颱風季節,適逢八號風球,唯有延遲聚餐。颱風翌日,致電酒樓經理,已經全晚滿座,由於VIP關係,可以攝到一枱。下班徒步抵達,現場人頭湧湧,非常火爆,不少茶客手揸龍票,門外等待。餐前小菜,脆皮燒腩仔,沙薑豬手仔,略表不提。軒尼詩V仔,酒色琥珀色,淡雅清香,微帶丁香同肉桂味,口感香醇順口,適合中、西菜色。 蒜蓉蒸貴妃蚌,肉質鮮美無比,甘脆嫩滑,但食落竟然平平無奇,連之前九層塔炒聖子都不如。吾知係煮法失敗,定九層塔惹味,佔據口腔味蕾,食吾出貴妃蚌鮮美味道。潮蓮炭燒鵝,電爐燒鵝,炭燒無乜可能。新鮮熱辣,皮脆肉滑,入口吾覺肥膩,而且鵝味濃郁。豐滿肉汁,鵝肉鮮美,美味滿足。清蒸紅瓜子,肉質細幼酷白,結實中帶嫩滑。魚味濃郁,鮮嫩爽口,口感彈牙,入口有嚼頭,魚皮膠質豐富。象拔蚌刺身,淡而無味,既無刺身鮮甜味,又缺乏象拔蚌本身味道。入口之餘,只覺得食緊野,但又吾知食緊乜,垃圾之作,真失敗。黑白胡椒炒肉蟹,胡椒香辣味挑釁味蕾,爆炒的鑊氣涌入鼻腔,瞬間喚醒食欲細胞。白嫩蟹肉鮮甜厚實,甘甜鮮香之餘,熏染微焦辛嗆胡椒香味。以上菜式以外,尚有金銀菜燉白肺湯,滋潤補氣。椒絲腐乳炒通菜,正常。酒樓經理奉送桃膠柑露及乳酪糕等飯後糖水,豁免茶芥加一更不在話下。…Read More

黃昏收工之時,相約各同事於地鐵站,結伴步兵到雄興飯店,嘟下安心,掃下針咭,入座坐低,環境一般比較狹窄,不過一早預咗無問題。經過昨晚拱橋,翌日個人有點暈眩,頭不痛喉嚨不乾,果然係XO。向各位同事表示,本人今晚吾飲啦,同事們唯有飲藍妹,呢度無D乜妹,只有潮州大媽。鹵水鵝肉,要砍件不要切片。鹅肉切片可能係香港人發明,為香港人服務,你依架去潮汕一D鄉下地區,真農村果種,佢哋係吾識起片架。鹵水鹅肉正宗入味,鹵水吾咸剛好。伴碟豆腐軟滑可口,鹵水入味。咸菜門鱔,一般。正式潮州家庭餸菜,咸菜係潮式,不是咸酸菜。雖然好多咸菜,但門鱔太少,既無門鱔魚春內臟等,咸菜又浸泡到無曬味,淡而無味,無咗咸菜果種酸味加魚味。春菜,過得去,翻煮更軟淋入味,最好煮到菜莖葉變啡色,溶為一體。炒蜆仔,我哋老潮叫紅肉。正宗,用幼細果種,不是大粒蜆肉。薑葱伴紅肉,既有海鮮貝類鮮甜味,又有薑葱爆香味,佐送潮州白粥一流。胡亂豬肚湯,香港黎講都叫正宗好味,不止豬肚,仲有豬粉腸,吾錯。如果吾用普通豬骨,用豬扇骨,更加正宗。湯有濃香胡椒味,胡椒粒沉沒碗底,吾似其他用胡椒粉,有良知。始終不合小編口味,白胡椒粒整碎,裝於豬肚內扎實,新鮮豬肚煮出來果啖湯不可同日而語。咸煎帶魚,相片久奉,新鮮美味,咸鮮夠味,頗有細個食夜糜味道。呢D潮州飯店,潮陽以前叫夜糜檔,依架叫大排檔。相信打冷,魚飯等名稱,都係香港創作,依架約定俗成,市場效應,無傷大雅。可惜依架D帶魚吾夠大吾夠長,略遜一籌。煎蠔咯,外脆内軟,沾點魚露,香脆無比。內面薯粉溝鴨蛋,軟淋可口,正宗。唯一不足相信係油炸,不是煎。蠔仔粥,一般,連白粥都不如。聲稱蠔仔粥,實為蠔仔泡飯,廣府人覺得無乜分別。差之毫釐,謬之千里,米飯粥水分離,粥水毫無米香。潮州白粥,白如冠玉,晶瑩剔透,米粒舆粥水溶為一體,米香十足。全晚神來之筆,強烈建議飲酒之前,整返一碗,墊下胃底,無咁容易醉酒。…Read More

友人相邀,黃昏時分,遠征荃灣,老潮大排檔。到達之時已天黑,大排檔人人湧湧,路邊兩旁擺放枱櫈,非常熱鬧。甫坐下,啤酒妹,不是啤酒姨姨,不斷推介嘉士伯。今晚飲拱橋,吾想飲馬尿。見到promoter 成件嘉士伯着上身,又咁落力推廣,叫兩三支略表意思。鹵水鵝肉,正常,鹵水吾太咸入味,鵝肉香濃有嚼口,肉質肥瘦適中,滲透誘人肉汁。伴盤鹵水豆腐稍微硬身,可能油炸過火,鹵味不足。蒜蓉粉絲蒸扇貝,鮮美扇貝同糯滑粉絲完美結合,加上蒜香衬托,肥美幸福味道滿溢口腔。蒜蓉香味帶出扇貝鮮甜,粉絲又吸引咗蒸出湯汁,三者之間配合得天衣無縫,好似咸酸菜同牛歡喜咁夾。薑葱炒肉蟹,其本係無失手之作,加上秋風起,蝦蟹肥美,好難炒得難食。事以願違,蟹肉非常瘦削,連至愛蟹蓋都少挟為妙。聲稱肉蟹,完全無蟹肉鮮味,水蟹石蟹都不如,失敗。號稱菲律賓肉蟹,可能孟加拉垃圾蟹。豉椒炒蜆,完成離曬大嫂。吾知係炒到過火,定係用咗死蜆。蜆肉同殼離曬罩,只見蜆殼,不見蜆肉,食吾出蜆肉鮮甜味。簡單製作炒蜆,炒到不知所謂。白灼花螺,樓面阿姐大力推介東風螺,通常推薦果D都係賣吾出籮底橙。寧願貴D要花螺,果然一分錢一分貨,花螺比較鮮美,無東風螺果陣怪異味,有眼光,吾錯。拱橋,自携馬爹利一支,醇香不烈,滋陰壯陽無口味。馬爹利少人頭馬辛烈,比不上軒尼詩醇厚,不二之選。既然係老潮大排檔,當然吾少潮色餸菜,韮菜豬紅,又垃圾之作,豬紅無味就一早預咗,韮菜既然有渣,失敗。飲咗D酒,想食碗潮州白粥墊下胃,竟然係無,其他炒蜆仔,炒麻葉都係無。飲食交談之間,忽然有兩個貌似窮家女,(地盤佬明白窮家女意思)推銷煙仔。助人為快樂之本,帮下佢哋買兩包,一藍莓一薄荷。…Read More

中秋佳節臨近,疫情反覆向上(恒指好似疫情咪好囉,輸咗九條街,食緊塵)。全力擴大内需、穩住市場主體、(小弟幾鍾意市場經濟呢句口號)保障改善民生等各方面作出貢獻,我哋決定去鯉魚門搞返餐海鮮午餐,賀一賀埠。中午時分,兵分兩車,各自抵達,鯉魚牌坊。當然吾少得打返個咭,再來一張。由於時間關係,友人預先準備海鮮,所以就無咗指定動作-揀海鮮,感到遺憾,感情受到傷害。首先出埸白灼海棕蝦(煮法簡單,容易加工),肉質爽甜纖幼。肉質不及花竹爽口彈牙,鮮甜味卻有過之無不及。蝦味濃郁有嚼勁,始終不及九蝦。椒鹽瀨尿蝦,北佬叫皮皮蝦,潮州話叫蝦蛄。瀨尿蝦鮮甜,飽滿結實,薄薄的一層椒鹽,睇落就平平無奇,食落就香味無比。鮮味無敵數生腌,甜味至啱游盬水,香口惹味屬椒鹽。蒜蓉粉絲蒸扇貝,天作之合,味道夾到天衣無縫,扇貝肉實肥美,加上粉絲蒜蓉,香氣四溢。滑嘟嘟粉絲,別有香味蒜蓉(光加熱就等於火),仲要金銀蒜,味道將提高更多。古法炆龍躉,不過不失,香脆有魚味。可能油炸,吾啱我口味,所以少食。同事港媽比較熱衷呢道餸。清蒸東星斑,魚肉晶瑩雪白,肥腴幼嫩,味道鮮美,魚肉鮮嫩,而且嫩得有層感,口感又爽滑,鮮美程度遠超任何阿星。東星通身淡紅,除咗味覺之餘,仲有視覺享受。成餐飯無批評就係呢條魚,如果連阿星都搞吾掂,呢個廚房好極都有限。薑葱焗生蠔,生蠔size吾肥大,加上咁焗更縮水。完成食吾到蠔味,更講不上鮮甜,可能未到蠔季。失敗之作。龍蝦上湯煎米餅,龍蝦肉質飽滿,全身都係肉,名副其實肚滿腸肥肉橫生。蝦肉入口有嚼頭,口感,調味層次分明,濃稠高湯中顯得零舍嫩。煎炒米餅爽脆香口,吾肥膩。同事港媽差評稍咸。惜非南澳龍,略輸鮮甜,煮法普通,稍遜驚喜。豉椒炒蜆+椒絲腐乳通菜豉椒炒蜆口味比較重,鮮甜蜆肉加惹味醬汁,鑊氣夠。豆豉蒜味非常濃郁,口感偏咸,蜆肉全部離殼,火候掌握吾好,明顯炒過濃,失敗。椒絲腐乳通菜,本身至愛,但老闆慳皮,腐乳吾夠。仲要用我至討厭白通,加上現時通菜吾當造,食落好似有籽,失敗。飯後鮮果,鯉魚門必備,芒果木瓜,芒果香,木瓜少甜。吾知可否改下,變成時令鮮果?總結呢餐中秋午飯,不過不失。由於港女同事離職,所以今次係無必叫椒鹽鮮尤(雖然港媽有要求,其他因素無落單)。海鮮食材係新鮮,煮法普遍非突出,既無劣評之處,又無任何亮點。月到中秋分外明人情世故如習俗防住疫情,穩住經濟,安全發展,銘記在心。…Read More

為咗響應國家,擴大內需,我哋同事經過核心領導小組決定,將成功人士farewell 運動進行到底。夕陽西下,一行八人,徒步抵達爆房。我哋係VIP,一早就訂咗房,吾係龍票架。甫坐下,先上小吃,花生茶芥,脆皮腩仔,藥膳鳳爪等等物物柒柒,不作長述,直入主題。南澳龍蝦刺身,刺身造型賞心悅目,肉質爽口彈牙,味道鮮甜。蝦肉緊緻細膩,油性低而且多汁,口感偏甜且鮮味濃郁,此時吾食更待何時?吾知前排龍蝦風暴是否完美解決,同屬一個國家中國老百姓有得食龍蝦未?(不是坐洗頭艇入境果D)憂懷國恨心暗傷,愛國愛港愛人民 。金不換炒聖子,金不換獨有的香氣,提升聖子的鮮味,夠鑊氣,超惹味,肉質鮮嫩多汁。直接秒殺farewell dinner 海鮮宴上篇的豉椒炒蟶子。淨係聽到個名,已經覺得满懷詩情畫意,絕非X田盬焗多頭聖可比。期間經理老推湯水,石斛燉水鴨,滋陰補腎,勁過三鞭酒。吾使啦,我哋好腰好腎好男人,鞭鞭有力,且自携酒水。正如上篇,港女港媽梅子酒,潮州怒漢飲角馬(人頭馬club,老潮叫角馬)龍蝦泡飯,一國兩制是個好制度,一蝦兩食必須長期堅持。從來沒有試過這麼清新脫俗的感覺,龍蝦的鮮,高湯的甜,混在一起的味道,竟然比“老鼠斑”有過之而不及,正如比初戀更加詩情畫意。吃进嘴里是天然的鮮甜,配炸米和香菜,萦繞于舌尖美味让人欲罢不能。唯一挑剔是不是用砂鍋,不是潮州粥做法,颗粒分明,用料是否够正够足一目了然。潮蓮燒鵝皇,北有烤鴨,南有燒鹅。皮脆肉香的燒鵝,肥厚又嫩滑,鵝肉香嫩多汁,鵝皮脆口不膩,每啖都油香四射,以梅醬作蘸料,更添香味,邪惡得來卻令人非常滿足。經理自稱用荔枝木燒烤黑崇鵝,呢個年代,個個都話用荔枝木,真如潮陽熏鴨用蔗。(有機會講下潮陽熏鴨)油盬焗奄仔蟹,金秋時節江浙大閘蟹,春末夏初廣東奄仔蟹,此时正值奄仔蟹豐腴之时。蟹肉細腻甘甜飽滿厚實,蟹黃質如軟玉咸香流沙。如斯尤物,香濃誘人,入口甘香回味,令人食指大動。椒鹽鮑魚,聲稱本店鎮店三寶之一。外面咸酥,肉里Q彈扎實,軟中帶Q,值得一試。椒鹽鮮魷,成功人士港女同事至愛,每次飯局指定動作。呢D冷藏魷魚,雖然做外表金黄,但内里絕不香嫩。呢D咪表面親切,內里驕傲。基於膽固醇偏高,所以魷魚等一概欠奉,不予置評。總結上下篇farewell,價錢,海鮮種類以三聖跑出,可能熟人。味道烹飪以海鱻城獲勝,因為三聖普通平凡,海鱻城突出有驚喜。…Read More

心血來潮,三五同事成群結隊,飛的九龍城,掩至衙前塱道。徒步唯豐,與老闆打招呼,查詢推薦泰國菜館,順便買個邪惡鹵水鵝肝。鹵水粉肝,外賣自㩗,購自唯豐潮州食品,(與老闆相識微時)一鹅十味,味味俘虜人心,鹅肝肥厚粉糯,入口即化。唯豐各類鹵味,相當出色。相信自此一役,膽固醇上昇,大半年清心寡欲,清真斋戒月,前功盡棄。泰式生蝦,嘗鮮首選,保留了海蝦的鮮甜原味,鮮嫩可口,醮點特制配料,鎖住原始鮮甜,冰爽清甜的口感,此一刻你属於我 你再也没法擋。油炸蝦頭,酥脆可口。花開兩朵,各表一枝。美中不足可能原材料D蝦吾靚,令人感受吾到蝦肉Q彈快樂肉質。泰式螄蛤,搣開外壳,口感鮮甜,一粒接一粒,一啖包上瘾。可能灼熱過火,做吾到潮汕毒藥生腌螄蛤,鮮到滴血展示於眼前情景,茹毛飲血,令人卻拒還迎。馬拉盞通菜,媲美港式椒絲腐乳通菜,泰金國使用青通,白通脆,青通嫩,值得讚賞。通菜青綠幼嫩,一番鹹香滋味。泰式燒牛肉,有驚喜。吾知幾成熟,表皮微焦程度恰到好處,熟度和嫩度都控制到。每一塊都充滿豐滿肉汁,入口之時,牛油脂在味蕾上發光發熱。口口爆汁,肉香四溢,食肉獸至愛。泰金國既無泰啤,又無泰妹,泰姨泰婆随處可見(偷偷看,偷偷望,雪櫃有少量泰啤。可能無酒牌,不能售賣,不予深究)同事唯有跑去梗有一間係左近7仔商借幾罐,馬尿落肚,谷X上腦。進食限時亦係泰金國不足之處,可能店舖地方狹窄。…Read More

疫情自始,公司今年恢復康樂活動飲食津貼,加上有位成功人仕離職,另謀高就,再加上某D友好贊助,工地仝人收工屯門三聖,海鮮farewell dinner,一醉方休。月上柳枝頭,人約黃昏後。六點飛車三聖海鮮街,(長路漫漫伴我闖,一出香港人聖山-獅子山,對我而言,路途遙遠,遥遙無期)入口隱蔽,柳暗花明又一村花明柳暗二奶村,別有洞天無敵大海景(隔離果個仲使出來行)入到餐廳名門,例牌動作揀海鮮,豐儉由人,各花各款,花樣撩人,不作詳述。白灼九節蝦,不加任何調味,原汁原味,,做法便捷又美味!清甜爽脆,一試再試豉椒炒蟶子,惹味夠鑊氣,鮮甜又爽口,吃得夠爽快,惜貧下中農出身,好中華出產泥蟶子。椒鹽賴尿蝦,皮脆肉厚,雖則無膏,港人至愛。(若有生腌,佐酒一流)辣酒花螺,無論花螺東方螺,都係地盆佬至愛。一鴨抵三雞,一斤花螺,等於三斤東方螺,吾食辣既我亦浅嚐椒鹽奄仔蟹,肚滿腸肥,賤肉橫陳,膏香四溢龍蝦伊麵,肉甜香滑,至於伊面充满海鲜的滋味,會當凌絕頂,一吸眾蝦味清蒸星班,吾知係東星,定係西星,總之係阿星(無包頭架),細嫩爽滑,鮮甜有魚味菠蘿咕嚕肉,,正常酒樓野,尚算惹味正常酒樓菜色,不過不失,一鴿勝九雞老潮口味軒尼斯港女港媽梅子酒藍妹生力地盆佬紅白二酒不盡錄仲有其他,如古法炆鮑魚,蒜蓉粉絲蒸扇貝,至愛既椒絲腐乳通菜。當然吾少得飯後生果,如果飯後果改為新鮮菠蘿醮醬油就好,都係回家自製,未必人人啱口味。又到飲飽食醉之時,順風順水,直到尖沙咀。專工專責,專車抵家門。…Read More

今天相約顧問公司視像遙距監察heatsoak test.下午六時,我們這些工程🐶立即Uber去黃竹坑。到達顧問公司,二話不說,set好鏡頭,以快打慢,對齊各項文件,然後玻璃蒙頭入閘(入爐昇温),收工落樓即驅車至上環。一入門口,伙記話街上幾間尚興都係同一間,幾位樓上雅座,有D風味。甫坐下,一位阿叔奉上一盤潮州功夫茶,細味之下,鳳凰單樅就無可能架,應該是大紅袍,味淡回甘接受。味淡回甘大紅袍,惜缺茶壺,不能關公巡城,韓信點兵叫一個鹵水鵝肉,斬件不是鹅片,鹵水入味吾咸,各同事紛紛讚賞,豆腐亦相當吾錯。作為老潮一名,我覺得可以咸多少少,鹵耐多D先更入味。茶芥酸菜炸花生不過不失。潮州蠔烙,(吾係蠔餅,係烙。飯店仲提供水瓜烙,先試蠔烙,如果連蠔烙都吾掂,更何況水瓜烙,青瓜烙等)外脆內軟,正宗,食得出係用鴨蛋,乜園等不可同日而語。陳皮蒸白鱔,本來想叫豉椒蒸白鱔,伙記阿叔介意陳皮,抱着一試無妨,味道竟然如何相夾,吾錯,日後自己可以係屋企試下。拼盤,有蝦枣,蟹枣,海焎,魷魚等。買大送細,壽星公一個(吾知廚房師傅係咪快刀手,切親手)。各同事鐘情蝦枣,認為蟹枣普通,其他不過不失。始終覺得蝦枣不如姨丈自家制味道,缺乏豬网油,大地魚等。由於膽固醇高,所以蟹枣,魷魚等一概欠奉。同事叫咗雞絲粉皮,無食到,不予置評。藍妹三四支,飲藍妹,無㗎妹。最後伙記阿叔奉上綠豆爽+一盤茶,推介綠豆爽加陳皮汁,正,天衣無縫配合。我話,阿叔(潮州話),整多盤茶,吾該。阿叔話無問題。美中不足係呢度無供應某些特色潮菜,潮汕阿舍至愛豆腐炒麻葉,炒紅肉(香港叫蜆仔),韮菜豬紅等。飲飽食醉,兩張陀背佬多D埋單。沿着電車軌而上,吾知會否偶遇如花,等待十二少。…Read More

舊同事AE月底移民格拉底,今晚去The Flame 同佢餞行,各人大約19:30左右到達,由於已有預約,所以無須等候。先叫咗三個小食加一支白酒(本來想🍺🍻,但有人吾飲啤酒,所以叫白酒)咸蛋黃魚皮 好好食蒜頭鮮蝦 不過不失,正常串燒五花腩 好好食,喜出望外,如果熱更好(由於我中途行開咗)中途再叫四個菜加多支白酒雞肉意大利麵 正,我都食(平時吾食,尤其意粉,意大利麵等)猪肋骨 意想不到好食,吾硬入味。薯條黃金脆口,相信既叫既炸,非連鎖店x站等可以媲美牛柳 正常 雞軟骨最後到,大家已經食飽,無意欲食,所以不予置評最後叫四個甜點(焦糖燉蛋x2 Tiramisu x2)甜點一流,尤其係Tiramisu,食完都想再叫,可惜已經飽。(所以下個月同事last day,諗住叫佢黎外賣Tiramisu,焦糖燉蛋當散水餅)最後老闆俾咗八折埋單,1750左右。…Read More
