The chefs pays great attention to the look and taste of the food they serve, they totally took me on a culinary journey filled with creative plating, interesting textures and unique flavours, and the most impressive dish was the '鹹魚白菜' with a music box inside playing the song '分分鐘需要你' by 林子祥, it's a must-try restaurant for any special occasion.

第二道threadfin Ma Yau,受四川水煮魚的靈感,這道Ma Yau辣的恰到好處,旁邊擺放精緻的水果可以用來解辣,如果覺得不夠辣,chef還放了多餘的四川辣椒面
第三道roasted sea cucumber,上面是烤海參,中間是蟹肉,下面是蟹肉做的醬汁配陳村粉。這道菜的靈感來自於花雕蟹配陳村粉,吃完以後蒸籠里還有多餘的陳村粉讓你就著,不浪費每一處美味的醬汁。

第四道 Taiyouran Egg,我們點了附加的那道澳大利亞鮑魚配海膽和黑松露risotto。上菜時鮑魚片鋪在risotto上,上面是海膽,服務人員在我們面前削了很多很多黑松露。似乎給我們的黑松露特別多,對比了別人的視頻和照片發現我們的黑松露滿滿蓋住了整個貝殼,已經看不出來裡面的海膽和鮑魚了。這道是我的最愛,食材搭配一聽上去就會覺得好吃,實際一口下去,簡直是天堂的味道。

第五道smoke goose,複雜手法加精緻配方煙薰出來的燒鵝,搭配鵝肝,醬汁里放了香港人童年吃的百花魁。簡單煎過的鵝肝非常好吃,燒鵝煙薰味道十足,我個人覺得肉質稍微有點柴,醬汁甜的恰到好處,完美配合煙薰味道的燒鵝。
第六道Aust wagyu short rib,主廚說中餐總是以一道炒飯收尾,這也是他這道菜的靈感。xo醬炒飯配和牛,整個搭配、創意、和味道的處理拍案叫絕,也是我整晚很喜歡的一道菜。

第七道Japanese Stawberry是吸引我來vea的原因之一。我至少看了三四撥朋友發那個日本各地的草莓盤子圖,正紅色、粉色、白色的草莓按照地域分類都放在一個托盤里,對於喜歡草莓的我毫無抵擋力。草莓季節已經接近尾聲,當晚全場在吃這道菜的時候都只有紅色的草莓,完全沒有白色和粉色。我們向chef說了想要白色草莓後,他把最後三個草莓放在托盤上端給了我們。雖然一個白色草莓200大洋,但是我們還是激動地嘗試了白色草莓。這個來自九州佐賀的草莓之所以這麼大顆是因為其他草莓一棵樹長好幾個,而這個白草莓,為了讓它長大,主人剪掉了這顆樹上的其他所有草莓,只留這一個!就為了只留的這一個,也值得嘗試。另外我們還試了四國德島和服務人員推薦的九州福岡。
味道最淡的是白色的九州佐賀,幾乎沒有甜味,都是清香,確實非常特別。最甜的還要數店員推薦的九州福岡,一口咬下去,甜到了心裡。草莓跟著一道草莓cheesecake一塊上桌,cheesecake下面佐了whitepepper,有輕微辣感,很有意思。

第八道Lapsang Souchong,這道茶味sorbet和凍,質地厚重卻不甜膩,搭配chinese mulberry,hazelnut,巧克力豆,恰到好處。

最後是甜點,先上了生日特別送的烤鹵豬巧克力蛋糕,接著是三層的甜品盒,最後走進廚房,還有一口精緻的小糕點。這些小甜點充分顯示了chef細心的小心思。從含義,到擺盤,到和食客的互動,一切都是滿分!

結尾端上了咖啡、茶的木盒,任你選擇,當然這木盒里還有whisky的選項,頓時好感倍增。想不到這裡還有independent bottler Cadenhead,立馬叫了一杯。

值得一提的是我們點了cocktail pairing。這是我目前為止喝過的最好的佐餐雞尾酒。整個菜單7杯酒,造型簡單卻十分精緻用心,切成心型的蘋果,放在葉子上像水晶一般的糖漿,這些小細節都顯示出了調酒師的用心。 這7杯酒大體是水果、花朵、茶等味道,恰好都是我喜歡的味道,酒調的非常順口,每一杯都有些小創意,給你一點小驚喜! 我已經說不出來我最喜歡哪一杯,因為每上一杯都很喜歡!

整體吃下來,感覺很像我香港最喜歡的餐廳Bo Innovation。每道菜創意十足,密切聯繫著香港文化和中餐文化,而且味道一直在線! 巧的是我的朋友第二天正好去了Bo,我問她連續兩天吃下來,更喜歡誰。她說味道真的各有千秋,創意有點類似,都有和香港飲食文化的結合。不過VEA整個餐廳的氣氛,還有服務水準要比Bo好太多了!

VEA我很推薦,已經迫不及待準備再來了。

第一次去選擇坐table instead of bar枱,但不減服務質素。雖然menu話8個courses ,但實際食左十幾樣野,絕對夠飽。每個菜都有驚喜,玩味十足又好味,又中法合壁,夠創新。每個菜上枱時都有詳細介紹。雖然食足4小時,但一d悶場都冇。如果真係要俾意見,係菩提葉個杯茶,可以用淡味水仙或龍井,可能效果更好。當中最欣賞係日本刺参花蟹皇湯底噴上22年花雕配陳村粉,味道夠濃又鮮味。由於太太生日,更送上照片及朱古力乳豬,夠驚喜。

However, there is no waiting area in the restaurant soI had to wait at the Bar area on 29/F. Food was nicely prepared with very artistic design. Food was nicely prepared with very artistic design. The dinner was a bit lengthy which took us around 3 hours. Most of the seatings were arranged on highchair at the bar table so we can enjoy the view of chefs cooking. However, the seating area is less spacious than I imagined. Staff or other guests may be passing by your seats. Services were good as expected. They also prepared a special birthday treat and Polaroid photo which is quite thoughtful. Overall, we had a great time.

每一道菜都好特別,個人認為視覺嗅覺味覺都達到滿分!當中最欣賞的是煙燻蛋,賣相好靚,估唔到一打開蓋的煙燻香味比到咁大驚喜。將其中一道轉成黑松露海膽意粉,好耐都無係香港食過咁新鮮既海膽啦,一塊塊既黑松露仲即刻係面前切下。Nespresso的甜品,好香好香,細細粒的jelly都好濃郁,另外還有好特別的咸蛋黃甜品,甜咸一d都唔奇怪,好夾!

In terms of presentation, I’m Your Father served in a Darth Vader mug is definitely the most appealing among the 3. But the cocktail is too sweet for my liking. In terms of taste though, the Creamy Negroni at the bottom is my fav! It does look a bit modest for ig but it tastes really good with medium-strong taste of alcohol!

回想起第一次去Vea, 由坐下後看到枱上的人形餅乾至最後的甜品,都高潮迭起,讚嘆不已… 讓吃到有點麻木的我,找回點驚喜和興奮的感覺,甚至期待它趕快轉菜式,可以盡快再重温這種滿足感…第二次去,當然沒有了第一次那種驚喜和期待,但仍然感到滿意的,亦累積了經驗, 下次再去我不會再加錢轉意粉, mocktail也不是必須的,因為都試過了,2次飲既都差不多,冇驚喜了…總括來講,Vea既食物味道,賣相,盛器,裝修格調都屬超班, 除咗地方太細外,其實絕對不遜色於其他米芝蓮3星。另外,一向鐘意自己發板的我,冇Alacarte, 令我不能重温我偏愛的菜式,亦重覆了我吃過但不想再重覆的菜式…

We went to pre- celebrate Xmas and I would say the presentation and creativity wowed us a lot. Having said that, some dishes were a bit salty to us and the use of chicken heart and liver may not be a wise choice.It’s worth trying on the whole before you head to Krug room

- 北海道帶子煮得完美,那隻Serve Plate 令人非常驚喜,入滿水的透明盤子,跟帶子這道菜非常相襯

- 不同品種的菇,再加上栩栩如生的擺盤,感覺像上山採菇


Sea Cucumber
- 驚喜的是那個醬汁,與海參非常夾


Egg
- 這個是整個menu 裡最正常的一道菜,反而附送的油炸鬼令我覺得非常有創意


The Smoked Pigeon
- 由於我不吃Pigeon, 但友人非常喜歡


Chicken Roll
- 也是正常的一道菜,沒有什麼驚喜,但味道不錯


Wagyu Beef
- 和牛煮得剛剛好,那個青豆汁中和了和牛的油膩


來到甜品,兩個甜品都是非常心心眼的

Cherry
冰車厘子加啫喱,還有奶凍,舌尖非常快樂,感覺很refreshing


Tofu
非常非常驚喜的一道甜品哦,炒豆腐涼粉!一開始以為是傳統的豆腐,原來是變種新潮版!


Mignardises
最後送上的甜點,放在一個用絲帶綁上圓形的小盒子,感覺像拆禮物呢



PS: 生日還會送上燒豬朱古力一客,非常有趣


整餐飯就是在看魔術表現一樣,這樣的出品絕對值回票價

I made a reservation via their online system a week ago, it was all at ease no hassle and no problem.

The dinner was to celebrate a friend’s birthday. The restaurant is located near the Cosco Tower on Wellington street and when we entered the restaurant, the bar seating at the preparation area stood out right away!

We were seated at one of the counter overlooking the kitchen area.

The dinner was not just well presented but it was entertaining as we were able to see the chef preparing the food and Chef Vicky taking care of all the dishes that went out. This is not the first time we had dinner prepared by Chef Vicky, as we have attended other private dinner hosted by Chef Vicky, his style of cooking has never disappointed.

One of the dish that is worth mentioning was the roasted sea cucumber, never tried this way of cooking before. Very tasty and smells great!

The attention to detail was really high for the price of dinner it’s definitely worth it when comparing other restaurants at the same level charging even higher.

I went to the bar/lounge in Vea during happy hour, where there were plenty of bar snacks and innovative cocktails on the menu. Of course, I have always wanted to go to the restaurant but I thought I would dip my toe in the bar first. I loved the experience. I went to the bar/lounge in Vea during happy hour, where there were plenty of bar snacks and innovative cocktails on the menu. Of course, I have always wanted to go to the restaurant but I thought I would dip my toe in the bar first. 

I loved the experience. It was a bit secluded compared to other bars in the Central/Sheung Wan area and the views were fantastic.

The happy hour deal was great, as it was HKD80 for drinks that would have cost about HKD110 and over. All the creative cocktails were served with flair and had a foodie twist. The "I am your father" drink was served in a darth vader shaped cup and was an espresso martini with bacon, playing on breakfast. It was strong and refreshing. The "cleopatra formosa" was sweet and a bit sour and served in a golden pineapple. The "quail's nest" also had a similar sweet sour flavor profile, though was smoother in texture, and was served in a nest with marshmallows. Incredibly presented.

We even had a few snacks, including the pork belly bao - it was delicious with a good balance of flavors. I especially like how it had a spicy note rather than a sweet note of other pork baos you get in town. As we were going for dinner somewhere else after I was still very curious about some other snack like the oyster mushroom 'spaghetti' but it will have to wait for next time.

I don't know when I'll be able to afford the HKD1,480 8-course tasting menu in the Restaurant but I know I'll be back for the happy hour!

Honestly hands down the best restaurant I have ever been to. The experience is a tribute to all the senses. Chef Vicky (I didn't even know it was him at the end) is a culinary mastermind. The meal from beginning to end was beautifully executed. All dishes were on point with special mention of:- roasted sea cucumber (its as if the sea orgasmed in your mouth)- uni and caviar pasta (the right combination of everything...just wow..opt for the extra)- yellow chicken (succulent and perfectly tender

生日飯⋯一直都好想試VEA 終於有機會啦一早做左research,佢地係做set menu,每2星期換1道菜式,如果有咩allergies要係booking時講埋是日MENU,睇到以為唔會好多野食,食完好多,感覺上佢有幾款都無寫落MENU!依隻龜龜一嚟到就已經喺度,放咗喺台面,原來食得嫁。So cute!入邊係佢地mix既cheese。First dish. 流心「暗春」蛋(自己改既名)Special taste!從來未試過「暗春」蛋都可以流心Second dish. 佢個盤沙,我哋試過係糖黎個2舊入邊係蜆肉,mix with their dressing,幾好既配搭。Third dish. Fifth dish. Roasted Sea Cucumber. 好出色好出色好出色啊!下面嘅係龍蝦sauce,海參下面係龍蝦肉,介紹嘅時候好似話係日本海參。日本海參係由新鮮海參去內臟,水煮後乾製而成,依呢隻係由北海道來的遼參!

Eighth dish. 又一highlight!24 hours slow cooked Australia Wagyu Rib. 佢下面配合左冬瓜,雖然個sauce比較heavy,但配合冬瓜以及其他配料係岩岩好!牛肉入口即溶。

Dessert dish. 佢甜品都有三款,可惜太多相post唔哂3款。
呢碟最出色,大家見到前邊六角形嗰個透明啫喱入邊係佢自己種嘅臭草,後面果舊雪糕係海鹽雪糕,中間餅底係truffle crushed。所有野配合埋岩岩好,感受到佢哋嘅細心配塔。


今日係得好好好好超級非常滿足的生日飯,感激有朋友陪我一齊enjoy。四個鐘嘅時間入邊,每1分鐘都好enjoy有surprises。

食物精緻,服務好。信價比高,都唔算貴,超出米芝莲一星。而且抽風系統好勁,雖然係open kitchen,但成个餐厅完全無味。週年紀念日還有禮物同影相留念。值得一去。
