同朋友都好鍾意周圍去cafe食嘢,呢間在618的cafe的確係幾有水準的cafe!當日和朋友點了個pizza同自家製龍蝦沙律牛角酥·薯格·雜果沙律,兩款賣相同味道都好好!簡單的龍蝦包一點也不馬虎,上面以花花deco、魚子醬點綴,而龍蝦包內的小龍蝦頗多且彈口新鮮,還加了粒粒蟹子令口感更好,真係非常有心思。另外值得讚的是薯格香脆得來不會油膩,而且味道不會太鹹,非常難得😋真的是非常有心思的餐廳,而且服務幾好,價錢合理,值得再來!…Read More

瘋狂問師傅關於omakase問題不厭其煩嘅補習社一樣

最近因為疫情大家都無得去旅行,又有消費券的刺激,唔少唔捨得比一千幾百食OMAKASE的朋友都加入了關注組,一探簡約裝修的日式吧枱,枱下埋伏了多少鮮味技術正等大家依潮流如貫入場品嚐。壽司櫻 Sushi Sakura以刺身、壽司為主打,全店時尚日式風格為主。望着年輕的廚師發辦進行互動,用肉眼觀看整個料理流程,簡單直接又純粹。位於老銅正中心,價格算合理,印像深刻反倒是師承MARCO POLO酒店西村日本料理Nishimura Restaurant師傅,束著一頭利索短髮,由6點講到10點,不斷講解壽司和酒肴時,筆者我懂日文,師傅中間考我日文又講下日本文化,由佢學師的過程到傾食omakase材料歷史,整晚除了肚皮填滿了美味的壽司和魚生,更多旳是填滿了香港本地師傅對omakase的尊重和執著。雖然忘記了問師傅的名字,全程太好傾,反倒尷尬再問師傅貴姓!小妹贈言兩句,師傅你對食材和架步真係好有職人執著,好難响香港搵食!不過,這個心態做出品,對食客老饕來講係好事of course,但係你好難SUSTAIn回本讓我們再去找你覓食的!不過如果拍拖嚟怕悶親無乜話題食三個鍾,揀呢間都幾好,叫做入門級別,師傅毫不吝嗇教你食omakase,可以學完一套基本理論再去食鮨.齋藤 HARE 天鮨 ARAKI,一步一步登頂。講食魚生前,想講一講呢間omakase的舍利,我已經唔想再提係鮨中本食到熱飯既回憶殺。壽司櫻 Sushi Sakura唔係用魚沼越光米,亦唔係用華X結既銀河女王白米,反而採用秋田小町米,師傅由選米、洗米到炊飯,氣溫、濕度、保存方法都會影響米粒的品質。師傅有刻意將米粒氧化速度減慢,令米粒更香更鮮。舍利しゃり溫度比室溫低少少,飯味酸度鹹度水份都適中。不過佢一個人,無助手,備料、上酒肴尚算流暢。不過失望是我個人喜歡偏酸的,師傅稱沒有赤醋的來貨,也作罷了。飯粒係比較分明,味道比較清淡,唔會有偏酸或者偏甜,我自己個人比較鍾意稍為微溫嘅舍利しゃり。夕食套餐分別係「Omakase – Kin」每位$1480及「Omakase Gin」每位$1280。是晚選了Omakase - Kin, 包括先付3種盛、刺身6種盛、和食料理2款、壽司6貫、汁物、果物。(雖然最後朋友生日師傅私人請我地食多件壽司)夕食套餐-先付3種盛擺盤十分打卡able,木托盤放了松葉枝,冷色為主,由左至右,包括蟹肉豆付,磯煮鮑魚綴三文魚籽及金箔冷盛蕃茄。三款都各有千秋,集鮮香味一身,我最鍾意食磯煮鮑魚綴三文魚籽,雙重鮮美不會遮蓋,反而出奇地令鮮香double up,鮑魚彈牙入味不俗。刺身6種盛先上一件胖嘟嘟的日本岩手縣真蠔, 粒貝(黑椒),平貝(岩鹽蔥火炙),深海池魚 (海藻),牡丹蝦(蝦頭膏伴麵豉醬及菊花),小獅魚(紫蘇花)真蠔配上正氣既紫蘇花,女士多食無妨,可以中和生冷食物對肚漲既感覺!肉質肥美鮮甜,口感Creamy,金屬味和海水味不重,配淡淡的醋啫喱更能突顥它的鮮甜 夏天向來都是吃超爽貝類的好季節,今次去選用粒貝加少少黑椒調味,清爽!再來平貝加咗岩鹽加咗蔥, 平貝同一般貝類唔同嘅佢係屬於日本海產裏面體積比較大嘅師傅,是用作火炙,其實唔係想逼出佢嘅油脂,反而係想將貝類帶有少少燒魷魚嗰種焦香!喺稍後會食一啲比較油分重既魚之前,食呢個比較香口嘅前奏,呢個安排都係恰當嘅。深海池魚,味道比較重,食落喉嚨係舒服嘅。牡丹蝦係我自己最鍾意食嘅私心推介!因為蝦肉鮮嫩,師傅亦都用咗牡丹蝦嘅蝦頭裏面嘅蝦膏,另外製作左一啲麵豉醬去到撈勻,所以成個配搭就會係幾有牡丹蝦,鮮嫩肉的爽脆,肉質亦都帶有蝦膏嗰種濃郁,齒頰回味無窮嘅效果。食咗之後唔好咁快飲茶 等佢快啲回甘!鰤魚,其實即是油甘魚之類,我自己本身唔係咁鍾意食呢隻魚,感覺是細嫩甘甜,不錯。刺身完,先暖胃,來一客舞茸菇清湯,菇味輕柔,魚鮮湯清。和食料理兩款1.燒波士頓龍蝦球,炸禾稻米花,口感像爆谷,富米清香,有驚喜!直程有想叫師傅另外再炸米花給我們吃,真的十分好味!好有驚喜的伴葉菜,叫人難忘! 龍蝦球啖啖肉,拉油以鎖住肉汁同去腥,咀嚼了彈牙的 龍蝦,好滿足的感覺!2.北海道帆立貝三文魚籽海膽汁:香煎肥美的帆立貝,又香口又厚肉,海道海膽質感柔軟,入口時海水味道很重,入口即溶,配上醃製過的鮮味三文魚籽,更襯托出美味,壽司6貫包括真鯛,手釣池魚,金目鯛,根室馬糞海膽,關西鯖魚,大拖羅,及額外追加的乒乓波三文魚子(柚子皮)真鯛係踏入5月份正值的鯛魚季節,OMAKASE就是不時不食。鯛魚是傳統日本人每逢喜慶不可或缺的料理魚種,外皮鮮豔,肉質細緻,鮮甜美味。手釣池魚,來自北九州,一般池魚更細條更矜貴,豐厚油脂,入口滑,魚味重。金目鯛,體色係淡淡嘅櫻花粉紅色,嬌嫩柔美肉質,油分甘香。根室馬糞海膽,師傅不吝嗇放入手中,打卡一流之外,海膽放入口中隨即化開,味道甘香濃郁,回味無窮!呢個時候真係好想配清酒,但是要揸車,可惜!關西鯖魚,是類似昆布箱押的口味,灰綠色有油光,身體緊實且飽滿,質地很細膩。鹽味鮮明。愛吃拖羅刺身的人,必定最愛中拖羅!但今次師傅就有驚喜,用大拖羅來炮製壽司!大拖羅不負所望,油香味道濃,配合舍利的酸度,整件壽司增添層次。乒乓波三文魚子(柚子皮)三文魚子壽司上一粒粒橙紅的三文魚子,師傅指出要挑選最彈牙且無添加的三文魚子,秘密地放了秘方,所以三文魚子可以好似乒乓波咁彈下彈下,仲即時示範了!好神奇!師傅一點也沒有誇張,魚子確是飽滿彈牙,加上柚子皮的加持,令這件追加之作提升了不少!一輪生冷好滋味過後,待者送上一碗高湯,聽說這碗湯用掉了五十餘斤鮮魚骨熬製,難怪魚香撲鼻。甜品 靜岡蜜瓜蜜瓜瓜肉爆汁,軟滑如蜜, 女士限定的一件熊仔威化紅豆餅,可愛又都幾好食!糾結去食咗蜜瓜先好食。過紅豆餅不過我覺得其實淨係食蜜瓜都夠如果唔係鍾意食太甜嘅話可以要師傅唔好俾紅豆熊仔餅你其實係一個空心嘅威化純粹係啲紅豆餡俾阿偏甜係我自己好鍾意食紅豆餡十勝紅豆餡好甜嘅紅都係我自己好鍾意再睇返自己個人口味 熊仔餅是女士限定才有的,入面是甜糯的十勝紅豆餡。回想喺整個製作omakase嘅過程,我都見到師傅一板一眼,一個工序,每一個步驟,佢都好清楚自己要做咩。你唔會感到慌亂,呢一個,就係食廚師發板,我自己好鍾意睇師傅去工作嘅態度。呢一種日本職人有條不紊嘅工作次序大大增添左整個用餐嘅感覺 因為睇到佢認真用心去預備食物其實成個過程就好似製造緊一件藝術品,好似人哋玩陶藝喺度拉坯一樣。這個價錢下,沒有用大量炙燒遮蔽技術或魚材質量,初入門的朋友,可以一試。…Read More
