第一兩次試太子大廈一樓的 Cova 咖啡, 已是幾年前的事. 須知當時的我, 跟本連掂都還未掂過部 Espresso Machine, 當然不明白怎去冲, 或甚至識欣賞一杯真正好的 Espresso Based Coffee. 但那時的我, 早老就覺得唔多妥似的. 為何這間的咖啡, 好像不是那麼好貨式的! 那時的判斷是, COVA COFFEE 不太好喝啊... (但後來發現這 Conclusion 不是太正確!
( 幾年過後, 就算不一定是學師滿成, 也起碼識得分辦出什麼才是好飲或只是一般! 幾年後的再度來臨及經前後測試, 終於可以肯定地 convince 到自己, 這 Cova 兩樣都不是!
不幸地, 我確實了這間 Cova Branch 的水準, 簡直可以說是混水摸魚, 欺騙客人- 是差到離晒大譜!


The difference between this COVA compared to say the Admiralty COVA outlet: (http://www.openrice.com/restaurant/commentdetail.htm?commentid=2048848) - can be attributed purely to a matter of Coffee Barista Training Skills and their understanding of how to fully exploit their equipment, considering nearly most variables remain constant. A similar story can be told of say Le Gouter Bernardaud, where the Elements oulet is sometimes a few notches up on the averagingly very low standards set in the 2 x IFC outlets, particularly the upstairs outlet. Or comparing Barista Lily @ Coffee Assembly to different staff members @ Cafe Corridor sometimes, or say experiencing the different baristas outputs at my previously highly-rated FUEL, or even GVSTO or Cafe Suzuki, COCO @ Mira, Delta or Caffe Kenon, etc. It can vary to the point of becoming a matter of night & day.

As such, all I could try my best to convince you is that, you might find it completely unbelievable in this minute possibility - but at my current level of understanding of coffees, I finally realised it could prove unfair to write-off certain coffee shops or their coffee blends just because you've tried them once or twice at certain outlets! A coffee and its machine is such highly sensitive pieces of equipment, even I can still be awestruck at the vast differences, which the end skills of the Coffee Maker can contribute to your final produced cup. My estimate is that it could well fluctuate in the vicinity of upto 800-1,000% easily, despite all other things remaining a constant. If you think I'm exaggerating and choose not to believe in me, I'm completely fine with that. Other alternatives might include enrolling yourself in a proper coffee training course or if you want to take a short-cut, pls don't hesistate to engage in a long chat with Coco Espresso's Johnson and ask him to demonstrate and make to you, a really bad, an average, an above average and then a really good coffee for your own experience's sake - you may just finally become surprised at the thousands of levels of adjustments possible and the levels of skills required, that are all controlled by the HUMAN FACTOR alone, much like needing to buy the exact numbers inorder to win the 1st Lotto Prize. And even Johnson can't perfect either, you see, despite his full understanding of his machinery. You can imagine how other poorly trained Barista will perform.



My Take-Out coffee this day was acrid, carrying a bitter end-note and overly thin at the base espresso, reminding me of ashy cigarette water. It smelt of burntness as well. The puck is way under-dosed as usual, the desired flavours having no chance to be extracted under the right contact and pressure due to a lack of grinded beans. The Milk frothing part was quite soapy but acceptable, although failed in being overheated... This isn't the worst coffee I have tried by far - CWB's Agnes b. Cafe, Taste Coffee in Northpoint & Mozzarella Cheese Bar or perhaps a myriad of other experiences can fill the top steps of the podium
, these managing to even out-perform a rather bad Pacific Coffee I had another night!

Having said that, the one in this COVA falls within range of being one of the Top 10 worst coffees I've had the displeasure of drinking - surely, this is a monumental mistake on the part of COVA and management. Yet as incredulous as it seems, people queue up for coffees here constantly just as they queue up at Starbucks, sipping coffees from their green stirrers thinking they're straws somehow.
Don't write off COVA yet, I've shown u its possibly to buy decent ones in other outlets. But by all means - please feel free to write off this shop's baristas and coffees, it really is that bad and below standards! Nothing personal, mind you. Purely the management's rather than the staff's fault.

女友的生日,當然要買蛋糕跟它慶祝。這個Tiramisu,也是例牌三層的,面頭是厚厚的可可粉,中間有香甜幼滑的芝士層,芝士味挺突出的,而餅底是被咖啡酒浸得淋淋的手指餅,濕度夠,不會太乾,一口吃下,很香很好吃,咖啡酒的香味,配合香滑的芝士,然後再隱滲一點可可的味道,整體的感覺是妙極的,非常對版。這個一磅裝的Tiramisu,若要兩個人吃光它,也真的會很飽呢,所以最後,也是剩下一半留待明天吃早餐。

之前我曾說過COVA既CAKE唔好食, 不過今天佢既黑森林旦糕令我改觀. 1.cake上朱古力cream/cake的周邊 部份:真的有好濃既朱古力味, 而且係唔會太甜2. fresh cream白色部份: 有一種好香既cream味.3. cherry係意大利貨, 朋友說好食, 我就食唔出有咩唔同, 不過就真係幾大粒.4. cake 內的cherry有酒香及都真係啖啖都有cherry肉真係好好食. 最緊要唔多cream及唔加jello向入面.店經理說,cova只會在每年既6-8月才有黑森林旦糕提供, 所以中意食黑森林旦糕既朋友可以買來試試 (price : hkd330/1lb <-比其他個d cake係貴小小, 不過都真係值架).

I dun have a photo for the pretty cake as I was busy working on a project while a lovely colleague has bought some refreshments from Cova. I chose the lemon chiffon cake and it worked on me!Hope I can describe how the cake looked ... It was a squared layered chiffon cake with several layers, topped with few dry lemon pieces. Hope I can describe how the cake looked ... It was a squared layered chiffon cake with several layers, topped with few dry lemon pieces.

And going back to the piece, the chiffon was soft and spongy, as well as having a clear layering of chiffon cake and cream. The lemon flavor was not too strong *from the point of view of big lemon fan, me* and the lemon essence was just in my every bite. For sure, the topped lemon decoration was edible and the sour flavor came together. I think it was more suitable for soft lemon fans instead. Yet the refreshing lemon slice did cheer me up.

Actually I had the mango dome cake from my birthday which was as well in chiffon cake. Maybe the lemon is a stronger flavor to match against the creamy sponge compare to mango.

Anywaz, I would try on the coffee soon as the strong aroma keeps around the area ...

呵呵,好同事代買 Cova 的雪糕跟咖啡做午後甜品!Gelato 真係好味到飛起!早知要一球啦,因為二球份量對一個人黎講實在太太多了! 滿足過頭了!見前人讚開心果好味,我也要了開心果味,可惜無 peach 味,所以選了朱古力。朱古力味道係特特特濃個種!開心果味,仲好味,直情好似開心果翻生!開心果味 gelato 既味道仲濃過真係食開心果!事實上 $48 / 二球 的價錢以呢個份量同水準,我覺得 cova 係抵過 haagen dazs 囉。因為好開心咁食完雪糕既關係,連帶佢既 skim milk latte 都覺得好香滑 ,$25 佢既 size 等於一般大家樂的奶菜杯咁上下,一定無 star bucks 個 d 咁大杯,不過勝在好味過 star bucks。繼續滿足。不過攪到佢有兩個 packing 好似有 d 唔環保添

在附近辦點事,完事立即過來吃雪糕。要rapsberry,酸酸甜甜一貫的開胃引人,冇得頂!!姐姐的service亦好,雖然是公事式笑容,但本著好過冇的心態,還是收貨。即使價錢偏高,也從沒放棄過cova這心頭好。

Rushed for exchanging the pants bought on Sunday, 'cos the zipper wasnt function properly. So didnt have time to have proper lunch. Too bad. So while hurrily returning to office, had an idea of buying some butter cake for eating in office as lunch. So bought two pieces of butter cake. One was with walnut and another one, when I bought it, i thought it was banana cake, but after eating it. Dont know what it was. Both were not as tasty as I thought. The one made by Agnes b was better. Too

Really cant resist the temptation. Must have its gelato! Tried gelato in Italy, then love it immediately. Also saw the Cova head shop in Milan in Italy. Oh it looks the same as the shops in HK.I tried its hazelnut and passionfruit favours this time. The hazelnut was really nice. It was smooth and rich favour. Really a must try for hazelnut lovers. For passionfruit, it was a bit sour (maybe cos just had some sweeties (ie the hazelnut) so making me feeling sour. Anyway, both were good and

I tried its hazelnut and passionfruit favours this time. The hazelnut was really nice. It was smooth and rich favour. Really a must try for hazelnut lovers. For passionfruit, it was a bit sour (maybe cos just had some sweeties (ie the hazelnut) so making me feeling sour. Anyway, both were good and in good quality.

經過呢度見到呢個 mango tart, 好靚,所以買個黎試下啦.Okay 喎,個tart 底d牛油味幾濃,幾香脆.上面有點點custard, 同埋粒粒靚芒果球,very nice, 芒果球香甜,美味,真係so good!呢度dcoffee 都好多人買的.下次試埋先!

昨日要買蛋糕同男友慶祝生日, 本打算去龍島買個細細的朱古力蛋糕, 我記得兩年前買過一個一磅的蛋糕大約$80, 但昨天去到時, 發現要成$138一個, 仲要唔多吸引, 所以立即走去太子大廈cova買好過。去到有4-5個一磅蛋糕選擇, 小姐話呢0的係最受歡迎的選擇, 正當我猶豫緊要生果蛋糕定tiramisu時, 小姐建議我選擇生果蛋糕, 因為個樣吸引0的。到食的時候, 唔...真係好好味呢, 唔係太漏, 好好味。下次有人生日時, 等我走去再買先

又食雪糕,我最鍾意冬天食雪糕,特別係GALETO,因為冇咁易溶可以食耐D!行過呢度,忍唔住買杯過下口癮,因為雪糕我只係食HAAGEN DAZS/COVA,難得經過梗係要杯啦!又係要PASSION FRUIT,我最鍾意既味,一樣咁軟咁香咁滑,VERY GOOD!50蚊埋單都抵

熱情果雪芭:非常極之好味非試不可!忌廉朱古力(strac....xxx):又係一定要試黑朱古力碎好正...........>3<老實說這裡的GELATO真是頂級的不但香軟細滑,而且份量夠多,感覺很抵可惜服務差到無輪完全估唔到吧....COVA wor!!但係一而再再而三西餅及雪糕負責姐姐仔的服務態度真是令我很失望其實只是她一個而已其他WAITERS都很有禮貌的但這位姐姐每次都很趕忙似的不論是有沒有其他客就算是有也不應對任何客人好像澳洲牛奶公司的態度和速度吧!仲要徒手極速"執"D toppings之後收$$omg................這是cova嗎????!還是我看錯店名???????!吃你一杯雪糕$48對,是比起你的座上客CHEAP但過門都是客lor如果唔係d雪糕咁好食我真的不會再光顧唉..........

老實說這裡的GELATO真是頂級的
不但香軟細滑,而且份量夠多,感覺很抵
可惜服務差到無輪
完全估唔到吧....COVA wor!!
但係一而再再而三
西餅及雪糕負責姐姐仔的服務態度真是令我很失望
其實只是她一個而已
其他WAITERS都很有禮貌的
但這位姐姐每次都很趕忙似的
不論是有沒有其他客
就算是有也不應對任何客人好像澳洲牛奶公司的態度和速度吧!
仲要徒手極速"執"D toppings之後收$$
