位於銅鑼灣的和三昧是食評人士極力推介的餐館之一,今天小筆有機會一試, 希望以下的介紹能為各位提供有用的資訊。事不疑遲我地即刻開始啦! 是日我地共四個人用餐, 點了兩份 商務套餐(US Beef $800)加兩份和三昧套餐(US Beef Steak $340 X2 = 680 ), 兩種餐的菜式分開四人平均食用,所以嘗到種類就可以更多,而是次結帳合共約$1,600元。 商務套餐  日本響螺師傳用快炒方式煮熟響螺肉, 保持彈牙的口感,作為頭盤是不錯的選擇。法國鵝肝肥厚的鵝肝表層被煎得恰到好處, 剛好鎖住鵝肝的脂肪, 而用鐵板煎得鬆軟的麵包適當地吸取流出的脂肪油, 兩者互相配合。松葉蟹腳商務套餐每人應有兩隻但因分四人量所以是次每人只有一隻, 蟹腳味道鮮美可見用料新鮮,屬水準之作。清酒煮蜆師傳用清酒作為湯底,另外配以簡單的蔥花,煮出不一樣的味道;清酒味不濃但卻剛好沖走了蜆的海水味突出其鮮味。牛肉厚燒我地點了五成熟牛肉, 女友認為五成是剛好的熟度, 因為鐵板的餘溫會傳入牛肉中,所以雖叫五成熟而最後上碟大約會接近六成熟。肉質雖然未到入口即融的地步, 但就咬口﹑肉味﹑肉汁水份而言, 該菜屬上乘之作。日本豚肉生薑燒薄餅豚肉﹑生薑﹑薄餅看似平凡的食材,在師傅的手下顯得妙筆生花。豚肉脂肪比例剛好再加上爆香的生薑, 與薄餅互相配合造就不一樣的味道。三昧套餐銀鱈魚及大蝦銀鱈魚是典型的鐵板菜式, 該套餐銀鱈魚扒約成人手掌大小, 師傳把魚扒的四周都煎一次, 做到銀鱈魚外脆內軟的質感。 三昧套餐選用新鮮大蝦,肉質彈牙可口, 蝦頭位置亦有濃味的蝦膏。牛肉厚燒就肉眼觀看, 三昧套餐的牛肉份量比商務套餐略小; 至於屬邊一種類的牛,本人就真的分不清, 但兩者的味道應相差不遠,因為師傅把兩款的牛肉都同時煮及上碟, 我們只嘗到美味而嘗不出分別。…Read More

短時間裏去了兩次和三昧以下是綜合了兩次的食物  鵝肝煎得剛熟,外皮香脆,肝心油潤,香滑肥美底下的麵包印有店家的名字,基本上不會拿走,算是擺盤的一部份吧麵包有輕輕煎過,但不算是脆多士,軟軟的可以用來吸收多餘的油份  帶子新鮮肥美,大粒彈牙,煎得剛好不會老,但油下得有點太多  廣島蠔煎得很香口惹味,雖然小隻但啖啖鮮味有時會有特別優惠,幾抵食!  豚肉生薑燒普普通通,相比其他食物這個有點削  清酒煮蜆蜆肉鮮甜,清酒酒香醉人,清清地也不錯  大蝦啖啖肉,大隻鮮甜,原汁原味蝦頭煎得很香但我就不敢吃了  銀鱈魚肥美嫩滑,醬汁是牛油和豉油,略嫌魚身切得有點薄  美國牛薄燒美國牛牛味突出,香葱蒜頭非常香口惹味雖然不及和牛的油脂豐富,但用來做薄燒還是不錯  和牛厚燒生熟程度剛好,嫩滑不韌,油脂澎湃沒有多餘的調味,只是簡單的配上蒜片,味道無限可擊只是略嫌份量太少!  炒飯炒飯粒粒分明,鐵板做的炒飯總是好吃的  炒野菜芽菜幼嫩爽脆,口感豐富用餐後,店方會請你到沙發區吃甜品跟咖啡這是我不太喜歡的做法,我會寧願繼續坐在鐵板區看師傅表演呢!…Read More

友人提出想食日式鐵板燒,便立即上OPENRICE,找到了和三昧 Wa San Mai。中午時段比較少人客會選擇鐵板燒,所以不用等候!我們點了「商務2人套餐」$520,又另外點了2隻澳洲鮑魚。前菜是沙律,很好食!我十分喜歡沙律配上的醬!十分特別!「商務2人套餐」鵝肝的口感很好,一點兒也不油,不錯!這個蝦跟帶子十分新鮮!帶子十分鮮甜;蝦十分彈牙!清酒煮蜆!蜆十分鮮甜可口,只是湯的酒味太濃了。美國薄牛,加入香蔥和洋蔥這個配搭也十分配合!廚師在我們面前認真烹調,一點也不賣弄,很好!我們也發現他們不會用太多油,較健康!…Read More

父親節晚飯, 不敢怠慢 以前我們一家想吃鐵板燒時, 總會去喜來登的雲海,後來, 因為某些原因, 我們很久沒去嚕~之前去過評價不錯的秋田, 不過始終留唔住我地個心今次搵左好耐, 決定試吓[和三味]我地book 左七點半鐘的枱, 七點三上到去, 佢地話未有枱,安排左我地係一個coffee area 到等一等七點半準時入座, 可惜叫完野食之後, 等左好耐好耐差唔多八點半師傅先開始煮野食期間, 經常想叫侍應都無咩人經過~野食方面~前菜有個燉蛋, 有蛋香, 又滑, 很好味呢!我們叫的set 有鵝肝, 好好味喔!!! 鐵板燒整出黎的鵝肝永遠都係最入口即溶, 太好味了!!!!然後有比手掌還要大的澳洲鮑魚味道清甜爽口, 不錯!跟住出場的有龍蝦,把龍蝦頭的膏都拿來做醬汁, 又濃又香, 更帶出龍蝦的香味!清酒煮蜆~非常不錯, 第一次去鐵板燒有這樣煮的清酒煮蜆湯內都融入了蜆的精華, 清甜到不得了!!蟹腳很普通哩, 而且有點咸~鰻魚~呢個100 分啊!!!見師傅用個野壓住燒左好耐, 然後配上秘製鰻魚汁, 不得了!!!未吃過咁脆又好味的鰻魚呢!!日本和牛呢個無得輸啦, 充滿油香, 入口融化, 靈魂飛左上天~~~最後的炒飯色香味俱全!!!不過太飽了…..^_^總結, 其實食鐵板燒最緊要係食材同師傅手勢, 雖然今次個師傅開頭有少少緊張不過佢表現完清酒煮蜆後開始自信返哂黎, 做得好左好多不過侍應好似唔夠, 餐廳其實唔係好full, 不過每次都叫左好耐先有人應呢~~~…Read More

 三大經典日式鐵板燒, 花盃、松菱、和三昧, 今天終於去了最後一間.位於Sogo 22樓的和三昧, 裝潢是很傳統的日式風格. 點了一個商務套餐, 外加南非鮑魚和銀雪魚, 基本上的食材都已經品嚐了.日式料理著重食材的新鮮, 這裡的鵝肝, 帶子, 大蝦, 薄燒和牛, 豚肉, 鮑魚等等都是很不錯的, 尤其清酒煮蜆, 先用火燃點清酒的部分很具視覺效果, 煮好的蜆湯帶著微微的酒香, 蜆的清甜鮮味完全充滿口腔, 令人欲罷不能.在陽光下邊欣賞師傅的刀功和烹飪技巧是日式鐵板燒最讓人著迷之處, 這部分只能說合格, 大概因為午餐時間, 師傅也變得很趕, 整個套餐只用了三十多分鐘, 一切動作都迅速無比, 少了一點細意品嚐的生趣. 反而之後的甜品時間, 經理安排另一個像Café的地方, 還坐得比較寫意舒服.要選的話, 花盃是最具服務性, 師傅會慢慢和你一邊介紹食物一邊聊天. 松菱地方最舒適, 空間感大, 海鮮最靚, 和三昧, 只能享受在鬧市中的片刻寧靜.…Read More
