上星期二那天, 我見自己一個人食lunch,又有點時間,於是就到這間連續多次獲得米芝蓮一星的甘牌燒鵝試下,其實小妹我想試這間店很耐,只可惜每次都見到很長龍和與工作地點有一段距離,所以很多次都打消了念頭,難得那天有點時間,又一個人食,所以就去試下。說明甘牌燒鵝,當然最出名的是燒鵝,難得來到,當然要點甘牌燒鵝飯套餐,套餐包括有燒鵝飯,滷水豆腐和花生雞腳湯,花生雞腳湯都算足料,很夠熱,而且不覺有味精, 飲完沒有口渴感覺,小食滷水豆腐,我覺得很新鮮,滷水汁幾好味,咸度適中,,我覺得是成個套餐最好味的,反而主角聞名遐爾的燒鵝味道卻一般,令人有點失望,燒鵝的外皮雖然夠脆,但肉質不夠嫩,食落有點油膩,幸好點了酸梅醬之後,解了不少油膩感覺,燒鵝飯的份量很多,但套餐的價錢偏貴,感覺外賣比較好,因為不用等太耐,而且較為抵食。

是日工作日晏昼來甘牌燒鵝,大約12點半,本來想得太好以為無需等位,結果名店還是名店,該等還是得等,前方已有十多人排隊。站在正午的太陽下,望著廚房已經烤好的一隻隻燒味,越看越餓。所幸午市翻臺極快,十五分鐘內已經可以落座。來之前已經想好要點撈麵+肥叉,並不是不愛燒鵝,只不過在午市如此繁忙的時段,指望得到熱氣騰騰新鮮出爐的任何燒味都是不現實的。既然如此,選擇味道受溫度影響最小的燒味,方為最優解。須知肥燶叉燒的油香,即便常溫下也是不失色的。落單後五分鐘內小食、老火湯、撈麵和肥叉全部上臺。興奮地咬一口肥叉,那燶而焦香的皮加上蜜汁滑入口中,正!再咬一口,肉汁丰盈,肥瘦合宜,這就是叉燒界的楊貴妃啊!撈麵也不遑多让,鵝油的香,加上咸淡适宜的調味,入口十分舒服。配上單上的撈麵湯,不知不覺就清盤了。例湯份量給得慷慨,有一大块排骨加一隻雞腳,真材實料,非常滿足。買單不到一舊水,享受到米芝連水準的美食,CP值爆表。

這間甘牌燒鵝店,已經來過三趟,每次都是因為門外排隊等候的人實在太多,而無奈放棄了。由於疫情的原因,今日經過,見不到排隊的人龍,馬上一個箭步入內。菜單也不用多看馬上點了碗燒鵝瀨粉。燒鵝瀨粉~第一次食燒鵝居然完全唔覺肥膩,燒鵝皮下脂肪不多,相信是一隻有運動的鵝,估計是隻走地鵝吧。由於食材夠新鮮,沒有用太多的香料醃製,燒鵝燒得夠香脆卻又不會過份燒焦,這一方面做得恰到好處,廚子的功夫真真了得。鵝肉有咬口而且鵝味非常濃郁,配個清湯底更能突顯鵝肉的鮮味,實在令人回味無窮!難怪獲得這麼多年米之蓮的獎項。

燒味份量比想像中少🤔 燒腩合格,皮脆、肉無豬膻味,但未至於令我相當驚喜。
燒鵝用咗黑鬃鵝,皮下脂肪較少。燒鵝皮咬落去都有些少油香,但唔算好脆,一上枱隻燒鵝係凍咗。我個人覺得肉質無我預期中咁嫰,偏乾有少少鞋口,無令我有米芝蓮嘅驚豔感覺,但都唔差嘅😏瀨粉用咗燒味熬製嘅湯底,好有味,瀨粉有咬口。

走嘅時候買咗一份臘腸,收銀職員同侍應都好細心好熱情同我解釋點樣蒸臘腸,要蒸幾耐同埋點樣儲存。一間餐廳當然食物質素係重要但係餐廳服務員嘅專業態度都好緊要,佢哋能夠咁多年嘅服務態度同食物水準都保持到好好嘅級數,仲要係一個咁艱難嘅疫情底下,態度都咁好,呢個係非常難得嘅。香港人要多啲珍惜呢啲咁有人情味嘅餐廳。唔需要豪華嘅裝修,簡簡單單認真用心就可以。我欣賞呢間餐廳,最特別嘅係佢哋嘅廚師侍應都係冇變,同幾年前一樣。我食得出佢哋嘅人情味。

同屋企人去買燒味,要左半隻燒鵝,講唔好斬髀及上椿但佢斬了,之後見到得一個飯盒咁大,再三問佢係唔係我地的,職員話係,仲話佢地啲燒鵝係同人地果啲唔一樣,番到屋企打開見到隻髀係上層,底果啲都是碎件,點砌斬砌唔到半隻鵝出黎,味道仲要唔夠入味手😠😠😠,以為疫情好轉可以食番少少好野,順手促進經濟繁榮,點知換來嘅係失望!😠

很早之前就听说过甘牌烧鹅,一直没有机会去试试,疫情期间比较少人,就打包了一份回家吃。一打开,一份烧鹅湿糊糊的,顿时没了食欲,但是价格不便宜,还是要硬着头皮吃,果不其然,肉质很老,很难咬得动。食之无味弃之可惜,只能用来喂狗了。
