話時話,我以前因為經濟多方面的原因,所以一直都覺得無可以允許自己太過浪費金錢系食飯尼一方面,今次系因為嫲嫲生日,我們決定去天龍軒度慶祝一下。天龍的位置還是很容易找到的,我們因為知道嫲嫲平時不敢食很油膩的東西,但係都還是點了東坡肉,因為尼個對佢有好大嘅意義,東坡肉雖然一份不多,但係口感好,連嫲嫲都話天龍軒嘅東坡肉很好味,仲話味道非常正宗,連平時無點食肉嘅細妹都話不怕油膩,甜鹹適中。西班牙黑豚肉叉燒,本身系不知道什麼肉質來的,後來經過介紹先知道原來系用黑豚肉做成的,肉質和口感都覺得是超一流的,讓我們幾個真係食到上癮吖,果然價錢真係王道,平時食嘅叉燒真係無得俾咯,黑豚肉叉燒認真唔錯。海膽羹聽人介紹說很正,果然是沒有令我們失望呀,因為系用海鮮切丁嚟做主要材料的,仲有其他海鮮的搭配,在味道上面可是十分夾吖,而且海膽也是令我覺得好新鮮。

這個星期我提前了幾天向田龍軒book位,希望到時去到吃飯的時候可以不用浪費時間在排隊上面,可以更多的品嘗美食。店鋪的位置比較難找到,我們走了走了將近20分鐘。黑毛豬叉燒,招牌菜式,口感確實是不錯的,叉燒肉質不出,口感乾脆,不會太嚡,而且每一塊的叉燒都是又大又厚的,簡直是我這些食肉動物的福音。還有一個蟹蓋,在我看來也是值得推薦的,不過腥味稍微會重一點點,不喜歡的食客就。。喇、蟹肉還是很新鮮美味的,上面的奶油和芝士味道撈埋一起,感覺是偏向於油膩的,芝士不夠真的是厚厚一層,很多的。環境很棒,價錢貴。

在電視的美食節目上沒少看到這間餐廳的介紹。朋友慶生才有機會去餐廳體驗了,朋友提前說要穿正裝才可以,在利茲卡爾頓的102樓,作爲米其林二星餐廳,環境自然很不錯,連餐廳的衛生間都裝潢的很有品味,最讓人舒服的擺盤,每道菜的擺盤都比較精緻,印象最深的就是大蓋蟹、東坡肉、黑松露竹荪。螃蟹個頭很大,很新鮮的口感,而且外焦裏酥,東坡肉也非常鮮美,難得的是沒有油膩膩的感覺,大概就是入口即化的口感。而黑松露竹荪就是屬於比較清淡,但是很爽口,味道很有層次感。不虛此行的米其林餐廳體驗,超級讚!

由於本糖不甩小姐喜歡吃燒賣, 點菜時沒有留意細字說明就點菜, 上桌時被大大隻鮑魚震懾了.
原來一粒是香茜鮑魚燒賣王, 有整隻鮑魚在燒賣上. 鮑魚燒賣糖不甩每間酒樓一見到都會點, 間間都是瓜子般大的鮑魚仔, 噱頭居多. 天龍軒鮑魚燒賣的燒賣和鮑魚都很大隻, 要用刀叉吃的. 我讓了友人吃, 他說味道像罐頭鮑..... 至於另一粒, 蕃茄蝦球燒賣王, 蝦球開了邊, 蝦肉白紅相間, 雖不是玻璃色但有玻璃蝦的爽口, 蒸蝦很出色, 蕃茄味不特出. 下面的燒賣雖然大份, 但內裡的肥豬肉很香, 加上肉團鬆而不散, 吃到師傳的功架.

東坡肉入口有淡淡冰糖的甜味, 主要有酒的香甜味, 配上醬油的鹹香. 豬的肥膏己經煮化了, 像一抹凝脂輕輕的閣在精緻的碟上, 表層的獻汁還閃著寒寒的反光, 倒影著美麗的海景. 刀叉一撕即開, 豬肉則有韌度又有口感, 不會一切即散, 吃得方便乾淨. 這兒的東坡肉做得非常出色.

龍軒高湯花膠灌湯餃, $112
因為蒸煮的點心是一次過到來, 所以灌湯餃蓋蓋等著吃完別的先. 打開是湯浸餃, 湯色清澈, 一盅有兩隻餃. 湯太清了, 滲了餃皮的味道. 餃子的蝦肉比例較高, 爽口, 不過不夠香, 是口味問題吧, 始終現代講求健康.
整體來說, 麵粉味比較重, 由其是其他點心的水準都這樣高, 這個就有點失望了.

最後餐廳送了一個甜點, 桂花糕拼芝麻餅.
甜點用一個精緻的銀盒奉上, 很有貴氣. 桂花糕香氣清新, 晶瑩剔透的茶色桂花糕, 可窺探內裡的桂花不算密集, 甜度得宜, 而且不會散開一舊舊, 都是不錯的佳品. 我很想吃吃底的墊紙, 應該是雞蛋做的, 友人卻叫我不要失禮.

這裡硬件是夠了, 食物水準高, 但服務人員的軟件方面有很大的進步空間. 問了可否轉去海邊的桌子, 侍應說要問問. 最後轉了鄰臺過去, 卻沒有跟我們說一聲原因 , 隨便說一點什麼都好吧. 五分鐘之後又有海邊臺走, 他們執好了都沒有調我們過去, 一直空著. 以為侍應忘了, 都算吧, 反正開始上菜, 大概知道他們服務水平. 侍應卻在我們臨走時, 說"今次安排不了調臺, 太多人了, 下次啦"......真是有點騎呢....

又是要訂位才有得吃的餐廳,畢竟也是全港最高的中菜廳嘛~每人也可以點不同的茶喝,我就點了荔枝紅茶,味道是清香的荔枝味及濃郁的紅茶味~點心如下:-鮮蝦腸粉這個讚!已分好一件件的蝦腸,很大隻又爽口的蝦仁包住薄薄的腸粉~吃的好滋味-西杏雪影叉燒餐包外層幾香甜鬆亂,內裡叉燒份量也是滿滿的,好吃!-鮑魚燒鵝酥醬汁偏甜巳足夠影響整體味道,撻底一夾就碎-XO醬蘿白糕炒得不算香口味道普通,XO醬是分開的,如果就咁食同普通煎蘿白糕沒分別。-蝦餃賣相精美,可惜皮也比較厚,味道沒特別。-松子海鮮炒飯飯是炒得粒粒分明,只有米好吃.味道比較清淡而且海鮮甚少....-贈送甜品只吃了香芋椰汁糕,味道清新作整頓早茶後的甜點確實是不錯的。

I recommended the Iberico pork char siu and it was only when it arrived after the rice roll that we realised we had double ordered on the char siu oops. Luckily the char siu was still as luscious and fatty as I remembered with a slight char and a sweet sticky glaze.

Deep fried turnip cake in XO sauce was my favourite. Jenga chunks of turnip cake with a golden crunch and a spicy little kick from the XO sauce.

Shrimp spring roll. Thin and crunchy, I just don't understand why they make spring rolls so thin in Hong Kong. I prefer them thicker so there is a heftier crunch when you bite into them.

Assorted siu mai. The individual portions were a high class version of the humble siu mai topped with lobster and gold leaf, while the two in the bamboo steamer were the 'poor' version here topped with a big prawn and scallop. Nice and moist, a solid meaty mouthful.

Contemplating dessert, it is always a bonus to dine with Mr C and Mr A as no sooner when we asked for the dessert menu, they said dessert had been organised for us


I was most excited to see the fried sesame dumpling, crunchy and piping hot with a creamy custard filling. The mango cream, pomelo, aloe vera and sago dessert had a fresh mango flavour and the juicy aloe vera pieces were a nice textural surprise. Osmanthus jelly was subtly sweet, nice and cooling and the little almond cookie was a nice finishing touch.

先來的是天龍至尊蝦餃,一籠五隻,算是慷慨.試一口,蝦淡淡的,完全沒有鮮味,加入的牛油果也有點畫蛇添足,還是傳統竹筍比較匹配,這個價錢來說,真的令人失望.

窩貼大蝦多士,一客有六件,試一口,多士夠鬆化,鮮蝦也彈牙,配上的甜酸醬也挺開胃,味道不俗,只是略為油了一丁點.

蜜燒西班牙黑豚肉叉燒果然是招牌菜,試一口,肉夠鬆軟,重點是吃得出肉的鮮味,用料上盛,實在難得.配上蜜汁的香甜,是一試難望的.

龍軒東坡肉,這個也是招牌菜,但驚喜度則沒有叉燒那麼高了.肉炆得淋,但甘香度只是一般,很多中菜館也做出近似的水準.

韭黃蟹肉燴伊麵,可分四小碗.蟹肉絲也不有不少,也夠鮮甜.伊麵夠淋軟,配起來清中帶鮮,也不錯.

最後有免費的甜點,是桂花糕和合桃酥.桂花糕清甜也彈牙,合桃酥香脆鬆化,非常高水準.

指定信用咭有九折,不錯!

侍應非常有禮,聽說各人也精通八國語言,很impressed.

久聞其名,天龍軒開張推廣時常以此道菜式推廣。見叉燒色澤外紅裡白泛油光,肥肉蜜餞融合一起包圍四周微焦呈半透明狀,西班牙黑豚肉肉質果然比較本地頂級梅肉更有實力,叉燒鬆軟甜美之餘多了幾分嚼勁,味道甜而不膩,脂香嘴內享受,回味無窮!果然是名乎其實的招牌菜。

窩貼大蝦多士亦比想像中出色,確實酥香無比!蝦肉身厚彈牙,配以甜甜地調味得宜之醬汁,更令其昇華;多士炸至酥脆,口感甚好,輕輕咬下,似乎已經散碎如粉,油控出色,就是疊底的紫蘇葉亦無留下油漬;適量炸漿令兩者緊貼,同吃有層次,甜香鮮嫩酥脆盡於一身,喜出望外!

果然不失為米芝蓮星星點,環境豪華寛敞舒適,服務殷勤體貼,食物選材上乘,造型精緻有要求,調味恰當,亦有令人讚美的招牌菜,宴客之選。
