雖然係平日夜晚,因為地方細,沒有空位。但幸好人人食完就走,5分鐘後就有位了。一坐低,見到menu只有幾款option, 對我地呢啲有選擇因難嘅,其實仲好 😁 就叫左兩個classic burger試下。仲叫左薯條同不可不叫嘅可樂。由於係open kitchen,可以見到店員不停整漢堡成個流程。而且因為近收銀,所以都有同店員傾計,好有美式小店感覺。個burger 即整點都好食啲,而且欣賞佢中間仲係紅紅地,好juicy!但個薯條我又唔覺好特別,同埋好粗,好飽肚。食完今餐,聽日又要食番少啲先得😛

I've been waiting for the summer heat to subside to try Butchers Club Burger because I have passed by before and have seen the limited seating in the shop, but I decided to bite the bullet one afternoon as the weather had cooled down a bit even though it was still warm. I think most people know about their "not-so-secret" menu by now which you can look up online in advance but I decided to get the regular burger since it was my first time there. I placed my order at the cashier, started the fun game of looking for a seat and waiting for my number to be called out. As mentioned, I ended up finding a spot right outside in the alley where people had to stand and eat.

Burger + Duck Fat Fries + Coke ($140) - my order was brought out to me on a cute wooden cutting board after 10-15 minutes wait. The burger was really small especially for the price but I was willing to overlook that if it was really amazing - except it wasn't. Served with cheddar cheese, glazed bacon, tomatoes, pickles and onion spread, the burger definitely has potential as the beef patty was actually quite tender and juicy. It was just really salty for some reason as if someone went crazy with the salt while doing the seasoning. It was so bad that even downing my can of coke didn't help and I ended up not finishing my tiny burger. The duck fat fries were decent but ended up tasting salty as well (not sure if it had to do with the burger which probably screwed up my taste buds by then). [2.5/5]

Verdict - would I return? Probably not. Combined with the high prices, small portions and the "seating" environment, it's not the first place that would pop to mind if I wanted burgers.

在這幾個月頭說起漢堡,不得不提位於灣仔的這一個城中新貴《The Butchers Club Burger》。其母公司,《The Butchers Club》是一間位於香港仔工業區的一間外國肉類批發商,客人們除可以在他們的店內挑選上等牛肉之外,也可以就地品味私房西餐。從鴨巴甸起家,《The Butchers Club》來到灣仔,當然是想大展鴻圖,而且,漢堡包,是一個冇得輸的食品,所以,大展拳腳,由手打漢堡開始,是非常正確的 business plan。來到的時候,已經是晚上九點,幸運的,就不需要像繁忙時間中,在大熱天時的街外排隊,但,店子以然是座無虛席,十分之旺。而我要的漢堡,就在身後的 open kitchen 製作,新鮮的肉,也就在頂上的雪櫃內,感覺很肉,很有鮮肉桌的感覺,總之,會令人很期待煎出來的美味漢堡扒。這兒只有漢堡,暫時,一切都只有漢堡。而我就單點了一份簡單的芝士漢堡,加一份薯條,加一罐可樂,盛惠$140,本來想來罐啤酒的,但他們提供的是藍帶...喂,藍帶係 cheap beer,你賣$30,我唔服.....店內,大部份都是這一種吧檯,高居臨下食 Burger 是最爽快的,亦

漢堡包,肉厚,肉香,輕輕地煎過的包子,也帶出了麵包的麥香味道,而且麵包的軟度十足,可以很輕快地一口把四層高的東西一咬全入口,而就單是這一口,麵包的麥香,芝士的咸香,肉扒的牛肉汁香,一下子充斥在口腔之中,感覺很 full,很豐富,用紅酒的術語來形容的話,就是很 Full Bodied。

薯條,粗切,正確一說就是連帶著薯皮的炸薯,因為其又粗又大又脆又香,細細份,飽飽肚,薯味香濃得很,是一個完全沒法播的美味道。

肉美肉新鮮,果然做出了與眾相同但味不同的美麗漢堡,平日及週末都大排長龍,絕對不是 Gimmick,是真正的美食誘惑。《The Butchers Club》選了灣仔,選了漢堡來做大展拳腳的頭炮,的確沒有選錯,美味的漢堡包,是不會輸的。

I went here with my daughter once. We arrived at the restaurant just when it was opened at noon, and barely got two seats. we had two burgers and a duck fat fries. oh my god, how we attacked the burgers! some criticized it to be too salty but both my daughter and myself thought the salt really brought out the favor of the meat. the duck fat fries were amazing. it was crunchy and fragrant. go there without your guilt conscience in order to enjoy the food. 😋

聽過呢間野好耐又見人頭湧湧,終於試一試。平日晚上7.30,所有位都滿哂。雖然冷氣都夠但油煙太大加上坐高櫈,雖則張枱下面有個鈎仔但今時今日邊有人個袋可以掛上咁既鈎仔。加上有D客係外面食煙,D煙又吹返入舖。根本有位堂食都唔會舒服。Menu 好簡單,本來只吃burger 但見到有duck fat chips 又想試下。企係度等外賣企到腳軟。觀察一下,員工超級勤力藉得一讚。我最唔明一間賣一樣野既店點解要用半個鐘先出到餐。就算佢唔當快餐店,一間餐廳都太慢。終於開飯。$100 burger 賣相不錯,有好質量牛肉,芝士,煙肉,酸瓜加蕃茄但太太太過咸。麵包如果可以脆口D會更好。至於$20 chips. 失敗之作。無鴨油之香,又唔脆,食慣英式薯條一定失望。但薯條自己個味就不錯$120較貴但肉不錯但未至於要等30mins恨食嘅飯驚喜反而有8達通!

這一所近來最火熱的burger shop,對我這個超熱愛吃漢堡的人來講,吸引力自然是極巨大的。就在小弟最近議定的覓食checklist中,這裡總是在前列的位置....今天終於可得償所願來一吃了。一早收到風知悉她的厲害,故此就在開店前半小時已來到門外站著等。抵達時前面已有五至六人,及後看著不斷有人加入,到了開店時,門外已有二十到三十人在聚集....到了將近到我落單之時,馬上開動我的barcode reader,此時店裡的那個secret menu便跑了出來....此行我來的目的,當然是為了那份量十足的"Double Happiness"。除此以外,那傳說中滋味懾人的鴨油炸薯條亦是我為此專道而來的原因....付了錢後等了一陣子漢堡便登場。拿著它走回自己的位置時旁觀的人都立刻下注目禮,因它的件頭確實驚人...我想眼前這個"雙囍包"連包帶餡的高度好說也有接近15cm左右。就算是我這樣一個大嘴男狂掹大口也不能輕易一囗咬下去....卒之在吃包的整個過程中有80%以上的時候都是在食芝士及肉餡。許多人都說過這包乃是麥記足三兩或雙層芝士漢堡的高級版,但於我而言這真的是很難互相比較的....麵包方面這雙囍

我想眼前這個"雙囍包"連包帶餡的高度好說也有接近15cm左右。就算是我這樣一個大嘴男狂掹大口也不能
輕易一囗咬下去....卒之在吃包的整個過程中有80%以上的時候都是在食芝士及肉餡。許多人都說過這包乃是麥記足三兩或雙層芝士漢堡的高級版,但於我而言這真的是很難互相比較的....

麵包方面這雙囍所用的和普通的regular burger是不同的,她所用的是大片的muffin,入口尚算鬆軟的;至於芝士則是普通的車打芝士。在熱力影響引致半溶情況底下是難吃極也有個譜。令我不太滿意的一點是身為主角的牛肉,肉香雖是夠但質地卻十分的嚡囗而且亦沒想像中的多汁。咬將下去肉汁從手指縫夾中漏出來的情境是全然睇不到。再加上肉的調味也太鹹且還燒炙得有些過焦,咬著某部份的肉時舌頭是感受到一點苦味來;此外附帶一點的是煙肉亦十分的鹹極重口味,我個人對之也不大喜歡....

此時看到坐在隔鄰的老外吃的那個regular burger,肉相反是十分juicy的....我想我今天可能是運氣不佳了吧....

薯條好吃之道是一定要用粗身的,熱辣辣的炸起外皮脆而內軟及粉糯,灑上海鹽來吃當然是不會差。不過若說它是下了鴨油去炸而將之和其他普通薯條去區別的話,那就可讓人太失望....因為我在吃遍一整盒之後也嚐不出鴨油帶來的脂香....

幾經努力底下,薯條及漢堡皆吃剩了三份之一,實在是太heavy了....

吃完後走出門外,仍看到有十多二十人在排隊....我想我應也不會花時間再度置身其中吧...

見到media 話呢間嘅 burger 唔錯,特登走來試。我同朋友入到去嘅時候完全冇人理我哋。餐牌又奇怪,show出來得果幾樣嘢,要scan啲咩 qr code去睇 secret menu。地方好細,但又超多staff,起碼 8-10個。我哋左望右望咗五分鐘,咁多員工(有幾個都係得閒嘅),竟然冇一個問我哋需唔需要幫忙,連 HI都冇個。 佢哋掛住自己玩同傾計,對食客來講真係有啲insulting,玩得咁高興不如關門玩飽佢!另外佢係open area,又open kitchen,幾熱下。見到咁嘅service,只係叫咗一個包 share 試下就算。我嘅手已經細,呢個 $100嘅包size會唔會細咗少少?!啲肉都新鮮,個麵包都唔錯。但細~ 亦唔算好好味bacon 超肥又未炸到脆,豬油咁點食快餐feel,罐裝飲品都要咁貴!一罐 Sprite - $20一罐 Blue Ribbon(藍帶) - $35淨係呢個女仔staff有望出來對我笑下。

第一次有fans邀請the Gang去嘗試Burger界的當紅餐廳,我們一行人十二點正就在Butcher’s Club的門口排隊。無錯,今時今日的香港只要稍微有名的餐廳都會出現這情況,你想食就是不得不排隊。你排得越耐,期望就越大。

What makes a GREAT burger? Not much, just a few things – crispy bun either grilled or toasted with soft texture, melted cheese, juicy & preferably charcoal grilled meat patties, secret homemade sauce to complement the patties, and some veggie (onions, tomatoes, lettuce) to balance the overall oiliness.

Double Happiness – Grilled cheese with double meat patties
Carly tried Toronto’s prominent Burger’s priest – The Four Horsemen and Apocalypse which is grilled cheese + meat patties + deep fried mushroom in cheese (veggie patty) and she’s comparing this against Butcher’s club secret menu. The grilled cheese was not bad just a bit dry for the bun was grilled for too long and meat patties were so dry after grilling and almost fully cooked, I was really disappointed at first. The flavor was not bad but then if you tell me that the beef was dry-aged, I would be questioning about the technique involved. The overall flavor and grilling technique has to be improved and consistent for Butcher’s Club to secure their fans base instead of just attracting first-visit customers.

這次Gobay很關注麵包的質量,因為這裡用的是Bread Elements的出品。
Bread Elements的兩位創始人兼麵包師傅都是非常注重品質的人——Grégoire Michaud和Mark Yeung。當Grég還是四季酒店餅房總廚的時候,人人都叫他「餅鬼」,讚賞他「整餅鬼斧神工」的意思。他每天都是笑瞇瞇的,人長得可愛也沒什麼憂愁,很喜歡逢人便講半鹹淡的廣東話,Mark也一樣,都沒怎麼見他皺過眉頭。Gobay堅信熱情洋溢,陽光四射的人總是能做出美味的食物。
麵包蓬鬆綿軟,微甜,合著芝士做成夾著兩塊patties (漢堡肉餅) 的grilled cheese sandwiches (焗芝士三明治)。Patty的用料高貴,引用他們自己的原話—— “the patties are made with dry-aged Australian black Angus beef, combining different parts of the cow and fat content” 。黑安格斯牛肉(Aberdeen Angus)原產自蘇格蘭,遺傳了原品種的黑毛,比紅安格斯(Red Angus)適應性強,也更容易飼養,在美國是最廣泛養殖的牛肉品種。Dry-aged beef即是經過自然吊起風乾熟成的牛肉,肉味會昇華而變得濃郁,猶如義大利的風乾火腿一般。
聽起來好像“很好很強大”,但吃到嘴裡感覺其實一般,煮得太熟,入口很乾。原本風乾牛肉應該更嫩和多汁,並且風味突出才是,但這個burger沒有上述優點,調味其實不俗,可惜了。黑安格斯牛肉以雪花分布紋理著稱,烹調得當的話是味道一流的,在以下試吃的Wu-Tang Style Burger裡的patty,就好很多,Carly稍微一用力,都可以看到擠出的肉汁。酸瓜和煙肉層並無增添多少水分,源於醬汁太少,就算還有兩塊溶了的車打芝士也幫助不大。可以說,份量很足但味道一般的「雙喜」並無帶來雙層驚喜,少許失望。

Wu-Tang Style Burger did woah me away for its modern kicks and Asian elements added to a traditional burger – Korea kimchi, Japanese mayo, Thai Sriracha sauce. Sweet potatoes were fabulous, as they were cooked through and the deep-fried crust was thin enough. The kimchi goes so well with the mayo which added extra flavor and creaminess & moist to the juicy tender patties.

This burger got the juiciest patty out of all three and it was one of the juiciest burgers we’ve ever had before. The inconsistency of grilled meat patties doesn’t make Butcher’s Club qualified as the best burger’s place in town.

Wu-Tang Style Burger(HKD$120)
誠意推介這一款創新的burger。Wu-Tang 這個名字來源於美國Hip-pop組合Wu Tang Clan。他們做音樂時會加入功夫作為背景節奏,很有特色,從而啓發了設計者在burger裡混合數種亞洲元素而成就了獨特的口味:韓國的泡菜、泰國的Sriracha辣醬(辣椒曬乾打成糊加入蒜茸)和日本的Kewpie Mayo(普通超市有售的丘比沙律醬)。
麵包和patty之間還夾了一塊脆炸蕃薯,和芝士、酸瓜混合一起──泡菜的水分和微辣,泰式辣醬的刺激快感,Mayo 的甜潤,炸番薯的甜脆,還加上酸爽的酸瓜,你可以數一下一口咬下去有多少重的口感,而且他們和諧地融在舌頭上,絕對應該被推舉為該店的招牌菜!!

最後品嘗的是菜單上的普通Burger(HKD$100):
普通的burger反而更能吃出patty的真實味道,牛肉的調味確實恰到好處。值得特別指出的是這裡的煙肉,特別的厚,再引用他們的原話── “double-smoked German bacon glazed with maple and whisky, it’s an epic mouthful”. 雖然不甚明白 “double-smoked”(兩度熏製)的好處,但它濃郁的豬肉香和厚重實在的口感讓我感到很新鮮,whisky的香味是聞不到,而maple的甜卻均勻滲入到肉裡面,很好吃!我特意問了負責傳菜的女孩关于”secret sauce”,只是依稀听到”caramelized onion”,原來是千島醬的變身,加入了嫩小黃瓜和炒甜了的洋蔥。也許是火候控制稍微好,牛肉也比雙囍裡的要多汁。所以整體而言,這款最為人所知和為人所點的burger還是不錯的。

很久沒吃burger,於是來到這間最近比較火,專門供應burger的餐廳試試。為了避免等位,我們比正常晚餐時間早到,約6點半左右到達餐廳,它是類似快餐店自己找座位自己去付款點單的運營模式,幸運地我們到達時馬上找到座位不用等。座位上沒有餐單,可以到收銀處拿或看bar檯上面,都是一樣的。正常餐牌只供應三款食物:burger、fries 和 ice cream float,大部分人都是點了頭兩款,我們也不例外。他們的burger標榜採用澳洲300日有機穀飼乾式熟成安格斯牛肉,用餐期間幸運地看到它in-house的牛肉處理過程:廚師先從有溫度控制的食物櫃中拿出一大塊牛肉,然後切成小塊,再把小塊的牛肉放進機器打成免治牛肉,另一個廚師把免治牛肉放到爐上煎,並加入黑椒、海鹽調味,完成後再把一塊車打芝士放在上面,再由負責出品的另一個廚師加入煙肉、番茄、青瓜、洋蔥、醬料等。味道- Burger:牛肉煎得剛好不會太生或太老,吃得到黑椒和海鹽的味道,肉汁和醬汁一邊吃一邊流出來,麵包亦很鬆軟,但我那個burger好像沒有放洋蔥,番茄亦放得比較少。- Fries:是thick cut的,炸得很香,但隔油時間不夠

味道
- Burger:牛肉煎得剛好不會太生或太老,吃得到黑椒和海鹽的味道,肉汁和醬汁一邊吃一邊流出來,麵包亦很鬆軟,但我那個burger好像沒有放洋蔥,番茄亦放得比較少。
- Fries:是thick cut的,炸得很香,但隔油時間不夠長,吃下去比較油和不夠脆。

服務
餐廳是半自助形式,自行找座位和到收銀處落單,拿收據等侍應叫號碼,之後侍應會把食物送過來。侍應全是年青人,有活力有效率。

環境
我們比正常晚餐時間早到,所以立刻找到座位,之後不斷有顧客,造成很多人在收銀處外面排隊點單和等食物,比較擠迫。餐廳全是高檯,約有25個座位,另外外面有約9個企位,是快餐店吃完然後走的格局。

總結
上面說了正常餐牌只供應一款burger,那就是說有隱藏餐牌,顧客需要掃描在餐牌上的QR code連上它們網站才能看到隱藏餐牌,還有另外四款burger而其中一個是素食的。
由於burger於出品前在餐廳裡in-house進行牛肉熟成處理、免治、調味和煎煮程序,故能保持牛肉的新鮮度,加上它只專門做burger,集中做一件事情的話質素和味道都能保持穩定,值得一試!

On the first visit, I only got the duck fat fries because I did not know about the secret menu.After I found out about the secret menu, I discovered a vegetarian burger called What food eats.This veggie burger has a delicious breaded and fried patty made with Chickpeas, white beans, kidney beans, zucchini, peppers, carrots, onion, garlic and crushed, puréed potato.It then has oyster mushrooms, tomato slices, lettuce and pan-fried halloumi slapped on.$120 is quite pricey for a Vegetarian burger b

After I found out about the secret menu, I discovered a vegetarian burger called What food eats.

The veggie burger was just awesome because it was filling as well as delicious especially with the Halloumi cheese and oyster mushrooms.
Basically it had the delicious key elements a burger should have which are cheese and mushrooms and a delicous patty.

店鋪位於灣仔杜蘭街,有小小難搵。鋪頭細細,但入面坐滿曬人。呢度個burger真係冇得頂,好足料,厚到根本冇可能一啖咬到!包面好脆,芝士半溶,塊牛肉幾林,牛肉味好香濃,肉汁豐富,一路食一路漏汁!呢個真係值得推介!另外薯條亦都炸得很脆很香口,可以一試。跟住嗌左杯黑牛,值得一提嘅係佢面頭雪糕係用dreyers。不過店舖很熱,我地食到一路食一路流曬汗!

I have seen so many tantalizing pics of The Butcher's Club burgers on Instagram, and all these whispers of "secret menu", I was literally busting with excitement to be there.We went there extra extra early, cos we know this place gets full after work hours (that's about 6pmish if u r really really really lucky). We went there extra extra early, cos we know this place gets full after work hours (that's about 6pmish if u r really really really lucky). Iwe got there at about 5:15pm and the place is already half full (there must be some really really super lucky office workers in Wan Chai!
For some reason from the Instagram pictures we expected a place where we can have nice comfy seat and have an actual conversation and chillax a bit, but we realized this is like a fast food joint with high chairs and narrow tables (aka not pregnant lady friendly)... So much for our date night!

I was looking high and low for a menu of sorts, but the so called menu has only got like 2 things: burger and duck fat fries plus an assortment of drinks. Erm. So I asked for the secret menu. Apparently I need to scan the QR code. Wtf?! I don't even have a QR reader! Or else it will just have to be the normal burger, if you don't know the actual secret menu :/. Bloody hell. I tried to order from my memory of what I saw on Instagram but none of those are on the secret menu anymore. Grrrrr...
So we ordered two normal burgers (sigh) HKD$100 each, duck fat fries HKD$20 to share and two cans of drinks. Unfortunately my drink was not even cold, but they kindly gave me ice in a cup to go with it

The burgers and fries came not long after. Let's talk about the burger first. I quite like it and felt that it was better than Huxtaburger in Melbourne (not Rockwell and Sons though). But for twice the price you would bloody hope so! Was it twice as good? No I won't say it is. The patty was juicy and had a fantastic chargrilled flavour, I love the giant piece of melted cheese and fresh tomatoes and slices of gherkin with a nice slice of bacon.
Hubby wasn't as impressed though and felt Huxtaburger was better and said burgers in Macdonald's in Australia is better. He also grumbled about the bloody QR code just to see the bloody menu and said at least Huxtaburger don't need that.
The fries we both agree was a disappointment. It was lukewarm and not very flavoursome. We certainly can't taste the yummy duck fat flavours and it was a bit on the small side.
I reckon if you are really really really missing western food, or you didn't know better, you would have been impressed by it, but for us who had something better to compare to, The Butcher's Club certainly ain't worth it

Yes, it is very hard to get a seat in this hip new burger joint.Is it worth it? Hell yes!I never thought I'd say this, because traditionally I hate burgers. (I was forced to eat them as a child and have never quite figured out why people are so mad about them... until now!)The Butchers Club burgers are ground before your very eyes. I never thought I'd say this, because traditionally I hate burgers. (I was forced to eat them as a child and have never quite figured out why people are so mad about them... until now!)
The Butchers Club burgers are ground before your very eyes. Good air-dried black angus beef.... The buns are good and hold up well to the heavy patty and there's the usual tomato lettuce and - extremely yummy crispy - bacon and a special sauce that'll have you screaming for more. And the silly canned "Blue Ribbon" beer goes really well with it, too.

There really isn't much to say about this other than that to me, it's the best damn burger I have ever had. And I have been twice now and it's been just as good the second time round.
Can't wait to be back. Keep them coming!

Came by ard 10 last night trying to see what all the hype is about.  I ordered their secret menu double happiness.  and while at the counter i see a lot of very unhygenic things going on.  they don't use gloves, they keep talking all over the burger while preparing it and also it's very unprofessional..just lots of messing around in the kitchen.  theres already a long wait for their burgers but the staff were wrestling and just joking around with each other.  i guess its been spoiled with having

Came by ard 10 last night trying to see what all the hype is about.  I ordered their secret menu double happiness.  and while at the counter i see a lot of very unhygenic things going on.  they don't use gloves, they keep talking all over the burger while preparing it and also it's very unprofessional..just lots of messing around in the kitchen.  theres already a long wait for their burgers but the staff were wrestling and just joking around with each other.  i guess its been spoiled with having lines all day.  they dont care how long you wait.  anyways their product was not as good as advertised.  their patties were overcooked which made it dry and it was pretty bland..the sauce was ok  .not surprise at all with the way they handle their orders.  the rest was ok...i mean when u grill cheese u cant really go wrong.  I think at the price that they are charging there are much better options.  Burger Room, Caliburger, Eight Grand, and even Gourmet Burger Union have much better burgers than these experts.
