今天叫了一個砂鍋西施豆腐,紙張菜單和網上菜單 都寫材料有嫩豆腐,青豆,蝦仁,韭黃。 上枱之後,發覺內裏有些深色物體,看清楚及嘗試之後,發個竟然是豬油渣。我們問服務員的時候,他的表情 告訴我,這個材料是一直都在這味餸的!豬油渣,對某些人來講,可以是美食,但對其他人, 不論從健康或者宗教角度,都是魔鬼。如果一個看來健康的餸有豬油渣,似乎食肆應該有責任寫清楚,等顧客可以作出正確選擇。更憂心的事, 不只有多少其他餸,內藏有豬油渣而未有寫清楚。。。…Read More

工作程序可以改善

這間綠茶餐廳已經光顧了幾次, 都頗為滿意。上幾次坐的位置看到用來準備上菜的枱,也看見服務員準備食物時都很有條理,例如都會帶上新手套才剪燒雞。但今天坐的位置向另外一面,就見到些需要改善的地方。圖中通道旁位置本來有一架裝載已經洗好的碗碟車。食飯途中架車被推開了,清潔工就把已經洗好的碗碟放在地上算數,中間大約有十分鐘,很多服務員行過都沒有理會。在我舉機拍攝之後,才有人取走,相信是放回碗碟車上。之後,碗碟車被推回這個位置。但我又開始見到有人將用過的碗碟放在這車上最上格,而不是放到另一邊有架用來裝載食過碗碟的車。 似乎有些衛生流程都要留意下。另外,今次點了白菜仔,但賣相沒有以前好(不太新鮮),而且是苦的。 希望可以留意一下。…Read More

今天叫了一個甜酸陳醋燴肉排飯,一盒飯一盒餸。 本身不過不失, 只係比想像中油咗啲, 一盒餸入面有排骨同菠蘿片。但係一打開之後,個心就沉咗一陣 ,因為見到一塊都幾大嘅膠袋片, 睇落應該係食材膠袋嚟,因為膠袋要剪開先倒到嘢出嚟,剪完之後就跌咗落啲食材嗰。 我個心諗,今日係膠袋片,聽日唔知係乜嘢。呢啲情況,只可以話,要靠每一位準備食材同食物嘅員工,都要以心比心做嘢, 做嘢唔好太求其, 唔好畀人哋食一啲你自己唔想食到嘅嘢。。。…Read More

這裡服務員態度很好,但可能訓練及經驗不足。 例如我們不小心倒瀉水,他們會幫忙抹抬,但不懂把 濕嘅布由枱邊拎走,而係把濕布由食物上方拎走,由得啲濕布水滴返喺食物上面。。。我們三人訂了枱,但可以比兩張唔同高度的細枱拼埋一齊畀我哋, 其中張摺枱勁輕 ,搞到我哋 一係跌筷子,一係倒瀉水, 最後連個碗都跌埋落地下。。。食物質素方面,以咁嘅接近大連鎖店價錢, 唔算合格。 以肉碎生菜包為例, 無論口感同味道,都唔似一個食過越南菜嘅人煑出來的,比較似茶餐廳味道。法包就係淋嘅,又係好似由一個從未食過越南法包的厨師做出來的。但係我見到呢間餐廳係非常之受有寵物嘅客人歡迎的。 永遠有主人同寵物喺度排隊, 走嘅時候聽到門口嗌:「兩個人,三隻寵物」入座。 相信有寵物嘅客人,如果可以同寵物一齊開心食飯,對食物要求唔會好似我哋咁高吧。…Read More

下午三點鐘去,叫了一個藍莓pancake。 食品質素就跟其他 Phi 一樣, 不過不失,沒問題。通常我下午茶都飲 coffee latte。 但今日實在太熱,所以叫了ice coffee latte 。朋友就叫了焦糖ice coffee latte。 兩杯來了之後就感到疑惑。雖然在網上查過 coffee latte 不一定有泡沫,但為什麼朋友的焦糖ice coffee latte 有泡沫,我的就沒有呢?我相信兩杯的分別就只是有沒有焦糖🤔。但以下兩點,就會令我不想再來。 如果話經營食肆, 吸引客源困難, 點解仲要取消下午茶餐 ?結帳時問過佢,話全線都取消了。另外就是叫了的 pancake,加了20蚊要多個雪糕 ,但估唔到係得一啖嗰種,性價比都相當低。…Read More

唉,啲人成日講要支持小店又話好有人情味。 但我一般嘅體驗係,呢啲摺埋嘅無論店舖或者食肆,都係冇招呼冇表情冇反應(有嘅就係身體語言叫你唔好煩我)。 當間店舖開始溶溶爛爛,衛生情況唔係咁光鮮時,招呼同人情味有時都可以救得返。 但如果你有得佢自生自滅,諗住成日做無回頭嘅遊客生意,可能唔係捱得好耐。。。講返食物,個包啲質地係好好嘅,外脆內軟。當然攞到返屋企已經凍曬。但係都唔係好明白點解唔畀個膠袋我( 前面買兩個自動有得畀膠袋,到我就唔畀,咁即係買得太少唔會有啦)。我其實係去之前都上網睇過,最初以為可以揀唔同嘅肉, 去到問佢嘅時候,佢就一輸嘴話唔知幾多種肉同埋啲菜都有( 其實聽唔到好清楚,但係唔敢再問)。 所以其實我而家食完都唔知有啲咩嘢用喺入面。。。…Read More

物有所值的韓燒

第一次試這間K11的韓燒,雖然是星期日,但中午仍有套餐。套餐有韓燒和韓式定食,兩者都會包前菜,紫菜飯和飲品。免費嘅飲品基本上就係罐裝汽水,加8蚊可以改為柚子茶或者蜜桃茶,加18蚊可以轉做特飲。目測店舖入面有四分一 地方是闢作韓燒的。星期日中午一時左右到達,基本上不用等位。入到舖頭之後,都尚見有空座。入門口嘅時候,有問我哋食韓燒定韓食。坐低咗喺韓燒區嘅時候都見有其他枱並非食韓燒的。我所認知嘅韓燒有兩種,就係有醃製同冇醃製。佢哋供應嘅中午套餐係冇醃製的。我就選擇了 148蚊全牛式套餐。有三種牛 : 牛腱 ,牛橫隔同霜降牛。根據menu 係每樣60 grams。我覺得冇醃製有個好處,在上枱嘅時候,質量同分量都可以一目了然。感覺上180 gams係應該比其他同一級價錢嘅燒烤份量係比較多少少嘅。前菜有四小碟,分別係芽菜,醃菜,酸蘿蔔同沙律醬蟹肉西蘭花。食完四碟之後問佢哋,原來係可以不斷添食的。雖然食過幾次韓燒,但係都係唔係好明白,點解有時係一塊鐵板,有時又係網燒。呢一間係基本上一塊鐵板嘅。牛肉旁邊有三舊類似牛油嘅物體 ,初時唔知道點煮,淨係放咗嚿牛喺塊鐵板上面燒,發現都好快熟,但就比較乾。調味方面,枱面就有雪花海鹽 ,原粒芥辣同 wasabi。食完第一塊之後,醒覺應該搽少少牛油先至煮,之後煮就好好啦。基本上 三種肉都有足夠嘅牛味,加少少鹽就已經可以好足夠。 當然煮得靚唔靚,就要靠自己道行同手勢。另外枱墊上面有教點樣煮,跟足就一定冇失手。感覺上呢個係非常之抵食嘅套餐,因為目測霜降牛嘅份量係肯定多過三分一。霜降牛本身,無論牛嘅味道同口感,都非常之好。對於我嚟講,唯一美中不足就係唔夠蔬菜,所以都叫咗兩三輪前菜嚟補足。服務方面亦都算係唔錯。雖然有個小插曲,坐低之後,侍應就畀咗張QR code我哋自助落單。所以落完單之後幾本menu仲喺枱面,過咗一陣侍應攞兩碟牛上嚟嘅時候,可能太忙嘅關係,就咁將其中一碟放喺幾本menu上面。我即刻請佢攞收走menu,佢都即刻做咗。之後問返同一個侍應啲前菜係咪可以再攞,佢都好樂意答同埋幫手,完全畀足服務。基本上今餐都係好滿意  。…Read More

退休之後,冇得旅行 ,有人教我去摘星。 於是由米芝蓮三星開始食落去。 今日食到Amber午餐。 選擇咗 Amber extended experience, 即係四度菜。未講菜式之前,可以講下服務,當然係5星級酒店嘅服務,無械可擊。但有個小插曲 ,我哋早咗13分鐘到,唔畀入住,但會提示我哋去下洗手間 ,同有地方坐下,而且喺8分鐘之後,都畀我哋入去。正餐之前,當然有麵包,同兩款 amuse bouche前菜。麵包係熱嘅。 唔知amber嘅菜式係唔係法國南部多,所以麵包就只係畀法國南部嘅橄欖油。橄欖油嘅味係濃嘅,但感覺上好似冇三星意大利餐廳嘅香。麵包方面亦感覺比三星意大利餐廳簡單同冇咁香。第一款前菜應該係魚籽,好佩服其他寫食評嘅人,雖然侍應有詳細解釋每一道菜係乜嘢,但係聽完已經唔記得咗一半,食緊嘅時候再唔記得多一半。。。我淨係記得最底係菠菜汁,最頂係炸薯仔。但係呢個前菜係一流,配料同醬汁好味得嚟並無喧賓奪主(魚籽),完全食到魚籽嘅味道。第二款珍寶珠,其實中間就係鵝肝,外面有 beetroot醬包住。 我唔係對鵝肝瘋狂嘅人,但係呢個無論分量同埋均衡嘅味道,都係一流。侍應有提醒,要 一啖食落去。但係之後記住要慢慢喺口裏面咀嚼,奇味無窮。之後第一道菜我揀咗yellowtail魚生,再加上青番茄塊。 呢個又係一流。 食呢啲餐嘅時候我成日唔知道 ,應該係逐個ingredient 食,定係一齊食。 呢碟因為份量夠 ,所以最初係逐件食,之後又撈埋啲鹹魚露一齊食。發現兩種食法,都各有滋味同驚喜。第二度菜,侍應提醒咗我哋,如果係文華會員,今期可以免費畀我哋升級其中一款菜式,於是我哋就揀咗 blue lobster。呢味又係一流,龍蝦相信應該係八成熟,脆卜卜。再加上一些 應該係醃製嘅日本蘿蔔,同埋魚子醬汁,又係奇味無窮。主菜我揀咗 pigeon 。侍應提醒,正常會係四成熟,提我如果接受唔到,可以轉七成熟。我向來對半生熟嘅都唔係好有興趣,所以都欣然接受咗提議。出嚟嘅時候,份量比想像中多,而且亦煮得非常之好 。有少少外脆內軟。伴菜除咗青豆之外,澱粉質方面亦都有用牛油煮嘅 類似risotto。最後甜品(其實唔係最後) ,我揀咗牛奶朱古力。實際上係parfait 上面有一個菊花,再上面係牛奶朱古力。侍應提醒,呢個要一羹包曬所有嘢食,味道同口感,亦都非常之好。話咗唔係最後,因為之後仲有咖啡。又要值得一讚既係, 呢度嘅 cappuccino 係咁多間餐廳飲過嘅,係拎到嚟加埋糖之後,仲係夠熱嘅。Petition four 方面,絕對係驚喜。因為絕對唔係petit。每一味都好似正餐飲咁大。有poppy seed的madeleine,朱古力,台灣水果同「 鴛鴦。其中鴛鴦基本上喺淡嘅咖啡再加淡嘅 Earl Grey 即時好似雞尾酒咁搖出嚟。而madeleine 就係啱啱焗起嘅。但係好可惜,當擺曬出嚟,再等佢表演搖鴛鴦之後,當我食嘅時候已經唔再熱。但係仍然係外脆內軟,淡淡幽香。總括而言,今次係非常滿意。食過咁多間星級餐廳,Amber絕對係每一味都有性格有驚喜。好可惜呢句說話未必係間間星級餐廳都可以咁講。以往有限嘅經驗之中,其他星級餐廳總會有一味半味有色有香但無味。但係Amber就可以做到,每一味都有自己嘅性格同色香味,廚師絕對有心。真係唔明白點解得兩粒星。。。…Read More
