星期日人在西環,想好好的在西環走走。學生時代在中西區唸書,西環盛載了不少霖迪的青春歲月。西環有很多有名堂的寶號,也包括了這家「潮菜寶號」。德記潮州菜館是西環老字號街坊店,曾得過米芝蓮殊榮,難得來到西環當然試試。到埗後發現人山人海,絕大部分都是街坊街里,不免喧鬧但很有氣氛。傳統的酒樓格局,人多同時位多,不用等位真好!難怪會成為街坊飯堂。是晚最推介鱲魚魚飯,魚飯很講求手藝,這家的魚飯做得十分正宗,單看魚眼狀態就知新鮮,這也與生意興旺有關,能保持魚飯的新鮮程度。潮州魚麵少見,這家是用魚片切條的做法,魚香清淡無加味精,這風味吃着也不錯。荔芋香酥鴨是簡生最愛,能做到起酥也不容易,而這家就是確切的做到,選用的芋頭也合時令,口感綿蓉。鹵水鵝片同樣令人驚喜,滷水汁味道恰到好處,用新鮮鵝也是不多見,每片都油亮亮的,吃起來肉香滿載。作為街坊食堂,要應付大量客人,難得能保持水準,也能發揮潮菜的精髓,下次再來西環也要回味一下。…Read More

又到每月一次的老表邪惡飯局,今次選德記(原來其他老表未試過)。Book咗枱六點鐘到達,已見有一半枱已有人坐!6個人,叫了12樣餸,很豐富,但不邪惡,比碼無叫到糯米釀大腸或蠔餅等邪惡食物!海蜇頭:肥美胡椒豬肚湯:超勁多胡椒!椒鹽九肚魚:不是原條,脆漿面有鹹味,但魚肉就無。九菜豬紅:大家最先食晒的一碟餸!鹵水鵝片蝦棗併墨魚卷:我無蘸醬食,覺得肉身唔夠鹹梅菜扣肉:豬肉比其他店(如泉章居)瘦,梅菜也唔算鹹(亦不算靚嘢),賣相也不佳,但合我口胃!咕嚕肉:有點失望(睇圖都知!)糖醋麵:全晚我最鍾意的一樣餸(其實是主食),麵一面煎得很乾身,但不肥膩,另一面就保留麵的質感。沙爹牛肉炒河:我唔食牛,所以無食到。芋泥:只叫兩碗6個人分,因已太飽喇!食了兩個鐘,出門口見人山人海(等位),真是厲害!…Read More

:)今晚打完波一行五人專誠打的來幫襯,雖然上車時才致電訂檯,但到達後也不用等候便可即時入座。 自讀書時代在舊舖開始幫襯,多年來我都去過很多次德記,一向覺得它的潮州菜夠地道,質素可媲美一些成名的老店,雖然搬舖後質素稍為下降了一些,但仍不失為一間值得再次幫襯的潮州小館。 記得上次來吃飯時,年紀老邁的老闆娘坐在旁邊閑聊,聽它憶述早年創業之時,由大牌檔起始多番搬遷,一家大少胼手胝足,渡過艱難的低潮期,最終生意蒸蒸日上,賣下了大道西及卑路乍街的舊舖,在區內算是薄有名聲,及後更擴充至相鄰的舖位,年前再搬至現今的新舖擴充營業,座位及環境都比從前好多了,聽她娓娓道來活像是一篇香港奮斗史。 現在德記已交由第二代掌舵,但老闆娘仍堅持每天返舖,專職主理潮州粥及鹹檸七的位置,見她跟隨其它員工在晚市高峰期過後才吃飯,內心真的有點佩服她的工作精神。 今夜只有五個人來,也叫了九款食物之多,好讓第一次來的阿Van可試多幾樣菜式,好像吃潮菜九大簋。:)鳳尾魚叫了一碟糖醋醃製的鳳尾魚作為前菜,魚身比很久之前吃到的小很多,炸過的鳳尾魚入囗蘇香酸甜,是一味不錯的醒胃前菜。:)胡椒鹹菜豬肚湯我很愛喝胡椒鹹菜豬肚湯,不光光是落大量胡椒粉來煮,湯是加入了白胡椒果來煲,胡椒籽越多越辣越好喝,切得整齊的豬肚洗得乾淨潔白,加上大棵的酸菜,味道酸中帶辣十分醒胃,在冬天喝這湯後可暖腸胃,飲多幾碗也不覺膩滯。:)鹵水鵝片不帶骨的鵝片切得又薄又整齊,每片都有薄薄一層皮下脂肪,確保有豐腴的口感之餘又不會太肥膩,鵝片的鹵水味不及從前般香濃,也沒有潮州巷老店陳勤記的味濃,不過相比大部份其它潮州小店,依然可算是合格以上的出品了。:)炭燒梅子烏頭這是我在德記最欣賞的食物之一,經過以錫紙包裹著梅子汁一同炭燒的烏頭,打開後魚身表面焦香而肉質結實,記著要醮些吸收了魚肉鮮味的梅子汁才更加惹味及醒胃,個人比較欣賞鹹檸的酸咪配合烤過的烏頭鮮味,相比梅子汁更加匹配,店家干脆以炭燒鹹檸烏頭會更加適合我的囗味,記得以前德記好像都是這樣煮的。墨魚餅拼蝦棗今次的出品比之前差了點,可能是墨魚不合時令的關係,今次墨魚餅的鮮味不及往日,跟蝦棗的味道只是一般而巳。:)炸蠔餅這裹有煎蠔咯餅及炸蠔餅兩款蠔仔餅,十月至年尾是蠔仔最肥美的時候,現時不算合時了,如果這時吃用大量雞蛋煎較軟身的蠔咯餅,突出了蠔仔不夠肥美的缺憾,現在吃炸蠔餅比較上算,兩件炸過的蠔餅鬆脆厚身,入口並不太油膩,而且夠乾身脆口,鬆厚的外表掩飾了蠔仔不夠肥美,味道唔錯。:)方魚肉碎粥方魚即係大地魚,是典型的潮州食材,在如斯低溫的日子,吃碗熱騰騰畋方魚肉碎粥比較吃白飯更加適合,一大兜份量足夠五個人食有餘了,在清香的方魚肉碎粥上面,簡單的加些蔥花、芫荽吊味巳經很足夠,德記的方魚肉碎粥,多年來一直都沒有令我失望過,在蠔仔不夠肥美的季節,捨棄蠔仔是比較聰明的選擇。:)韭菜豬紅豬紅看來干淨整齊,入囗感覺幾滑身,如果有多些韭菜更加好,一方型兜的份量幾足唔怕唔夠分。:)魚湯浸豆苗魚湯不算好鮮甜,可選配不同品種的蔬菜,所謂不時不食,合時的豆苗顏色翠綠又夠粗壯,嫩身的豆苗入囗菜味濃沃,是我們今天正確的選擇。:)以今晚的食物整體平均來看,算得上保持一貫水準,不過仍期望德記可做到舊時老舖五星級的食味水平出來,便更令人滿意。 食物碟頭份量好足,以質量而論,是好抵食的潮州小店,侍應上菜幾勤快,會主動給客人加添茶水,服務算幾滿意了,令人賓至如歸,一如既往德記都在我的 wanted list 裹面出現,在中西區食潮菜一定會記起它,曰後必定會再來安哥,區外的食友不妨來試下,保証不會令你敗興而返。…Read More
