On the night we ordered a 10 pieces assorted sashimi, from five different seafood including Maguro tuna, Hotate scallop, Botan-ebi prime shrimp, Shimaaji striped jack, and Hirame halibut. The seafood is very fresh and of decent size in the cut, but the scallops is too thin that makes me wonder the two pieces are only from a scallop. If that's the case, it would be a bit tricky.

Then we had a Hokkaido crab hotpot, which also has a Geoduck served alongside. The geoduck can be eaten as sashimi or lightly blanched in the hotpot, offering two choices equally tasty. The size of the geoduck is good for two but might not be sufficient for more people. The Hokkaido crab is again right in size for two, served on a pot on stove to keep warm. However, it is still far inferior to what we had tasted a while ago in Japan. The texture of the meat was in my opinion not 'firm' enough. The broth is tasty though, with the vegetable, tofu, rice pudding and glass noodle all good complement.

Wrapping up I ordered a sesame ice-cream as dessert. The sesame flavor is intense and the homemade ice-cream is quite nice also.

The service is quite good with the staff attentive but a bit lacking the experience I would expect for such high-end hotel's restaurant, for example I would expect the staff to provide an utensil for holding the crab shells, without having to be requested by us. But overall they are friendly, do come frequently to clean up and check whether how we are doing during the meal.

The bill on the night was $3047 which is not cheap. Even though the food is fairly good it would still be a bit too expensive. Probably it would be of better value for money on lunch. My overall rating is 60/100.

預早訂了位來慶祝內子生日,雖然筆者不吃魚生,但亦來試一試這裡的日本菜。在鍋物和定食之中,我倆最後選了以餐廳名稱命名的鹿悅定食。前菜是芋粒和三文魚子,點上淡醬油,芋粒變得很香甜。侍應替我把魚生轉了加州卷,內裡的熟蝦和牛油果,入口亦有「溶」的感覺,美味!內子對魚生十分滿意,三文魚肥美、拖羅和甜蝦亦很有鮮味。清湯後,主菜到。筆者選的是鰈魚西京燒,內子選的是A3佐賀牛。鰈魚的香甜味就是一貫的西京燒味(白味噌),鰈魚的口感一流,有肉地之餘亦很入味;佐賀牛的肉質較肥,真有點像牛油般入口即溶的感覺,可能太美味關係,份量未能滿足,有機會定必再來大吃一番。紅豆栗子羊羹糕及綠茶雪糕做甜品,羊羹糕香甜飽肚,綠茶雪糕香滑,十分滿足。

朋友信用卡有優惠, 打來有無興趣試試鹿悅, 由於未曾到訪過, 心想一試無防. 於是朋友, 14 April 打電話booked 位, 約了15 April. 預約相當順利. 一行二人, 7:00pm 到達, 一個客人也沒有, 我們是最早到的 (不過, 我們走的時候, 客人也不多, 只有5-6人而已). 地方不大, 燈光分暗, 適合情侶們來談心. 服務員的衣著, 我覺得好似去了日本溫酒店時著的浴衣, 有點不好看 . 但是服務員是專業的 . 每道菜上枱時, 也一一解說. 每當看見茶杯內無茶, 也主動加茶, 抵比個 like . 同時由於, 朋友信用卡有優惠, 送一支酒, 服務員也專程用冰雪住, 保持冰冷, Good. 食物方面, 由於屬嘗試性質, 我們只選擇了, 最平的Set Dinner (鹿悅) 來試試. 前菜鰹魚醬油煮, 刺生 (5種), 時令清湯, 鹽燒 A3佐賀牛, 日本飯, 麵豉湯, 紅豆羊羹和綠茶雪榚也是普普通通, 沒有驚喜, 也沒有不好吃, OK 而已. 至於蝦, 野菜天婦羅就比較差, 粉漿和油也很多 , 差.  整體來說, 也可以一試, 可能再貴一點的 Set 會

在展會進行期間,灣仔係好難搵食,太多人啦心想,去HYATT啦應該人少,點知仲多咁多間餐廳,只有鹿悅既壽司BAR位有吉位睇黎睇去,唔係食$490既壽司餐,就係$600既刺身餐,去到高級日本料理唔食生野點得前菜係茄子,放了醬油之類既JELLY加添咸味,都算係開胃,而茄子就幾甜同很SOFT壽司出場了,足足有15件連埋鐵火卷,份量幾多喔,賣相幾靚,夠哂COLOURFUL基本上咩都有,白身魚,針魚,三文魚,油甘魚,吞拿魚腩,甜蝦,蛋,三文魚,仲有2款類似鯖魚,章紅,鯛魚等等唔識分....全部都算新鮮,特別係吞拿魚腩,入口即溶,魚油澎湃喔.白身魚既魚味亦係好重既鐵火卷入面既赤身唔夠濃味,係紫菜既化學作用下令味道增強了不少但部份魚既味道比較淡,可惜,不過無完美既...味噌湯下了菇,很清甜,絕對唔求其甜品就係卷物,中間有粒士多啤啤,一甜一酸就是這麼簡潔服務是好既,環境亦很清淨,食物份量也足料,食才質素有空間上升

鹿悅的用餐環境寧靜、燈光陰暗,氣氛不錯;而服務亦有禮親切。雖然整體食物不算特別出色(但又絕不差),到底一分錢、一分貨嘛。其實能以加一後$700的價錢在5星酒店內慢食一頓日本菜晚餐,算是個不錯的聚餐選擇。

今日「家庭」午餐聚會選了去鹿悅吃,大家都是第一次來,叫了四個午餐,分別是一個炭燒和牛餐($560)、一個鹿悅餐($600)和兩個刺身餐($600)。三款餐的前菜都是凍茄子,上面有些木魚味的啫喱,伴著來吃味道不錯,令我不期然對主食有些期望。我點的鹿悅餐是個大雜匯,有味噌湯、魚生飯、天婦羅、和牛粒和雜菌雞窩。味噌湯的味道香濃,有豆腐粒但沒有我喜愛的海帶。天婦羅的食材有蝦、魚塊、露筍和蕃薯,魚塊有鮮甜魚味,露筍亦清甜,但蝦和蕃薯的味道卻有點木獨,不過廚師手勢好,幾件天婦羅都不油膩。魚生飯的份量很少,但飯上面鋪滿三文魚粒和吞拿魚粒,還有三幾粒三文魚籽,而且都很新鮮。和牛只有三小塊,肉味幾濃,油份又多又香,是這個定食最好吃的食物。至於最差劣的就是雜菌雞窩,我覺得這道菜色非常中式,菌類有三款,分別是冬菇、金菇和本菇,雞塊有四件,明顯是雪藏雞肉,毫無味道,最叫人皺眉的是那個不湯不羹的一窩茨汁,如果是汁就太多,如果是湯羹又太稠,非常失敗。「火頁」伯伯和可人兒阿妹都點了刺身定食。白色的帶子和油甘魚、紅色的吞拿魚和蝦,以及橙色的三文魚刺身放在一大碗碎冰上,還有一個嚮螺殼和一片葉子裝飾,賣相頗為吸引。阿妹說

「火頁」伯伯和可人兒阿妹都點了刺身定食。白色的帶子和油甘魚、紅色的吞拿魚和蝦,以及橙色的三文魚刺身放在一大碗碎冰上,還有一個嚮螺殼和一片葉子裝飾,賣相頗為吸引。阿妹說刺身新鮮好味,不過咀刁的伯伯就感到失望,批評魚肉不夠肥美,甚至認為$600 的收費只提供如此貨色,去板長吃好過呢!我自己只吃過一片帶子,雖然有帶子味,但肉身卻像吃蒟蒻,感覺怪怪的。刺身切得算厚身,但以這個價錢,其實是否可以加多一兩款如海膽和三文魚籽呢?在金鐘的灘萬吃一個刺身午餐定食也不超過$400,質素絕不下於此,而且環境舒適得多。

甜品可以選紅豆綠茶蛋糕或豆沙煎餅,除了伯伯外,我們三人都選了後者。伯伯第一次吃君悅酒店的紅豆綠茶蛋糕,大讚好吃,非常欣賞。我吃了一口,雖然覺得味道不錯,但認為質素退步了,因為綠茶的味較紅豆的味濃,未能做到兩者平衡。至於豆沙煎餅的皮很煙靱,豆沙餡有豆香而且不太甜,雖未至於給人深刻印象,但也算不俗。

付出$600 吃一個午餐,以食物質素而言是令人失望了,這個價錢足以去半島的吉地士吃個午餐,相信食物的配搭、味道和烹調技巧會更出色。環境而言,位於閣樓的鹿悅算是君悅酒店內最差的餐廳了,它本身的裝修毫不突出,沒有Steak House 的型格,又沒有Tiffin、壹號港灣、大堂餐廳和Grissini 的高樓底或景觀。至於服務也未見予人五星級酒店的感覺,雖然侍應的態度友善,但前菜上了後要等差不多二十分鐘才上主菜,再者,我吃完主菜後侍應沒有收拾我的碗碟餐具便上甜品了,要我出聲才收拾,這絕非高級專業的餐廳服務吧!

總括而言,來這兒一試無妨,但就不要有太大期望了,難怪鹿悅在<開飯>的評分只屬平平。

住在日本時, 煮魚是我家的常菜, 在香港, 每次煮魚, 老公都不滿意, 不是說魚有臭味, 就說我選的魚不合做煮魚. 老公說, 點煮魚就是讓我看プロ(專業料理人)的煮魚.
煮魚餐的前菜是芝麻涼豆腐, 老公說味道還可. 我偷吃了一小口, 沒什麼特別, 在超市買的黑芝麻豆腐比它香濃一點, 不過它是白芝麻, 所以, 明白.
壽司午餐的前菜是兩片小小的煮魚(ぶり)味道比較咸〈濃い), 但可以接受. 這款前菜煮魚, 需要長時間放著, 調味是會隨時間變化的.

煮魚午餐的魚, 是鰈(かれい), 阿拉斯加產的鰈吧, 是大而無味的品種, 老公呼了一口氣 (不稱心). 煮汁味道可以, 只是魚本身較淡而"削".

精彩的竟是那一丁碟的漬物:

昆布 = 厚厚的是高價品, 淡淡的鹽味卻帶濃濃的昆布味;
かぶ蕪= 紫蘇的淡紅和香味, 讓本來白色的蕪漂亮起來; 又香又清新, 漬物的最高境界是, 是漬物, 卻有新鮮的感覺;
茄子 = 沒澀味又沒渣, 味道天然.
(以上漬物, 老公分了一部份給我吃, 說讓我安慰一下味蕾, 原因如下述)

至於壽司午餐的壽司, 就是標題的主角-- 越食越皺眉. 除了鐵火卷有用 淡味酢飯(すめし)外, 其餘的每一件壽司, 都用白飯的. 一點 酢飯的味道也沒有, 給老公試了三件, 他說, 可能是店方的新發明 -- 用白飯做壽司.
飯不濟, 魚也不濟, 沒鮮味, 水份高. 原因, 相信是食材的儲存/ 解凍不良所致.
花$480吃得眉頭猛皺很不高興! (真想請師傅吃來試試, 可是老公說, 不要啦, 不要讓人家尷尬......, 你也不好受, 對自己一點好處也沒有的事, 不要做!)

甜品,
よもぎもち & 熱香餅配日式紅豆和綠茶雪糕. 普通, 不用詳述.

除了刺身外, 也有大拖羅/油甘魚腩/海膽壽司, 雜錦魚生飯等等, 吃到這裡, 真的差不多飽了.

熱葷 : 和牛/Sukiyaki/ Shabu-shabu/ 北海道鱈場蟹腳及松葉蟹腳/蘿蔔炆牛舌/西京燒鰤魚/蕎麥麵/稻庭烏冬/麵豉湯等等, 十分之好味.
還有即叫即整的天婦羅, 有蝦, 魚, 濕地菇, 南瓜, 蕃薯,大葉. 逐一品嚐後, 真的投降了 !!

至於我最愛的甜品, 老實講這裡的甜品選擇確實很小. 當晚更無緣遇上至愛的椰子雪葩, 取而代之的是芝麻花生雪糕,
雖說很香的花生味, 但個人比較喜愛椰子雪葩多得很, 清新可口兼椰香味十足, 真的令我很懷念.
還有雜果白酒啫喱/紅豆羊羹/綠茶羊羹/紅豆糯米糍/蜂蜜蛋糕/焦糖燉蛋/果凍, 全都吃不停口, 尤其是蜂蜜蛋糕, 真的鬆軟無比

可惜暫時仍未有機會碰上傳聞中好好味的草餅/蕃薯栗子餅/柚子雪葩//柚子紅豆饅頭, 希望下次有緣食到.

The variety is too limited when compare with other Japanese buffect. There are only sushi, sashimi, crab legs, beef hotpot, frying beef (with smelly lamb taste), tampura, miso soup, melting ice-cream ( since no refrigerator to keep it frozen), not more than 5 hot dishes (not attractive nor delicious ). The variety is too limited when compare with other Japanese buffect. Very soon, you need to repeat all the food again since there are no more new varities for you to try. The only things that is good is the high quality of sashimi. After 2 round of eating the same kinds of food, you already got fed up and you want to leave.


And the places for getting food is at the corridor inside the restaurant, very very crowded. The whole restaurant has no window, that means no view at all. You can never imagine a 5 star hotel like Grand Hyatt can have such a restarant that has no view at all. It really doesn't worth $860 ($780+10%), it only worth $480. I won't go there again and I won't recomand my friends to go either.

既然來到,只要一試,疑團便會被解開,於是點選了以下菜式:

Sushi Mori 壽司十種 $650
海鮮壽司十件,全部不同款式,包括有最貴的toro及sea urchin各一件,其他有甜蝦,魷魚,帶子,鯖魚,墨魚,池魚等,全部皆新鮮甜美,尤其是toro肥美不膩,入口即溶.
手工合格,魚生緊貼於飯團上,米飯質素上乘,有米香,始終是五星酒店,不可欺人,但賣相一般,不及小店花心思,吸引顧客,應作檢討.

Wagyu dinner set 和牛套餐 $750
包括有五款壽司,一碗時令清湯,和牛sukiyaki 或shabu shabu及甜品.

五款壽司包括一款Toro,一款鯖魚及三款魚味較淡的白魚,不過不失.

送上之時令湯主要為一蟹丸清湯,喜見蟹丸用新鮮蟹肉做,丸內還有蟹膏及口感仿似杭州蒓菜之青菜,清甜軟綿有蟹香,清湯內有幾片蒓菜及洋蔥,調味適中,清新輕盈.


點了sukiyaki和牛medium rare,跟許多香港日本餐廳一樣,送到面前的是已經煎好的牛肉一碟,並非在日本即場烹調之sukiyaki beef,正確的形容詞應該是beef in sukiyaki sauce.牛肉生熟度選擇恰當,和牛脂肪分佈平均,表層略焦,內裡軟滑,肉汁豐富,一啖入口,隨即融化,滋味無窮,附上之醬汁,鹹中帶甜,好味!一客12件,連白飯及麵鼓湯各一碗,白飯用越光米,軟棉好吃.


甜品是綠茶饅頭及柚子雪葩,饅頭軟腍煙韌,帶微微綠茶清香,甜度低,雪葩柚子味香,有解膩之妙用.

冷烏冬
冷烏冬比湯烏冬更能吃出烏冬之嫩滑,所以不必多想,務求盡善盡美.一客分了兩份之雪白冷氷見烏冬終於送上,附上冷麵鼓油汁一小杯,伴麵材料豐富,有白芝麻,紫菜(切成幼身長絲,非常仔細),蒜茸及蔥絲,當然還有辣辣wasabi.

把材料加進豉油汁內,然後急不及待,立刻夾起一束烏冬,點下醬汁,大淡啜入口,烏冬冰涼幼滑,滑進牙縫間,柔中帶韌,
但要浸在鼓油汁足一秒,入口方才品嚐到湯汁之味道.可是,口感不及當年細緻軟滑,跟其他店吃到的優質讚岐差不多,有些失望!


頓時亦有少許氣憤!
理論上鹿悅不必欺騙顧客,反正可把成本轉介客人,餐牌上未有列名,賣單收據寫undo himi,店員三次確認,難道是我們味覺出錯?只見今天賣$120一碗, 四年前是$130,少見價錢反而便宜了,日元卻是升值了.會否日本的氷見市增加生產而令質素下降,抑或是供應不穩定,所以餐廳作兩手準備,無貨供應便以其他代替,真是不得而知!

再一度搜尋資料,得知氷見市位於日本西面富山県,據聞因為水質清純,因此於當地吃烏冬質素甚高,除了烏冬,還有氷見牛肉,氷見甜蝦等.可能供應不多,國內國外皆不普及,只有少數高級食肆推介.亦有可能是今次嚐到的烏冬新鮮度不及當年!

生日蛋糕
最後送上一個一磅重的雜果生日蛋糕,是AE白金咭優惠,Hyatt cake shop出品,都幾好味.

晚膳就此完畢,想不到最欣賞的竟然是和牛,並非思念多年的氷見烏冬.總括來說,鹿悅服務週到,環境舒適,食物中上但不出眾,亦欠缺小店可以近距離跟師傅暢談之交流,已經不再是本地客人吃日本菜之首選,商務宴會除外.總評分實為3.5.

想當年Grand Hyatt剛落成,鹿悅非常馳名,所有優惠咭皆不包括此店,今時今日競爭激烈,願意入上乘貨式的日本菜館多的是,相對鹿悅有過之而無不及,寫食評期間,得知其他店亦有提供氷見烏冬,滿心歡喜,定必再作比較.
