早前去過都靈,想一試香港的北義大利菜是否也有當地水準,專程到此午饍。前菜Mergozzo trout ‘Orange Bar’:鱒魚據稱是慢煮的,食落的確是半熟,保持了肉質鮮嫩,但魚的鮮味被酸性調味料蓋過,違和;洋藉侍應話,因為魚質較韌,切的時候要因應每朵小花的距離一刀過,不要拖割,仲以為有什麼特別,原來係gimmick,而小花只是增加色彩,毫無味道。招牌菜Homemade tagliolini, ‘Au Koque’ Carbonara:幼身麵條,份量不多也不少,用gin酒調味,即時弄破溜心蛋,混和意粉濃汁,出奇地配合;有一片脆口豬肉乾在碟頂,麵中加入了牛肉粒,增加咬口。主菜Orbetello seabass, baby carrots, ‘thunder’ almond cream:魚肉唔腥,但亦無味道可言,也無肉汁,是外國入口貨的通病,幸好煮功到家,魚身弄得幼嬾;義大利黑松露夠香,驚喜位是配菜好新鮮,並且充滿甜味,完全搶咗魚肉的地位。甜品是朱古力布甸,有強烈可可味,配合杏仁汁,一絶。額外叫了一杯illy expresso,正宗;可惜附上的杏仁餅解凍不足,中心位置仍冷,哀收尾。相信廚師專注煮嘢,未必留意這些細節位。…Read More

酒店食肆,要求較高是常識吧。因為大堂已經滿了,今天被安排坐進房間,只得幾十呎面積,放了4張枱,共12人迫在裡面,加上樓底低,客人的交談聲非常嘈吵,仲衰過普通茶樓。食物方面,點心套餐可選8款:菜胆冬菇竹笙湯: 2件竹笙,口感爽脆,1片冬菇夠厚,連2條白菜胆,湯底有咸香味蝦餃:皮厚,蝦肉味道死實,好搶喉,感覺是味精太多蟹子帶子燒賣:毫無鮮味,同樣地,感覺到味精好重糙米珍珠雞:有驚喜,瑤柱同糙米好夾,加入了糯米增強煙韌,很出色脆牛肉腸粉:其實是炸兩,只係加了少許免治牛肉吧京葱三文魚春卷:炸得鬆脆,不過食唔出蔥味和三文魚味時菜牛肉球:正常味道,只係用幾條莧菜托底叉燒飽:正常,但size偏細甜品是杏仁茶及奶黃春卷,前者太甜,後者只係普通這等質素,加上每款點心每人只得一小件,春卷上枱時仲要放斜咗位,服務態度不夠專業。簡直做不到5星酒店應有的水準。$248粗劣套餐,再加每位$28茶錢,太貴了。…Read More

疫情開始緩和,假期日多了一家大小外出,午飯時段有擠擁的情況出現,所以今天選了鬧市的綠州。Table之間是一向的寛闊,而bar枱就較為迫,因訂了枱,我們二人可以坐進四人枱,不受擾地進食。各自點了一份餐:鹿兒島和牛定食及鰻魚高菜免治雞肉飯。每個餐都包括前菜、沙律、湯、甜品及飲品,落單後食物好快到:粟米沙律份量足,味道清甜,醬料完全沒有蓋過蔬菜的天然味;前菜有兩片冬菇,厚身而腍口,放上幾塊鰹魚片吊味;湯味咸淡適中,無豆腐粒或魚旦,但加入了雞肉粒,立時升呢鰻魚飯超快上枱,連沙律都未食完,更遑論前菜及湯,好懷疑條魚已經燒左幾耐😱,所以佢嘅溫度只是微熱,幸好鰻魚好大條、夠肥美、有點彈牙、並不乾柴,高菜是分開上,似kimchi,即係醃白菜切片,加入辣味在小碟內,免治雞粒是混進珍珠米飯內,增加咬口,但又不算什麼特別,其實可以慳返幾十元揀鰻魚溫泉蛋那個餐。鹿兒島和牛跟白飯,牛肉似是用鑊烤,而不是用炭火燒,因此做到外脆內軟、生熟配撘無間的效果,整體質素泊得住日本境內的出品,敗筆是上枱時,牛肉只是微温,熱力保持不足,失去提供味覺享受,油脂也不能在口腔裏盪漾。甜品是一丁塊檸檬芝士餅,配上熱咖啡,一絶。…Read More
