日落景。前菜牛油果素鵝卷,估吾到味道幾挾。主菜紅燒牛肋條,同金鐘店一樣咁出色,燒汁惹味,肉質軟腍。但小籠包同鍋貼就金鐘店好D,主要D肉太腍。甜品紅棗糕唔太甜。服務金鐘店比較好。走時發覺上層坐位比較開揚。

轉到新場新環境擁有兩層向海的景緻,繼續老上海嘅風格有旋轉樓梯丶一流餐廳環境顯然是米芝蓮星級飯店的格局。可能因為是星期六, 一到六點開始人多而枱與枱的距離比較近,以米芝蓮飯店來説,有點不像樣。食物質素大部分都維持水準但小籠包真是有點失望,皮薄多汁但一夾就穿有侍改良。另外,有些餸菜煮與上檯時間可能太耐,冇左熱騰騰的上海美味。服務方面,絕對比以往差、服務員欠缺熱誠,於客人附近竟然談到太忙做唔切等說話,服務管理真要多加注意。距離好的客戶體驗暫時談不上,要加把勁;如果不是,相信很難繼續保留於米芝蓮之列。

夜上海由Marco Polo搬到K11 Musea, 景觀比以前更開揚, 裝修執維持着以前充滿著”木”的元素, 清幽而不俗套. 夜上海的菜式説是滬菜, 但也少不了西方的Fusion元素, 像是蜜汁火方用上桂花蜜, 而高力豆沙上面被灑上的粉紅糖粉, 看起來更迷人, 吃下去則少了些傳統的濃重味道. 説到維持傳統, 她的松子魚和小籠包味道上就能做到, 前面者包皮厚度和內裡的Juicy程度就是傳統滬菜餐廳要有的樣子. 後者魚肉口感結實, 炸起來的形狀就像松鼠, 這就是其原形”松鼠鱖魚”的形狀, 酸甜度的平衡當然也是值得讚賞. 在滬菜見到炸子雞並不驚奇, 反正在香港無論任何種型的中菜餐廳也會見到它的身影, 結果果然中伏. 雞皮炸得頗焦, 雞肉肉味不足而且口感偏硬身, 還是不屬於那個餐廳的傳統菜式, 應該就不要點吧!
