日本風味,黑麵有特色

今次已經是第二次來這個場了,自上次吃了一幸堂的頂級豚骨拉麵後,今天想試試新口味,於是就選了東京忍者。黑麵湯和麵的配搭是一絕,中間加上蔥絲使得味道調較得剛剛好,也把整個麵的油香帶了出來。 黑麵湯重點應不是胡椒,而是醬油加上其他配料的襯托,能夠有效地把味道的層次感帶出來,幾種味道在口中交煎,這個黑麵算是值回票價了。順帶一提,這個湯一點也不辣,麵更不可能辣吧,我個人連譚仔十小辣也頂不順,但也感不到一點「辣到食唔到」嘅感覺。也順帶一提,這裡的「肥叉」也是該店特色之一,肥肉和麵條一起化掉的感覺,才是重點啊。說起來,現在也彷彿感到了一陣陣的膏香。當然,在「濃豚骨廋叉麵」當道的香港,我相信這個配搭也走不了多遠,但也未至於一文不值嘅。今天還讓志偉拿着我的黑麵…Read More

大失所望
利強記北角雞蛋仔

呢間店日日都有好多人捧場,昨日咁o岩行過就諗住試一試。一望望店內格局,店外十多個客,只由店內兩位女工主理,由收錢/整雞蛋仔/整夾餅都差不多由一人完成。心想老闆真係識搵到盡。整雞蛋仔過程差唔多倒完漿就唔理,八分鐘後開爐攞餅就算,漿料份量、平均度也没有細心調控,突然覺得呢間店應該好極有限。隔離街賣九蚊一底,少少貴,呢間貴倍半,13蚊底,好貴。 心想,你賣咁貴都有人買,姑且試一試,睇下你有咩獨門秘方。焗完,拿上手,先食邊邊的蛋仔,真的如我所料,料落得不平均,没有傳媒所吹捧的半漿狀態,得個殼。:(食多幾粒,食中間,電爐火力過猛,外層硬崩崩之餘,刮口,有燶味,應該係過份僵守「8分鐘守則」(該店標榜即叫即整,每個焗8分鐘)的惡果。所以做生意過份擴張,唔諗細節,真係會造壞個名。食中間的蛋仔,因為電爐火力過猛,也食不出半漿狀態,我開始懷念隔離街的9蚊底雞蛋仔。最後,我唔明點解個袋要通「lon」,因為熱氣散得好快,搞到個雞蛋仔好快凍,食到下半部,整個蛋仔已經凍冰了。連鎖式擴張係好事,不過我相信老闆當初都是靠「心機和品質」而出名的。只是過份擴張,唔諗細節,忽略了當初的「心機和品質」,捨本逐末,只會令生意漸漸走上未路。仲要賣成13蚊一底,又貴又唔抵。…Read More

昨天行開元朗廣場來這裡用饍,店面不錯,一去到先坐低,叫野我 : 一個咖哩柞雞定食,一個豬頸肉拉麵,一個炸軟殼蟹。唔該。侍應 : OK,但係要等二十分鐘喎。我 : ???????????原來佢係話咖哩柞雞定食要等二十分鐘,但我就好唔明白,有咩要等呢? 飯又一早煲好、咖喱又一早煮好, d 雞你炸二十分鐘乜都燶啦~ 一個咁簡單嘅餸,做乜要煮咁耐?豬頸肉拉麵:之後先來豬頸肉拉麵,碗大份量少,我強烈建議做生意想慳就唔好用咁大個碗,個匙更一挖就差唔多冇左1/3碗,烏冬數埋十條都唔夠,真係好寒酸。湯底配料OK,但食完好似冇食過咁嘅款炸軟殼蟹之後到軟殼蟹,五件粉狀物體登場,一咬,油味太重粉太多,蟹雪得太耐冇哂蟹味。中伏。太肚餓下都要焗食,但很失望。咖哩柞雞定食二十分鐘後,定食登場。吓? 一個碟頭飯加一個麵屎湯叫定食? 仲要個麵屎湯我去吉之島買包粉就沖到出黎。唔埋,照食,雞切到好細,夾硬數有五件,但絕對唔夠。飯唔用珍珠米,咖喱汁唔夠香,好酸,佢收得呢個價,走上去上面銀咖喱買碟咖喱蛋包飯俾我食都冇咁谷氣。食得仲差過茶記,火速埋單落去食麥仔仲好過佢,收120蚊連加一,可以買三個麥仔有找,肉痛。…Read More
