吸血新世紀的Edward形容,吸動動血與吸人血的分別,「就似人類食豆腐為生,它令你保持強壯,但永遠不會令你感滿足。」以前我也認同食素食豆腐很難有食肉的滿足,直至昨日到沙田18的紅燒豆腐,看法完全改觀。這道菜的賣相,顏色比較深,上桌時還以為是炆豬肉。豆腐外層炸過,口感有點似腐皮壽司的炸腐皮,但裡面的豆腐卻超級軟滑,口感上有強烈對比,而且內層溫度保存很好,吃落口暖在心。味道也十分濃郁,加了那個汁比很多肉還要鮮味。由於實在太驚為天人,吃完一碟馬上再叫另一碟。紅燒豆腐這類菜色,並不是用珍貴的材料,也不是獨有的菜色,但味道及手工卻能做到與別不同,實在難得。另外叫了其他菜色也有一定水準,如北京填鴨,它的皮非常鬆化,脂肪已去掉,如吃薯片般,但驚喜程度不及紅燒豆腐。唯一美中不足的,是餐廳的㘣桌不夠,吃中菜坐長方型枱分餸比較煩…Read More

豚王原有拉麵師傅自行開設的拉麵店,早前與豚王閙上法庭,新店租下但久久沒開業。但近期悄無聲色地開了業,連招牌也沒有,要問才知寶號點稱呼。舖內天花擺滿各式的麵餅,據師傅講已噴了防蟲濟。與豚王不同,他們是有兩種湯底配合五種的的調味油,配成不同口味組合,麵也有三款,細麵、中太麵及限定麵(當日竟是貴刁!),肉也有紅油煮的叉燒及豬軟骨,其他浀淡及辣度都可㨂。叫了兩碗,一碗是煮干豬骨魚油拉麵加味玉,魚油是當日的special,但我一時失策是湯底及調味油都選了魚味的,當然湯底是充滿魚的鮮甜,濃味夠濃沃但並不是「杰撻撻」那種,叉燒夠稔但不要期待食得出紅酒味(但他們真是用紅酒來煮),味玉也是流心的,中太麵也彈牙,特色是有些沙律菜在麵內,係有些怪,但我覺得幾有特色。另一碗是黑蒜油豬骨拉麵加菜,加了菜變成有好多沙律菜。黑蒜油幾香,豬軟骨中規中距,細麵爽口唔硬。總括是這店很著重湯底及調味油,有水準,又多一個拉麵的選擇!…Read More

葡萄酒入口商美隆堡為澳洲酒莊Mollydooker在China Club攪wine lunch,有幸成為座上客。抱歉我掛住同莊主夫人傾計,沒有每一道菜都影相。Mollydooker的酒以紅酒為主,只有一支Violinist是白酒。這支是verdelho這種較少在澳洲種的葡萄來造,造得相當不錯,非常清爽,clean finish 。當然多數點心是配白酒較好,而China Club的點心也十分高水準。那雲南對菌餃,肉裡的汁不會比鼎泰豐小籠包遜色。而那個春卷,肉裡的溫度keep到好耐,放了一段時間仍好食。叉燒算是中上水準,再稔一點我會更喜歡。鎮江焗肉排造得醒胃而不太酸,肉質鬆軟。北京填鴨皮也脆,但佢有人幫手分埋夾埋。我自已鍾意自已夾多DD。西蘭花牛柳粒及雞粒蛋白炒飯都有水準。菜單好明顯要就以紅酒為主的酒單。但總括來說,菜式並沒有很特別,都係基本野,但那才見到廚師的功夫是真材實料!…Read More
