Jook-sing noodles is a kind of egg noodles that requires time to master. The deep fried dace fish ball is somewhat disappointing, it is semi-hollow, while is served with sweet and chili sauce instead of clam sauce, the more authentic choice.

The Chinese egg noodle, jook-sing mien, has a light alkaline flavor, topped with great amount of shrimp roe to give the best flavor. A soup on the side is given in case it is too dry.
