雖然話而家確診數字回落返,但認真都未係可以鬆懈。今日去呢間餐廳食,被安排坐坐正出菜口嗰張枱。落左單坐係道等野食嗰時,見到廚房入便有個伙記個口罩淨係喺咁易遮下個嘴,鼻就完全無蓋住。明可能廚房焗,可能想抖下氣,雖然我覺得都唔應該係廚房入面咁樣抖,但我等出餸等左10幾分鐘,佢全程都無戴返好,即係佢其實就係打算咁戴。最離譜係我同個樓面講叫佢提一提返佢個同事,佢竟然理直氣壯咁同我講話佢係清潔,唔係煮,唔關事。佢係咪會落手煮我就唔知,但我見到佢就係出菜位行出行入,會企係出菜位,之前另一個商場入面個餐廳群組都係由清潔員工開始。有案例嘅情況下,加上我講到明個樓面都可以咁應我,可想而知呢間餐廳有幾“高”防疲意識。我諗大家係呢個非常時期,都真係諗清楚仲去唔去呢間,佢啲外賣都係同一位出,大家小心啦。 continue reading

我本身就唔太好越南風味,所以幾乎每次食里類餐廳都係叫香茅雞扒飯或撈濛(雞翼有骨都唔太好😂😂,題外話,近年好多餐廳都只做雞翼唔做雞扒😤😤)。今日亦唔例外,黎一客香茅雞扒飯~~套餐黎講價錢正路,五十幾六十蚊連飲品,雞扒份量都大,係稍嫌葱油同炸葱都唔夠味,漬蘿蔔嘅紅蘿蔔比白蘿蔔比例高岀太多,叫做食餐飽嘅都算可以啦。。。朋友叫左咖哩,咖哩帶甜,比起我嘅雞扒飯岀色少少~另外仲追加左個小食,蟹肉焗蛋金磚,價錢定位同產品present岀黎嘅樣都幾唔匹配,味道似越南春卷嘅餡~ continue reading

有些餐廳不介意以用地獄來標榜自己,歡迎賓客踏進鬼門關。舉例就如佐敦澳奶以惡劣態度聞名,但未曾改變始終如一,仍有人慕名而來。又比如深水埗紅豆壽司,仍許多饗客鍾愛。地獄也是叫一種餐廳文化。這間老趙越南餐廳竟將地獄發揮得極致,竟同時做到地獄廚房及地獄服務。不信?歡迎來一試破地獄之滋味。先說服務一範。餐廳樓面侍應有二,都是國內阿姨,對她們服務沒甚要求。座下時,旁枱兩位西裝阿哥正向侍者投訴,他的湯河牛丸是冰的,咀嚼一下即吐出另一細碗內。但侍應只將細碗收走,漠視湯河尚有其他冰凍牛丸。同枱另一西裝哥兒見侍者沒什反應,便即時要求連他的食物也取消罷了,埋單不吃走人。侍者竟敢收足全價,分毫不減。其實經營餐廳樓面服務是重要一環,她們不是單單只作落單收銀上菜等門面功夫,更要與廚房溝通推介今日菜式,也要監察廚房守緊品質,將不合格之餸菜退回廚房重煮。這宗凍牛丸事件,廚師師傅是大錯,連基本功都沒有。牛丸熟否很簡單知道,浮起即熟。樓面處理方法亦簡單:全碗收回,為賓客轉食物,再送贈熱飲或前菜抱歉。既能致歉,客戶也歡喜更能重建雙方關係。此店明顯沒有培訓,是地獄也。自己不敢與侍應溝通,她們不像知道自己任何過錯,亦不曾嘗試阻隔我們繼續在旁邊吃花生。到食物方面:生牛肉湯河,一嚐牛湯,是漂白水味,匙更食具問題。明白食店會以漂白水浸著待洗之食具,免令食具變黃增大損耗,但清水與漂水比例掌握要準繩,不宜放過多漂水,否則味道難除,只會招徠投訴。湯是合格的,放大量洋蔥,但河粉太幼及太散,沒一注完完整整,吃得辛苦。牛是普通急凍刨機牛肉貨色,牛味不足也十分單薄。還有師傅時不是忘記了越南牛河靈魂九重塔香葉呢?香茅豬扒飯,賣相真的是完全失敗。師傅對美學之要求簡直地獄,紅蘿蔔絲伴碟,凌亂當作藝術,不懂欣賞。豬扒急凍貨,沒肉味也沒香茅味道,煎得過了火喉,就像咬木柴般。蔥油也只是給一點點,就如是貴價食材。白飯對比下有點多,做成效果是木柴配乾飯,旁邊加些雜草。幫你改個地獄名稱吧:古芝地道飯。即南北越戰期間,在地道內吃的飯。這是加$29配的越式三併。上碟時看到賣相已反胃,泛著一層黃油漬。扎肉用了幼卷薄切,薄得可憐,是用0.1mm 計算。請問師傅現正是考你刀功嗎?還是覺得來貨只是$30蚊一大卷的扎肉對你來說成本很高呢?扎肉上又不明所以地地舖上一堆蔥及乾蒜,我不知自己在吃什麼了。那個蟹肉焗黃金磚,明顯一早弄好不新鮮。當有單時師傅再落爐翻熱。蟹肉混合放久了的蛋,是惡臭味,再翻熱蛋賣相也發黑了。進口是臭的。地獄餐廳,要努力經營,做出名聲。或許未來會有賓客來體驗黃泉路奈何橋的。 continue reading

心血來潮想食越南河,所以就去左老趙喇。諗都冇諗就叫左個生牛肉湯河,午市套餐52蚊包熱飲。整體而言,只可以話價錢同野食都係中規中矩。湯底黎講,太油太咸。生牛肉還好,份量ok,唔會話得兩三塊,都夠食。河粉唔差,夠熟夠林,但又未至於出色。調味方面好似爭咁啲。除左生牛肉,成個感覺係似食緊港式河粉咁。但食lunch黎講,52蚊仲有杯野飲,的確冇得要求咁多...野飲我叫左熱奶茶,都係普通茶記質素吧。但至少真係食得飽嘅~ continue reading

老趙都算係越南餐廳中比較出名既老店,以前成日食佐敦另一間老趙,好鍾意佢個牛肉湯底,今日去佐敦搵朋友,見到老趙諗都無諗就入去嗌左個生牛河,上得好快,個樣同以前食個間都差唔多,不過食落就知變左喇,個湯味係濃,不過無左鮮甜既牛肉味,牛肉細細塊,肉有d 鞋,我應該唔會再去食了。 continue reading
