之前聽及介紹及上網睇過評語, 已對Mori有所期待. 今晚決定一試但換來一肚氣。Mori San 全晚只和他前面數位熟客聊天,食物不停供應給他們。而我們這些新客就安排在角位,等很久才有一道食物供應。食物奉上時Mori San也只是草草講下一聲,沒有任何解釋或介紹。熟客們有源源不絕不同的壽司吃,大大聲談天說地,非常嘈吵. 巳我們坐在冷板凳等每5分鐘先有一口普通得很的壽司。食物方便,我個人覺得味道和層次不夠,起碼不值得這$2200 這價錢。表現唔到個人風格和技術。名過於實。總括來說,這次用餐體驗很差, 廚師只顧款待熟客,唔優做的態度,沒有服務和尊重客人的表現。幾好吃也不行,何況食物沒有特色。有種貼錢買難受的感覺!

sushi mori可以話係壽司風潮的首炮. 所以來之前也有少少期待. 期待在於可以食到餐滿足,飽,有素質的omakase. 我現在可以說:非常滿意. 壽司上之前就當然要上款熱野暖暖胃扮扮野先啦!食材其實很新鮮. 選擇的材料多數比較大路. 是普通香港人都期待食到的味道餐廳喜歡調理很多不同的醬油來帶給一些新味道到壽司裡. 一定要讚的是,餐廳很明顯有做功課,了解香港人喜歡什麼食物當然準備也很充足食omakase每個人追求的東西不一樣. 如果喜歡普遍的壽司,mori可以講話係高級化左成個體驗當然食材是有細心準備的同朋友一齊去最好,一定會開開心心吹下水總體而言,雖然味道不會很特別,但哪份滿足感真的是非常安樂. 所以要看你想找的是什麼. 不過我真係非常滿意.7/10

呢間餐廳係我同男朋友會一而再再而三咁幫襯既日本餐廳。不但食物美味,賣相都好好,連老闆都好好傾。我每次黎食都會影到好多ig相😂😂黎到通常都係叫omakase Mori San (餐廳老闆)會預備當季或當日最好的食材俾我地食。有選擇困難的我係呢度根本不用煩惱點菜問題。我見有客人會自備酒水黎食 我地之後都有帶sake 黎飲有時隔離檯會遇到好好人的同檯客人share whiskey 或紅酒。用餐的氣氛超開心的。 建議隔一兩個月會黎食一次omakase你會試到不同季節的食材,超多驚喜的。

黎到通常都係叫omakase
Mori San (餐廳老闆)會預備當季或當日最好的食材俾我地食。
有選擇困難的我係呢度根本不用煩惱點菜問題。

我見有客人會自備酒水黎食
我地之後都有帶sake 黎飲
有時隔離檯會遇到好好人的同檯客人share whiskey 或紅酒。
用餐的氣氛超開心的。

建議隔一兩個月會黎食一次omakase
你會試到不同季節的食材,超多驚喜的。

Mori絕對可以成為我日本菜既頭三
佢用料新鮮之外
處理上亦都好細緻
醬汁配搭或者食法亦有指導食客
調味上亦岩岩好
冇太重蓋過食材既鮮味
亦無過輕令食物應有既味道更為昇華
而食物既份量同順序亦恰道好處
但回想當天到訪Mori先生係病住咁服務我地
所以好似有小小趕住

We dined here on May 15th and got hand, foot, mouth disease here 3 days later. Our friends dined here on May 19th and also got hand, foot, mouth disease here. How do we know that we got it from this restaurant? Why, we received a call on May 15th saying that Chef Mori was out ill and when we went to the restaurant the staff told us that Chef Mori got hand, foot, mouth disease from his daughter and was taking the day off. This should have been enough warning but the sushi bar was full that night

We dined here on May 15th and got hand, foot, mouth disease here 3 days later. Our friends dined here on May 19th and also got hand, foot, mouth disease here. How do we know that we got it from this restaurant? Why, we received a call on May 15th saying that Chef Mori was out ill and when we went to the restaurant the staff told us that Chef Mori got hand, foot, mouth disease from his daughter and was taking the day off. This should have been enough warning but the sushi bar was full that night and we didn't think much of it. The food was tasty but our entire party got hand, foot, mouth disease 3 days later as confirmed by the doctors in Hong Kong. How is this disease spread you ask? This virus is spread person to person through direct contact with unwashed hands or surfaces contaminated with feces. It can also be transmitted through contact with an infected person's saliva, stool, or respiratory secretions. The sushi there was infected and not only did our entire party get it but also our friends that dined there on May 19th. We reported this issue to the restaurant and they responded, "We are sorry, we will look into this matter and get back to you." They never did. Our friends reported this issue and they received the same response and also no follow up. We've also reported this incident to the Hong Kong Food and Environmental Hygiene Department to which they responded, "If you aren't throwing up or have diarrhea, we will not be looking into this matter." Dine here but be forewarned.

這兩個月是了很多不同的廚師發板因為Omakase 一直是我最鍾情的食物之一可惜壽司神Sushi Saito 好吃但沒有帶給我太大驚喜Sushi Yoshi 太新 還沒有達致米芝連標準Tokami 最近去過一次午餐 非常差勁現在剩下就是我最喜歡的Sushi Masataka和Sushi Mori 了包場吃壽司 🍣食材超新鮮Mori san 還為我們做了個野生水魚湯非常香甜gel咀我來過10次左右 這次是我覺得最最最好吃維持水平的餐廳很多 每一次都比上一次好吃的的確很困難

因為Omakase 一直是我最鍾情的食物之一

可惜壽司神Sushi Saito 好吃但沒有帶給我太大驚喜
Sushi Yoshi 太新 還沒有達致米芝連標準
Tokami 最近去過一次午餐 非常差勁

現在剩下就是我最喜歡的Sushi Masataka
和Sushi Mori 了

Mori san 還為我們做了個野生水魚湯
非常香甜gel咀

我來過10次左右 這次是我覺得最最最好吃
維持水平的餐廳很多 每一次都比上一次好吃的的確很困難

很少公开发食评,吃遍了日本和香港所有的米其林一到三星和全球50最佳,我有每一家每一次用餐的详细笔记。之所以这次要公开一部分,是希望跟大家探讨一个问题 - 发现这里起初我和先生甚为惊艳,讨论为什么细腻中达到平衡却又让人记得住的口味却没有上星。拭目以待,直到最后口味基本保持水准,除了蜜瓜冻的冰掉牙齿,荷叶饭口味过淡,但是厨师为什么匆匆草率收尾?因为我们第一次来,没有任何期待,也没有像邻桌请厨师喝酒,就出现了戏剧性的一幕。厨师从我们吃了三分之一后,开始把好的食材给隔壁客人,把次等部位给我们,比如toro, 鲍鱼和后面的所有菜… 更在帮厨问哪个给我们,哪个给邻桌时,大声说"很明显啊!" 有些熟客的人之常情,大家都非常理解。但让每一位用餐经历都感到被尊重是subtle but crucial的。否则,你就毁掉了其他人花五千块钱来吃一餐饭带来的基本舒适,不要说愉悦了。当然,你可以任性说我愿意,你不喜欢就再见。纵然再爱吃,最近还是请走了家里的一位厨师。剩下做的没深厚经验却心有敬畏的副厨主理,每天用餐反而过的更加愉快!这个感受是相通的。抱歉,我给差评。

食物方面,不論選材,Mori san既刀功,醬汁既搭配,都令我每次都吃到不同味道。
邊喝點清酒,邊談笑風生,不亦樂乎是也。
大家依照片順序看...就可以跟著我一超享受這次Omakase!

我地都叫了12件既師傅發板,都係$500/位。
講明係師傅發板,當然由師傅設定壽司🍣既款式及次序,客人就乖乖坐係度等食,享受這一份專業。
當然如果你有什麼食物敏感,好似我對蝦敏感,就早d話俾師傅知,佢會轉其他魚類代替。

今天來到炮台山的Sushi Mori Tomoaki,與其餘兩家鮨森不同,這家是由大將-森智昭主理。午間席上7位客人、以及房內普通table客人的壽司,全由他負責握,再由其他師傅負責送遞。一開始點了十二貫套餐,中途感覺還能多吃,加點成十五貫,另加自選一貫,共十六貫剛剛好吃飽。以下是今天所吃過的壽司:平目、氷見寒鰤、真鯖、金目鯛炙り、昆布漬甘海老、赤鯥炙り、帆立貝、中拖羅醤油漬、kamatoroカマトロ、馬糞海膽、香箱蟹、北寄貝、縁側炙り、鮭魚子 (encore カマトロ)平目開場的白身魚為平目,配合壽司上面的一小塊魚邊,蔥碎和蘿蔔蓉,看起來漂亮,吃起來魚肉頗是鮮甜爽口,但配料稍稍干擾。氷見寒鰤沒想到第二貫壽司就來了鰤魚,還是上品的氷見寒鰤,見師傅為這貫別下刀功,更是喜歡。從11月上旬始,便是日本富山縣氷見盛產鰤魚的季節,其魚脂含量特別高。這貫寒鰤也是十分肥美,又配合了赤醋飯,別於第一貫的白醋飯,可見師傅有特別用心配合。個人覺得醬油塗得有點多,這個問題也見於以下其他壽司,若能改善的話便可品嘗到更真實的魚肉本味。真鯖來自北海道的真鯖,魚肉上如常般舖了一片半透明的白板昆布,吃下去有醋漬過的味

真鯖
來自北海道的真鯖,魚肉上如常般舖了一片半透明的白板昆布,吃下去有醋漬過的味道,整體不太突出。吃畢三貫,感覺壽司握的體積偏小。

兩貫炙過的魚柔軟得來香氣十足。前者魚皮閃閃發光,色澤漂亮;後者加了一小撮柚子胡椒,為魚油脂味外加了層次。

昆布漬甘海老
Mori師傅表示甘海老用昆布漬了三天,原來海老類也可這樣處理的!今天的甘海老體型比平時見的要大,上面還有些蔚藍的蝦子。吃下去先是實在的口感,之後便是軟黏,海老的原味和甜味在口中散開,我個人頗為喜歡。

中拖羅醬油漬、カマトロ
入座的時候見牆上有一張青森大間的標籤,想不到午間竟也有機會吃到,必須讚揚這裏的食材,絕不馬虎。師傅表示,這塊中拖羅熟成了整整兩週,再以醬油漬兩天,因此魚肉外圍會呈現淺啡色。這貫中拖羅魚身柔軟,味道集中,脂肪紋理像牛肉似的,十分好吃。Kamatoro (カマトロ)這般矜貴的位置今天也有幸食到,其實就是鮪魚頸下的脂肪,而每條鮪魚只有1-3%的カマトロ。每咀嚼一口魚肉便有超級豐富的魚油溢出,因此令我在最後還encore了一次,只能說一句「誰不愛拖羅」!

帆立貝、馬糞海膽
帆立貝肉厚而甜,只用柚子末和岩鹽提味,更能嚐到其鮮。今天選用的是馬糞海膽,用上不錯的老品牌「木村」,瓣塊雖小但味道挺鮮甜、顆粒分明,作軍艦的紫菜也脆,確實不錯。

11月尾是香箱蟹的解禁期內,可一嘗這款高級食材。香箱蟹又名勢子蟹,意指其背上有很多蟹子,而名字「香箱」則是來至懷石料理,比喻將蟹肉、蟹子及蟹膏置於蟹殼中呈上,就如發現寶箱一樣。香箱蟹肉份量滿滿,混和蟹膏和蟹子,是一貫吃下去充實而味濃的壽司

師傅先大力拍打北寄貝,使其收縮而讓肉質更爽口,的確咬下去時頗為爽脆,而充滿海潮味。緊接其後的是油脂爆發的魚鰭邊,輕炙過後當然是入口即溶,可說是我近來吃過最具油份的一貫縁側,喜歡魚油滋味的朋友不可錯過。

鮭魚子 いくら
正值當造的鮭魚子除了入口彈牙,汁液豐富外,必須一讚的是這裏的魚子是混合木魚汁漬及醬油漬,因此細心會看見圖中深淺不一的魚子顏色。

吃畢十六貫壽司,感覺十分滿足,對於Sushi mori Tomoaki 使用的食材和處理的方式也相當滿意,只是醬油塗得多了點,造成少許干擾。而在服務和環境上亦都舒適,總括來說在各方面都皆比坊間許多鮨店優勝,必會再訪。

很多朋友都到過這間店都讚不絕口。這壽司店座位不多, 一定要預訂。 這次點了15 件的廚師發板,食材都很新鮮,味道非常之好,比很多其他壽司店要好。價錢也很適中, 物超所值。

呢個卷有拳頭咁大食完已經好飽呢度嘅壽司全部都唔需要點豉油好新鮮嘅日本海膽、好鮮甜嘅蝦肉加左少少炒香左嘅白芝麻!好好味我最鍾意食嘅海膽上面有黑松露!好正呢個蝦係用海草yip 的!好鮮所有野都好新鮮同好食非常滿足的一天
