天氣開始轉涼,秋天即將來臨的一個星期六晚上,我與兩位朋友一同前往西環德記潮州菜館品嚐正宗的潮州美食。記得當年讀大學嘅時候,久唔久都會嚟呢度「打凳」,所以對我哋嚟講,呢一度係有一種回憶嘅味道。抵達時,(feel glad to see) 餐廳已經恢復了疫情前的熱鬧氛圍,座無虛席。我們首先品嚐了胡椒豬肚湯,這道湯品香口但是不肥膩。湯汁濃郁,充滿胡椒的辛香,豬肚則入口軟嫩,帶有微微的彈性,但是欠缺一般內臟的豬香味。這道湯不僅暖胃,還能增添食慾。接著,我們點了潮州的經典小吃──蠔仔餅。這份蠔仔餅外酥內軟,口感十分可以,是餐廳裏的數一數二作品。裡頭的蠔仔鮮嫩多汁,與餅皮的酥脆完美結合。這道小吃讓我們彷彿置身於潮州的街頭小巷,感受到濃厚的家鄉風味。更正的是,他上菜的時候還是脆卜卜的,就算即將清碟,仍舊鬆脆, 我十分欣賞!繼續品嚐,我們選擇了滷水鵝片鵝肝。味道濃郁,肉質鮮嫩,沒有使用味精,十分天然。鵝肉片入口鬆化,鵝肝則帶有獨特的潮州滷味,咀嚼久了,還有淡淡酒香,富有層次感。這道菜讓我們感受到潮州滷水料理的精髓,彷彿品味到了懷舊的味道。最後,我們選擇了排骨春菜煲。這道菜的排骨肉質鮮嫩多汁,與春菜的清甜味道相得益彰。菜煲中的湯汁味道濃郁,但不油膩,讓人回味無窮。這道菜兼具香口和不肥膩的特點,給予了我們美味與健康的「平衡」享受。西環德記潮州菜館以熱鬧的環境、地道的家鄉風味和美味的菜式,吸引了許多食客。他們的菜品不僅香口但是不肥膩,味道濃郁卻沒有味精,十分天然。若你想要品味正宗的潮州美食,這家餐廳絕對是值得一試的好去處。…Read More

香港大學站通車後去德記方便好多喇!地鐵站出來過對面馬路就到 星期五晚下班後立即去德記等位,晚餐時間好多人!印象中大部份打冷餐廳都好「麻甩」,不過德記環境則非常衛生整潔。我們兩個人可以坐四人桌,即使在星期五晚這個繁忙時間亦不用搭台,這一點非常欣賞:)雖然我們只有兩個人,可是看見餐牌每樣都想吃!眼闊肚窄,最後還是叫了四個小菜(已經忍痛刪減了幾個想吃的)(題外話:下單的姐姐非常好笑容)胡椒豬肚湯(9/10):意想不到的大碗—點了一個例牌size,心想兩個人每人一碗就好,湯來的時候實在有點驚訝:咁抵?!才送到就飄來一陣胡椒香氣,只是例牌大概已經可以盛出約五碗份量,而且好足料,大大片酸菜和豬肚藏也藏不住!湯夠香濃,黑椒的份量剛好,不會太辣。酸菜和豬肚口感竟然能保持少爽口,沒有「湯渣」感覺。鹵水鵝肉片($93)(8.5/10):我較喜歡吃軟林入味的鵝片,這碟滿足到我鹵水鵝一定要沾白醋,愈食愈開胃,完全沒有肥膩感。墊底有鹵水豆腐,入哂鹵水味,不是主角卻一樣出色。潮式糖醋伊麵($63)(8.5/10):外貌像薄餅,把幼麵底面煎脆,以為好熱氣,咬一口,夾在中間的麵條竟然是軟身的,沒有煎乾,單是口感已覺得很特別,邊位特別好吃。陳醋和糖分開另上,可因應個人口味增減份量,有得食有得玩,我喜歡加多一點糖陳醋滲入中間的麵條,糖溶在面,是其他菜式不易吃到的味道,朋友在旁一邊吃一邊說「呢個真係好好味呀」。火腿津白(8/10):份量比其他打冷大很多,食極都有!非常喜歡灑在面的金華火腿碎!不會過咸,與津白配合得宜。德記實在大件夾抵食夾好食,下次要再來幫襯!…Read More

在西環有很多食肆,但這間一到七時左右就一定要等位,而且等的人又真的不少,好奇心驅使下,一定要試一試。 因為有備而戰,六點三左右已經到達,所以就可以避過人潮。餐廳主要提供潮洲菜,款式也很多,除了餐牌上的之外,有很多是寫在牆上的。更有一些冷盤是擺放了出來,可以自己挑選的。我們只有兩個人,就揀了三小菜一湯。包括了侍應介紹的胡椒豬肚湯、韭菜炒鹹肉、香酥芋鴨和竹笙雜菜煲。等了不久就上胡椒豬肚湯了。雖然說是兩人份量,但以酒樓的小碗來說,也能分到四、五碗,份量很足。湯的味道很濃,夠熱而且充滿胡椒香味,加上湯裡面的湯料也很多,豬肚和鹹菜亦沒有煮得過久,可以一路喝一路吃。跟著小菜就上了。韭菜炒鹹肉幾夠鑊氣,可以食得出是即炒的。鹹肉味道適宜,用來送飯一流。加上鹹肉、韭菜和其他配料比重亦配搭得宜,簡單中見到功夫。竹笙雜菜煲亦是水準之作。通常吃清淡的雜菜煲,我第一樣會先試上湯,因為上湯是這個雜菜煲的靈魂。為了使到蔬菜吃起來更有味,很多食肆在烹調時都會把上湯弄得偏鹹,我個人反而不喜歡。這裡的味道我就覺得適中,我自己的標準就是可以當湯喝的,而不會覺得太鹹,這就可以了。香酥芋鴨亦做得不錯,炸得夠香口。唯一可以挑剔的就是芋鴨做得偏淡,一定要點汁才夠味道。這裡除了食物質素不錯之外,價錢相宜亦會是人多的原因。大部份小菜的價錢都是在第五十多元至七十多元之間,而且沒有收茶錢和收加一。我們的三個小菜加一個湯,埋單都不過是二百六十元,相當抵食。…Read More

自從德記搬去新地點之後,因為地方大了而且環境比舊店好,所以都差不多一個月會光顧一次。今次叫了個2人餐,$198再加一杯咸檸7$1x 以及1碗蠔仔粥 小黃瓜+海折頭 - 普通貨豆腐拼鵝腎 - ok味道胡椒豬肚湯 - 夠分4-5碗分量,胡椒味可以再加多些川椒雞 - 正~雖然比較油蟹肉扒豆苗 - 都不錯,蟹肉都比較多咸檸7 - 自家推介飲品,其實檸根本就不咸,不過就沖淡了7up的甜味蠔仔粥 - 非常足料而且$24的份量很多,味道一貫好味如果不是今次懶惰,其實散叫更加好。不收加一,不過就有$8的介菜收費。以往我會叫鵝肉、川椒雞、蠔仔粥、沙嗲牛肉炒介蘭。德記不是一間十分精緻的菜館,味道亦不夠尚興好味。但就勝在很街坊感覺,而且味道價錢成正比,所以多年來都有很多人光顧。:)…Read More
