9月知道海港城會開就好期待,所以新開冇耐就急不及待想試吓粟米豆腐雖然叩粟米豆腐但呢碟前菜並唔係用豆腐整,而係牛奶、忌廉、木薯粉 、紫蘇花再加芥末。外表好似但咬落去口感完全唔同。由重達10kg 嘅八爪魚切出嚟,表面醃咗層醬油非常入味。接下落嚟就要開始重頭戲鰤魚壽司打頭陣嘅壽司係鰤魚,師父直接用炭壓向表皮釋放油脂,咬落去脂膏豐腴冇咩腥味。配上酸汁、蘿蔔溶、蘋果溶同薑蓉。微微嘅酸味令口水分泌立即增加,食指大動第二道菜係蟹肉魚子配土佐醋蟹肉拆後同蟹膏混合埋一齊上面加上魚子。土佐醋係啫喱狀,令土佐醋更容易掛上蟹肉。青森縣平目魚壽司師父先係赤醋飯沾上柚子皮,然後平目魚背面沾上芥末,兩者結合後魚上面再掃上醬油,青檸同柚子皮。咬落去會食到有微微柚子味包圍平目魚。極微量醬油味令整體更平衡春子鯛壽司屬於BB 𩶘魚,用醋醃大約4個鐘。時間唔可以太耐否則肉質會變實。相對平目魚,今次油脂較少,而咬落去比較重醬油味Shimaji深海鮨魚壽司肉質好彈同時鮮味都好重,小量柚子皮令整個壽司更容易入口。燒佐北寄貝壽司外層燒過,微微嘅焦味出奇地同北寄貝嘅鮮味夾到,幾特別。島根嘅手吊池魚壽司師傅輕輕點了醬汁兩下,令醬汁啱啱好流哂入塊魚。上面放上蔥同薑蓉令賣相更吸引熊本車海老壽司師傅巧妙地將飯收埋係蝦裡面,令賣相變成一隻好飽滿嘅蝦青森大間toro壽司珍貴嘅食材配上14日熟成,油脂分布平均,食完濃濃嘅拖羅味道依然留係口入面。赤身壽司同上一道toro係同一條魚,油份較少。肉質好明顯較實,味道隻中係舌頭前端(背都叫係,但多根啲)海膽伴飯海膽同飯撈埋一齊,加上三文魚籽。三文魚籽除咗增加口感,咬落去入面嘅汁爆出來令伴飯更濕潤海鰻壽司估唔到食落去第一啖係甜味,之後慢慢感受到海鰻嘅肉質。太刀魚表皮燒得好脆,連埋蘿蔔蓉一齊更好。吞拿魚手卷平時食手卷,好多都係直接用紫菜圈埋一齊,但食嘅時候尾部嘅飯會擠壓出嚟,令到你隻手污糟。師傳事前係紫菜尾端剪一下,然後包住手卷尾啲飯,非常貼心。玉子燒可以睇到上下有兩層效果,味道少少甜甜。上層口感好似蛋糕,下層有啲似布甸。咬落去成件事好夾海老味噌湯蝦老味道極重,成碗湯都係橙紅色。師父話用海老嘅殼餚過先做到呢個效果和歌山芝麻柿配啤梨啤梨味道好濃烈,淋嘅啤梨加上爽口嘅柿,口感互相補足廚師發板嘅價錢當然比去一般壽司店食嘅貴好多。但呢個價錢嘅背後你會食到師傳嘅心思。由佢嘅調味以至佢出嘅次序。先刺激你口水分泌,油脂多同少嘅壽司互相配合,去到濃湯溫暖你個胃後再以水果淨化口腔,完成一個味覺旅程。呢個就係價錢貴嘅理由…Read More

銅鑼灣一帶無論樓上鋪同地面都好多嘢食,特別係登龍街一帶,已經變成一條食街。今次揀咗呢間花宵食晚飯。二人刺身拼盤拼盤有銀鱈魚、牡丹蝦、墨魚、鯛魚同油甘魚。當中特別推介墨魚刺身,首先墨魚切得好薄,令到咬嘅時候唔會覺得韌,墨魚刺身上面分別有柚子皮、松露蓉同wasabi。咬落去會食到柚子香味,松露蓉同wasabi嘅味道,最後先係墨魚嘅味道。燒蜆用燒酒混合牛油調味 ,肉質好滑再加上日本蔥粒提升口感。值得推介👍🏻燒帆立貝預先將帆立貝切開兩邊,令到食嘅時候好方便。而且仲有裙邊同蟹子,睇得又食得😁燒厚切牛脷未食已經聞到牛嘅香味🤤,口水分泌立即增加,只需要用少量鹽已經吊出牛舌嘅味道。燒雞翼、免治雞肉同白鱔魚上面嘅醬汁叫月見,係用嚟點中間免治雞肉,雞蛋令到醬汁變得更黏更濃,更容易沾上去免治雞肉。左口魚壽司呢塊左口魚油脂好多,如果直接吃嘅話,成個嘴唇都係油。巧妙地利用紫菜包住,令到左口魚嘅油脂放到入口先釋放。再加上紫菜夠脆平衝到個口感,接受度立即大增。銀鱈魚壽司食之前好奇中間紅色係咩,食落去竟然食到中式嘅辣味。少量嘅辣味刺激咗口腔然後再感受燒銀鱈魚嘅味道。個感覺又幾好。總結呢個居酒屋嘅食材都唔錯,係調味方面都肯花心思去令食材提升更高嘅層次,值得encore👍🏻…Read More

疫情之下,冇辦法去台灣,唯有食去食台灣菜。呢碟涼伴豬耳咬落去好爽口,唔算辣。愈食愈開胃至於個綜合湯,白魚蛋好彈牙,配合埋紫菜,好香。成個湯飲完唔會口渴,相信入面冇落味精。有雞排同魯肉,一個飯滿足兩個慾望,雞排外層炸得好脆,食落去入面肉質結實,同係台灣食嘅差不多。大腸包小腸,本來以為好似台灣食咁大條,原來係細細條,可以一啖擺落口,配合蒜、酸菜、花生,好香。蔬菜肉鬆手抓餅,用生菜圍住蕃茄、肉鬆同蛋,外面再包手抓餅。留意要立即食,食第二舊擺耐咗,結果手抓餅變硬。今次食完當自己去咗台灣旅行。希望疫情快啲好返。…Read More

K11外面有條棉登徑,呢度開咗好多日本餐廳,今次我哋就試呢間黑門水產。作為日本菜,食材嘅質素好決定道菜好唔好食,一來到我哋叫咗三文魚加州反卷。三文魚加上蟹籽同蛋黃醬。呢個配搭永遠唔會令人失望。刺身方面,叫咗刺身6盛。當中包括三文魚、赤身、油甘魚、海膽、帆立貝同真鯛。每一塊都係厚切,一啖放入口好滿足。特別想講吓海膽,自己好怕唔新鮮嗰種腥味,呢度海膽除咗新鮮,仲會有紫菜俾你一齊夾。紫菜冇鹽粒係上面,唔會俾鹽味蓋過海膽嘅鮮味。之後我哋叫咗個甲羅燒,仲要即場燒俾我哋,未燒之前已經擺得好靚。燒完可以配梳打餅一齊食,如果梳打餅唔夠仲可以refill。除咗甲羅燒,極上大漁貝燒都係即場燒。即場將牛油燒溶,再滲入去蝦肉同蠔。燒嘅同時會加酒,香氣四溢,食落去好正。唯一唔慣係之前未食過熟嘅三文魚籽。原來熟咗會變白色。口感有少少膏狀。同平時刺身咬落去會爆開好唔同。成晚最特別係呢個魚子醬脆脆包,細細個包上面居然放咗咁多樣食材。吞拿魚、魚子細、海膽、蟹籽、三文魚籽但每種食材又唔會特別有一種會搶味。今次食得好滿足,因為好耐都冇食日本嘢。去唔到日本暫時止下口癮先。…Read More

環境一流嘅酒店餐廳

近來搞結婚有好多事要處理,為咗慰勞一下未婚妻。決定同佢食返餐好嘅。Uptop呢間餐廳係酒店頂層,預早7點未夠就上來。個環境好有氣氛。今晚Menu個主題係熱情西班牙,每位$398(未加一)有齊前菜、湯、蟹餅、主菜、甜品連嘢飲。價錢同海港城差不多,呢度就靜啲,有top view可以睇到過去港島。經理仲同我哋推介$198可以飲3款指定餐酒,食完飯仲可以上去天台個露天酒吧飲到12點。呢度餐包唔係配牛油,而用上黑欖油醬。平時我唔太鐘意食黑橄欖,會覺得好酸,但佢打成醬我又接受到。而且芝麻包同呢隻醬好夾。微微的甜味中帶點黑欖油醬嘅鹹同酸。西班牙黑毛豬風乾火腿嘅味道好強,用咗桃,紅榴、黑醋去襯托火腿的味道。紅湯上面係一塊煙肉乾,好薄。連埋湯一齊飲,味道更佳。個湯除咗蕃茄味之外,仲有一份嘅煙燻的味道,令個湯變得好特別👍🏻香煎蟹餅配熱情果蛋黃醬係必食之選,成塊蟹餅都係蟹肉,壓成餅狀再係外面煎封。咬落去好滿足😋另外,蟹餅配嘅熱情果蛋黃醬好有驚喜,本來以為蛋黃醬味道咁強會蓋過熱情果味,實際食嘅時候,first taste 係熱情果嘅酸味,再之後先慢慢感受到蛋黃醬嘅味道,配搭得非常好👍🏻👍🏻👍🏻嚟到主菜方面,我哋揀咗烤龍蝦尾配西班牙海鮮飯,同烤伊比利亞豬架。海鮮非常多,炸魷魚圈、青口、蜆、龍蝦,味道用咗蒜同牛油調味。龍蝦肉質非常鮮嫩,仲好貼心係中間預先開定,免去拆殻嘅煩惱。烤伊比利亞豬架肉質好嫩,烤嘅時間剛剛好,成功鎖住肉汁。另外醬汁冇搶走本來肉汁嘅味道,混埋一齊食得好開心😋😋甜品方面,我哋揀咗西班牙烤油條配黑朱古力醬同黑朱古力雪糕。西班牙油炸鬼好煙韌,點完朱古力醬再連雪糕一齊食好有罪惡感。要留意,朱古力醬好快變硬,所以一上菜就要儘快食。食完晚飯,當然唔會放過上天台飲白酒嘅機會。個景色真係好靚,因為夠高而且天氣清,感覺好開揚。望住個靚境,飲住白酒relax下,將煩惱拋諸腦後。*臨走嘅時候打算bk位12月同班兄弟姐妹上來傾分工同流程,經理特別同我講今晚熱情西班牙只做到11月17號,如果想bk位嘅人要注意。…Read More

之前同事介紹過呢度,平時嚟都要等位,今日趁早收工就來試下。嚟到叫咗個冬蔭公鍋,最特別嘅地方係個湯底唔係成煲咁上,而係俾一生堆材料你自己去整,好有新鮮感。首先用和牛嘅脂肪係鍋上釋出油份,再加入香茅香料等去炒。炒完之後再加入蝦同埋魷魚。最後加入冬蔭公嘅湯,放埋配菜成個冬蔭公鍋就大功告成。配菜方面有好多選擇,蔬菜、菇、丸、麵。差不多有廿款。當中有好多係平時打邊爐食唔到。例如係Super food嘅羽衣金藍同埋蟲草花。我哋今次揀咗澳洲上級長期穀飼牛,一來就上咗牛舌、豬肉、穀飼牛各一碟。食冬蔭公鍋我推介食油麥菜同埋蘿蔔,因為佢好入味。肥牛方面,穀飼牛嘅紋理好靚,好少脂肪,食落去薄薄一塊好快就食得,而且少咗份罪惡感🤤飲品方面有十幾款,連可樂plus都有,正👍🏻如果想飲熱飲,旁邊都有香茅茶包可以沖。食到幾飽都好,都唔可以少咗甜品。自己整yogurt,想食幾多就整幾多,好多配料可以加上去,食完就真係好完滿。唯一要注意嘅係有限時90分鐘,如果係大胃王嘅話,可謂分秒必爭。預早制定政略會更開心🤣…Read More

天時暑熱,放工唔想行街,就決定留係商場食飯。見呢度二百幾蚊食到兩個麵食加三款小食,就決定試一試。首先上來係炒魷魚,炒嘅時間啱啱好,食落去好爽口彈牙。入面用咗薑絲去辟走腥味,食落竟然會有住家菜嘅感覺。好正👍🏻👍🏻咖哩吉列豬排蛋包飯,吉列豬排冇咩肥肉,炸粉都好薄,所以食落去好脆。不過豬排比較乾,建議食嘅時候連汁一齊。蛋皮夠滑,淨係蛋配飯已經好好。至於咖哩似係用平時買嗰種即煮咖哩,整體嚟講,呢個價錢絕對收貨!餃子係即叫即煎,所以上菜嘅時候唔好第一時間就擺落口。如果唔係會燙親。入面材料都好豐富,滿滿嘅豬肉,煎得又夠脆,點埋醋一齊食,正😋南瓜薯餅炸粉都係做到薄同脆,證明師傅落油炸嘅時間掌握得好好。唯一可惜係入面嘅南瓜味道略少,如果南瓜夠甜,配合埋炸粉脆嘅口感,會更上一層樓。最後壓軸登場嘅係海老拉麵,一上菜睇到成碗湯都係蝦米,而湯底完全吸收哂蝦米的味道。叉燒煮得好淋,蝦嘅肉質保持到。整體而言都做得唔錯👍🏻二百幾蚊係夜晚食到五樣食物絕對係值回票價😁…Read More

值得一再回味嘅西班牙豬肉眼

朋友介紹,嚟咗旺角呢間樓上餐廳食飯。聽見朋友對佢讚不絕口,就試一次。一嚟到先點咗紅菜頭甘筍湯同埋西班牙海蝦蛋餅。呢度嘅紅菜頭甘筍湯唔單止顏色,連味道都好重紅菜頭味。用得出廚師落咗好多紅菜頭打成糊狀再加入橄欖油調味。蒜蓉包都好出色,除咗用蒜蓉焗之外,上面加上番茜。西班牙海蝦蛋餅用鐵盤上碟,出哂煙、好熱。上面用咗紫色食用花做點綴。賣相好靚,不過食落去蛋餅有少少過熟。飲品方面就選咗迷迗香菠蘿沙冰。一上來嘅時候迷迗香係燒緊出緊煙,第一次見,幾特別。一開始主要係飲到菠蘿嘅味道,後尾會慢慢飲到有少少迷迗香味。南瓜汁燴牛油蟹肉芝麻菜意大利飯一食落去先食到南瓜甜味,之後蟹肉味慢慢再滲返出來,蟹肉同籃瓜都唔屬於濃味嘅食物,用呢兩種材料整出來味道好平均,唔會偏重任何一邊,唔錯。法式甜酒西班牙杜洛克豬肉眼配南瓜醬食到呢碟主菜我就明白點解朋友對佢讚不絕口,因為呢道菜絕係成晚最好食,最有驚喜嘅菜式。首先,煮嘅時間掌握得好好,食落去得好有彈性,一啲都唔韌。味道方面好多層次,用咗百里香、蒜頭、黑椒去調味,同豬本身嘅味道配合得好好。就算係配菜薯蓉都有混合咗蔥同粟米,豐富咗口感😋真係好正👍🏻鐵板布朗尼配雜莓雪芭食完豐富正餐點可以少咗份甜品,上菜嘅時候鐵板係好熱,布朗尼嘅朱古力濃度高,而且比較硬。切嘅時候要大力啲,但配合有果肉嘅紅莓雪芭,甜甜酸酸、又硬又軟,出來效果又幾夾😁…Read More
