此店令到我覺得深刻印象, 真係估唔到d食物咁有水準, 特別佢地既招牌菜玫瑰花燻雞真係一流. 佢地有d套餐我地就叫左個2人套餐試下, 原本想試佢地既蝦子柚皮, 但個餐又無這個菜, 最後都係選左個有燻雞既餐好過. 餐包, 燻雞半隻, 鵝肝醬炒芥蘭, 芥末牛柳粒, 2個白飯 2個例湯..十分抵食都係收$208 成晚最欣賞真係個燻雞陣陣既煙燻味好香, 另外個牛柳粒都係用料上等唔會好似出面d咁煮到d牛柳好老好un, 個菜聽個名好怪, 點知2者配合都好特別唔錯, 都幾有fusion菜既影子. 例湯都絕不馬虎, 老火靚湯真材實料真係似自己係家煲既味道..這一餐真係十分抵食. 環境就比較細坐位亦唔算好舒服, 不過此店d食物真係令我十分欣賞.

過左一陣,黎左個排骨,唔記得叫咩名,個味酸酸地,冇咩特別。但係遲遲都未上個湯,要一再追問之下先上,但係樓面唔見得有幾忙…而個湯更係淡而無味,好難飲…

過左一陣,個白菜仔都上埋,到差唔多食完,個乳鴿都未到,再催一催單啦,個阿姐話炸緊…咁唯有等啦… ,足足等左四十五分鐘,再問多一次得未…(因為另一枱遲過我地落,但係個乳鴿都到左) 跟住個侍應先同我地講漏左單,問我地轉唔轉其他野食…

一肚氣之下,當係散叫,賣單走人。

得贈卷兩張所以去康怡睇戲, 散場已是七點半, 在沒有準備今晚食乜送的情況下, 於是到商場內看看水牌, 而清一式是大路連鎖食店唯有退而求其次到筲x 灣一帶覓食途中經過尚膳坊, 剛有客人埋單走人, 於是自動波攝位 選了$188二人餐 坐下約五分鐘, 熱茶放下 過了約十分鐘, 看見其他食客有湯飲, 於是忍唔住催單 催完單都唔係即刻上, 仲要等 粉葛鯪魚煲豬展湯: 下火靚湯, 火喉唔錯又夠熱, 滿意。 隨之而來是上湯娃娃菜: 零味精的代價就是淡某某上湯和娃娃菜的結合, 就算加入蒜子味道也提不起來, 反而娃娃菜不會太腍, 也免強收貨吧。 等了又等, 白飯也凍了, 忍不住再催單, 換來是阿姐冷面地說: 廚房出緊野啦,有就會 上枱 … … 喂 … 答左等於無答, 真係比佢吹到啤一聲~ 接著兩味菜同時間上枱(和娃娃菜相距時間, 差不多廿分鐘) 另一位醒目阿姐更為我們換過了米香迫人的熱飯, 條氣都順返。 玫瑰煙燻新鮮雞: 果然係此店名物, 肉富彈性之餘亦幼嫩無渣, 而煙燻味道輕輕滲入雞內,反觀玫瑰露味道不是太凸出 (我喜歡酒香, 希望重口味一點) 絕對令人讚不絕口, 是高水準的出品。

玫瑰煙燻新鮮雞: 果然係此店名物, 肉富彈性之餘亦幼嫩無渣,
而煙燻味道輕輕滲入雞內,反觀玫瑰露味道不是太凸出 (我喜歡酒香, 希望重口味一點)
絕對令人讚不絕口, 是高水準的出品。

蘿白牛腩煲 : 以熱騰騰的沙窩上枱, 載著以柱侯醬炆起的牛腩和長條形蘿蔔,
牛腩夾著牛跟位, 夠腍之餘也不失咬口, 而且膠原十足, 食完應該會靚左。
反而蘿蔔唔夠入味有點失色。

飯未吃完, 預早通知可以上糖水,
糖水是水還水; 豆還豆的紅豆沙, 接受唔到囉!

總結: 此店的食物質素是令人讚賞的, 但奈何被服務態度,上菜速度等拖垮了
整餐的水準。

This restuarant is getting worse and worse. In the Mid 2010, the food quality and service quality were both excellent good. Therefore, the restaurant was always full with customers during the lunch. However, really don't know the reason behind, starting from Sept 2010, the food quality is getting worse and worse. Today, I ordered a set lunch "Tofu Fish and Rice". However, really don't know the reason behind, starting from Sept 2010, the food quality is getting worse and worse. Today, I ordered a set lunch "Tofu Fish and Rice". It only has 2 pieces of fishes, even it is refused to change to another one even after complaint.....and the worst is that the cashier said that "the price for the set lunch is only $29!". I know it is in very attractive price, but I believe if the restaurant boss does not satisfy with the price, he can increase the price instead of continuing to lower the food quality. In short, highly recommend not to try the set lunch there!!

Local customers thereupon will find themselves at home in familiar territory, acclimatising themselves within with ease. Still, if that won't be of a sweet enough deposition for you tonight, you're in luck indeed. Shift up another gear and flip quicker through the numerous plastic pockets until you reach the 'sacred section', and that's when it really hits its stride! For the discerned eater, here, you will be rewarded by an ostentatious showing of signature dishes which are more suggestive of the credentials of a chef who had once worked in 富臨 and then receivving further training under the 留家廚房 regime.

Aside from needing to please the clueless walk-in customers who wants nothing more than their ordinary daily grub, 尚膳坊 secretly also carries aspirations to become a unique restaurant in its own right 1 day. They really pride themselves on a range of Specialty offerings which belongs to the Traditional Cantonese Food Movement (懷舊菜). Some of these dishes require advanced booking though, due to the extensive preparations required in advance by the kitchen team to make them more perfect

The soup was made of 豬肉, 鯇魚 & 粉葛. It was good but not having much double-boiled depth, but it was sweet. Just needing more seasoning. 3.5/5

Rose Pedal Smoked 'Fresh' Chicken -
A Smoked Chicken offering could prove to be a dynamite marketing tool when needed inorder to stand out from the rest of the crowd these days. It could certainly sway the outcome and fate of a restaurant from its competitions... Much like bubble teas too, smoked chicken tends to be a cyclical item as it fazes in and out of fashion every now and then, despite having never really left town. Nowadays it seemed almost perfectly timing for a restaurant to start flaunting of their smoked dishes, right when the authentic brigade in us roam at large around town re-discovering old school cooking techniques and dishes, as we persevere with intent on not only eating, but also classifying and thereby filing these on record, hoping that we have done enough to ensure of their long term survival somehow. Perhaps a visionary HK or Cantonese government could give us all a hand by awarding some sort of DOC or AOC certification, which Chinese cuisines or ingredients could really benefit from such a system, as has already been adopted by the Europeans since nearly 2 Centuries ago.


The version here had quite a bit of smokiness from its Dried Rose Pedals, Cane Sugar as well as Fresh Cane as its formulae.... daily fresh 新鮮清遠雞 or 龍崗雞 are the norm served, in this particular case we received the latter. The chicken was smokily enjoyable but seemed slightly over-poached or smoked-cooked in texture, more toothsome than anticipated, even pre-empting that a fresh chicken might be more biteful and chewy especially especially if it has never relaxed from its rigor mortis stage. The poaching sauce is made from 桂皮, 香葉 & 薑片, which together with the smokiness makes a formidable sauce for spooning onto the plain rice, it was very good and better than the chicken itself! The chicken is pretty good no doubt, but, it could still do better cooking & timing wise, as well as having even more smokey effects. On the other hand what I've just said might defeat its purpose of even serving a fresh chicken in the first place though, since fresh chickens should be appreciated for its natural rather than smoky flavours. Chicken purists will think this should all along have been Sous-vided all the way...

Treasured Glutinous Rice Stuffed in Pork Chitlins -
Things unfortunately weren't always rosy for the night, compared to the pretty much delightful chicken. The pork intestines in this dish seemed slightly under-fried and never reached its golden-brown state? The glutinous rice and its assortment of preserved sausages were pretty excellent, but overall I thought this could have been cooked and fried better! This retained a slightly but not overwhelming porkish taste from the large intestines, it was at least hygienically cleaned.. 3/5

合蒲珠環 -
This is a prawn stuffed with walnut before subjected to deep frying. At $40 a piece, this was ok but not overly impressive, it had too much of a chemically treated crystal like colour and bounciful texture, the lack of a carapace and roes didn't make this blander than it could have performed. This is dipped into a home made sweet and chili sauce which was surprisingly good, it had non of that nose spiking acidity which is very fake.. I thought this dish deserved some credit for its frying technique, as it was virtually oil-free and cooked just right - its just mainly the fakish-crunchiness which I had trouble accommodating with. And I asked myself, is this pre-treatment method to make a crunchy prawn really necessary? Why can't it be presented as it is? In the end, this somehow resembled more of a Hush-puppies in texture than a real fresh fried prawn, especially considering its thickish batter. 3.5/5

啤梨雪耳南不杏糖水 -
This isn't included in our Set Meals, but nonetheless a shop worker decided to give us some on a complimentary basis for ending our overall satisfying rather than decadant experience. This was to be honest, too sugary, unfortunately not from prolonged boiling of the pears itself but from additional sugar itself. The pears to be fair were crunchy and enjoyable at least. Its not the best dessert finish but knowing that this does rotate daily and really carired some respectable ingredients, I guess its commendable based on the restaurant's attititude rather than its dessert execution! 3.8/5

OVERALL -

The Roasted Chicken was enjoyable indeed, considering this is a so-called fresh chicken imported from mainland China. its poaching sauce as well as its smoking formulae carried at least some thoughtfulness. I would give this dish happily a '4' or even possibly a low '5', but I wouldn't conclude that it has reached its potential culmination point in its present guise.

The other dishes also showed some kind of heartfulness, but from my amateurish customer's viewpoint, we thought it could be improved further still - even if the restaurant exihibits some sort of thoughtfulness in terms of cooking philosophy and serving authentic Cantonese cuisine dishes difficult for others to emulate. Nevertheless I do like this kitchen and its staff's attitude towards Cantonese food- and I really do wish it good luck 1 day for cooking for us, some really delectable dishes shall it begin to improve and triumph over time.

整體野食用料都唔錯, d野都算好食既, 不過有d味重左囉, 咸左d....但食得出佢d野都係有用心去整既....

母親節前一天,到此食晚飯, 一間好似茶餐廳的細店出奇地擠满人食了二人套餐 $208玫瑰雞半隻, 好大隻, 好好味, 好有煙燻的味牛仔粒都同樣出色鵝肝炒菜, 好新奇, 但唔多合我心意, 個鵝肝唔係西式個隻, 係中式免治左再炒, 有d似鴨yun 味餐設2個湯, 反而無咁出色地方好細好逼, 但我會再回來食多次玫瑰雞

早前見雜誌介紹過這裏的招牌菜 – 玫瑰花煙燻雞,又知道此店標榜古法烹調,見其於OpenRice的評分很高,所以趁有空就特地來一試其出品。不要以為小店的菜式供應有限,此店就有上百種菜式可供選擇,分為: 私房小菜、海鮮、蛋、煲仔、小炒、豬、牛、蔬菜/豆腐、碟頭飯、炒麵、炒飯/米、生滾粥、午市套餐、湯粉麵餐等十四類,可謂非常多元化。此店特別之處,在於供應用古法烹調的「心機」私房小菜,如: 寶鴨穿蓮(需預訂)、合蒲珠環(需預訂)、蝦子百花釀柚皮及鴨汁魚唇扒柚皮等。這些菜式的共通點就是工序繁多,但價錢又不會特別高,以致很多粵菜店都放棄做這些難以賺錢的菜式。此店的菜式價錢由$48-$300,午市套餐為$48(包上湯瑤柱浸時疏白飯及例湯)。至於生滾粥的價錢只不過年18,另加$5可配腸粉、蘿蔔糕、炒麵,選擇有十款,包括較少在一般粥店供應的金錢展、粥豬雜及豬肚粥等,湯粉麵方面的選擇有較少見的牙籤骨、豬Dum兜、豬肚和牛舌等,只不過$22又奉送熱飲一杯。今天只是想吃午餐,所以點了玫瑰花煙燻雞及蝦子生根豆腐套餐,連粉葛瘦肉湯及上湯瑤柱浸娃娃菜。玫瑰花煙燻雞 – 單看賣相就像是豉油雞連大量汁醬上,雞肉一點都不

玫瑰花煙燻雞 – 單看賣相就像是豉油雞連大量汁醬上,雞肉一點都不油(因為皮下脂肪不多) ,煙燻味又濃,鹹度適中,很特別。美中不足的是今天這碟雞只有煙燻味,而沒有玫瑰花味,另外煙燻的時候可能火候控制失準,以致有少許焦味吃起來雞肉有少許苦澀味,而且雞的深褐色不太均勻(雞翼部份呈深深的褐色,且有點焦,其他部份卻是很淡的褐色),雞太瘦以致肉少骨多。

蝦子生根豆腐 – 金黃炸豆腐、生根、紅褐色的蝦子,以嫩綠的小棠菜陪襯,份量不少。有豆香的滑豆腐炸得金黃,連同已拖水的生根同炒,最後加上蝦子,伴以小棠菜即成。小棠菜很軟身及入味,不過生根卻有殘餘的油膱味,但整個菜還是好吃的。

上湯瑤柱浸娃娃菜 – 菜雖軟身但沒有盡吸上湯的味道,吃起來頗淡,但蒜味很濃,最後發現用菜沾些煙燻雞的汁醬吃最好味。

粉葛瘦肉湯 – 湯料不是太多,但有粉葛有瘦肉,鹹味雖夠,但湯汁不夠濃。

整體上此店菜式的食味是可以的,而且上菜很快,侍應的服務也不錯,可以一試。

女友住西灣河,咁耐都唔知有依間野,直至睇食評見到先有留意,雖然位於大街,但位置唔太起眼.鋪入面唔算大,我地就坐最近門口位(絕對唔建議,因為多人出入,對門又關得好慢,十分滋擾)一點就點左個招牌菜 "玫瑰花煙燻雞" (半隻$78),連不嬲唔太好雞既我都食左好多件,食落有陣陣既香味,好特別.金銀蛋浸娃娃菜($52) ,明明叫娃娃菜,但俾左白菜我地...同普通老茶無分別 叫小菜佢寫住加$15蚊跟飯同例湯. 我就話加一個. 佢黎就黎左兩個飯同兩個湯,我同個阿姐(老D個位)講要左一個咋,佢話送既,點知後尾睇張單計左$30蚊,個阿姐好唔老實!!

與公司位置距離近,今日走到尚膳坊食午飯午餐很多選擇, 新正頭便先吃個意頭蠻好的時菜發財豬手飯,用柱侯醬炆成的豬手,非常入味,豬皮充滿膠質,亦帶爽口.最後連骨頭上的醬汁,也啜得一乾二淨.即叫即做的生滾粥,艇仔粥賣$18,平過很多街邊粥店.粥底較稀,味道清甜有米香.材料如魷魚,豬肚,碎牛等.份量多,尤其是碎牛,差不多成為主角.只吃兩味便算,其他的留待下一次,與女友來時再吃,聽聞晚市做得更好, 例如馳名煙薰雞及蝦籽柚皮, 下次要來試試

寶鴨穿蓮 ($150半隻) - 即八寶鴨,與蓮香居相比,可說各有特色.這處的做得較清香,鴨啲肉質較好,吃起來還脆,怪不得這度菜又名香酥鴨.
蓮香啲較淋,但蓮子味很濃.
野山准山咸肉炒雜菌 ($68)- 健康菜式,可能用牛肉炒效果會比用咸肉好,菌的香味變咸咗!
蝦子柚皮 ($78)- 合格,但汁太多蓋過柚皮,賣相不好看.

糯米釀大腸- 做得不油,但無吃炸大腸喲香脆,跟吃普通糯米卷相差不大.
臘味炒飯- 看起來乾,吃起濕,又炒得幾好!


奉送木瓜雪耳糖水 - 只是少甜,唔怕食!

見到隔離抬點了鼓汁豆腐蒸馬友,賣相唔錯,見到都想食,下次來必試!

需然坐得擠迫,侍應亦會主動禮貌地告訴你有許多人在等位. 但以食物水準,算是抵食,可惜位於西灣河,唔係幾就腳,不可作為我們家常之選.

Summary:
Price is not very very cheap. Foods are yummy, but we need to wait for so so so long time. Just holding a bowl of rice on hand but no food coming. From one food to the second food, at least need to wait 20-30 mins. Asked the boss, he said because there have only ONE STOVE in the kitchen@@!! Bad! All the tables are complain too!
We also ordered 1 whole chicken for us 6 ppls, finally we find it out by ourselves it is ONLY half chicken with only one chicken wings! Otherwise, they will charge is a WHOLE chicken fee! Bad!

真係吹到啤一聲. 我地每人食左半舊就再無興趣, 我老媽話食得唔好side, 就拿個盒, 點知加收左1蚊...唉..講多都無謂...side左1蚊帶左d垃圾回家.....

我諗起食神既對白"咖哩魚蛋無咖哩味, d湯又沖走d咖哩粉, 失敗中既失敗...

早知去翠湖食片皮鴨仲好......
