香港數一數二的和牛燒肉店除了Yakiniku Great之外,這間也一定要來試一次。這次點的是$1,280九道菜廚師發辦,包括和牛刺身、燒和牛壽司、三種和牛厚燒、三種罕有部位等。一開始的前菜有和牛牛他他、類似芝士和牛的夾餅、沙津。和牛他他嫩滑配上特製醬汁很惹味,其他就一般。店員上桌前輕微在炭爐燒了大概3-5秒再放上壽司飯上,一嘗這件和牛壽司,可以說得上是我這輩子吃過最好吃的和牛壽司,甜甜的日式燒肉醬汁提升了整件和牛壽司的質感,入口即溶。下一道還是由店員幫忙輕燒,超超超大塊的和牛西冷薄片!燒香後再蘸日本蛋黃和打過的蛋白來吃,入口富蛋香,再加上甜醬汁簡直是一試難忘!聽說Yakiniku Jumbo強調不會將牛肉冷藏,只用冰鮮貨,每次都是即切肉即醃即燒,因為預先切肉都會令肉味與肉質改變,相當嚴謹。接著試各種不同的部位, 有牛肩肉、牛頸肉、牛小排等等。說真的,試了剛才的反而覺得之後的燒肉沒有太大驚喜,感覺上菜的次序應倒轉。甜品也沒有什麼特別,只是有解膩作用哈哈。…Read More

有嘗過尖沙咀的米芝蓮一星店的ÉPURE,對日本食材融合法國新派廚藝作菜也不會覺得陌生,餐廳設計以落地玻璃設計為主,木材天花和地板為空間定下柔和基調,完全沒有Fine Dining一絲拘謹的感覺,很自在舒服。鴨肝鵝肝永遠是法國菜缺一不可的菜。這款冷吃鴨肝醬,配少許甜酒jelly、果仁,鴨肝慕斯打得幼絲細滑,但個人覺得搭有咬口的果仁粒,雖然口感有所提升但格格不入。(8/10)第二道是北海道的帶子,用炭火輕把表面烤熟,內裏仍保持刺身般的狀態,整體味道清甜。 (7.5/10)如果喜歡黑松露,接著這一道一定令你大開眼界,一片片黑松露佐以法國雞油菌蘑菇和舞茸菇香氣十足,沒有太多的調味,只是黑松露的味道已經大大提升了整道菜。 (8/10)到主菜反而有點失望,汁煮魚沒有太大驚喜,但魚肉很幼滑,下次來的時候還是選最穩陣的和牛吧(6/10)最後甜品上場,已經飽到吃不下,比較吸引我的是後面的貝殼蛋糕「Madeleine」,口感鬆軟,帶點青檸味和牛油香味(7.5/10)整個用餐體驗都非常驚喜,值得再來!…Read More

一走進餐廳就被那旋轉樓梯所吸引,餐廳每一件擺設都很優雅,在這裡吃飯一半品嚐食物一半卻是在欣賞室內設計。點的是Tasting Menu,先來的就是一式兩款的悅口小吃和單點生蠔頭盤,生蠔味道很清新。第一道菜先來帶子,帶子切粒,口感很爽,配上羅勒醬,開胃。我今次點的主菜鱈魚配上帶有芝士味的豆醬汁,望落一大舊但魚肉可以一片一片分離出來,很滑身。友人點的牛肉賣相一般,味道也很一般。個人覺得這裡的海鮮比較出色。到甜品,看似普通的朱古力mousse加雪糕其實很有層次,不甜不苦,濃郁的朱古力味完全停留在味蕾上,甜品很出色。…Read More

喜出望外的全牛宴

情人節當然去試新餐廳,聽說Marble主打的尾崎是百分百純種日本和牛,之所以叫Marble是因為和牛上細緻平均的大理石紋油花。先來刺身頭盤,賣相精緻再加上乾冰,整件事很配合情人節,味道都算不錯。再來尾崎牛刺身,上面加上海膽,口感幼嫩,一口過,油脂香在口腔內迸發。這餐廳亮點之一就是這件迷你牛三文治,日本面包帶很重的奶味,包著燒過的薄切尾崎牛加上帶點甜味的自製醬汁。這件三文治似曾相識,我大膽講句,如果和大熱的Wagyumafia吉列牛三文治比,個人覺得這件更加值得試,肉質細嫩,肉汁更多,面包厚度也剛好,令人回味。下一道是燒過的牛肉卷蘸點溫泉蛋漿,,加上面層的薯絲,哇,脆口之如整件牛好像在我口中慢慢溶化,覺得不夠飽的可以伴上白飯。另一亮點是牛肉shabushabu,意想不到的好,最讚的是湯底,肉質滑嫩牛味重。總括而言,這個價錢非常值得再來一次。…Read More

說真的,如果要選傳統的Omakase,Sushi Yoshi絕對不適合你,因為大多數人都會覺得Sushi Yoshi太花巧,無錯,因為他們擅長的是用不同的食材加上創意來表現破格壽司手藝。一坐下來,可見餐廳所有東西都是創意可嘉,務求達至盡善盡美。第一款刺身入口清甜,開胃。我最喜歡的白子也出現了,杯邊放上少許海鹽,一口倒入口,太好吃。用竹葉包裹鯛魚壽司真係第一次見,一放入口很強的櫻花味,酸酸甜甜很奇怪,但配搭完全沒有違和感。大拖羅也沒有失望,油脂豐富,肉質肥美,完全沒有'根'。北寄貝口感清爽,非常新鮮。個人最喜歡的是這兩款: (上)拖羅卷,魚肉香甜軟腍。(下)吞拿魚漬壽司,應該有用秘製醬油醃過也不失其鮮味。每一款菜式也有不同的調味,所選的食材、調味料都是最佳配搭。午餐來說,就能品嘗到質素不錯的料理,又做到這個水準,算是不錯的選擇。個喜歡於同一個套餐中,表現同一食材的不同處理手法,味道多變。…Read More

大埔終於有高質日本菜

在新界實在難以找到一家高水準的日本壽司店, 何況是大埔呢, 聽朋友介紹這間新開的澄, 本以為是跑馬地的澄, 原來大埔也開了一間700起跳的Omakase, 比起中環銅鑼灣平一大半, 今次選的780有刺身, 8貫壽司, 海膽飯和甜品。一入到去裝潢各樣都似模似樣, 很有格調。前菜先是螢光魷魚刺身, 下面還放了沙律, 味道普通。第二道上的是廣島蠔, 醋味不會太濃掩蓋了蠔本身的味道, 算新鮮, 味道相對清甜。這款有點燒得太乾身, 味道一般。到壽司, 我個人最喜歡這兩款, 上面的油脂挺多, 入口即溶, 下面的深海池魚卻帶點黏稠, 飯的溫度也剛好, 不錯。整晚最好吃的竟然是海膽飯, 分別有兩款海膽, 一款是紫海膽, 另一款是馬糞海膽, 再加上魚子和紫菜, 入口味道很濃厚, 美中不足的是馬糞海膽帶有點苦, 整體味道是不錯的。…Read More

一直都會不斷嘗試香港不同的omakase, 但性價比高之如又能保持水準的在香港沒有多少間, Sushi Ima曾經都紅過一陣子。我一直都被在Instagram上的圖片所吸引, 今晚終於一試, 八時入席, 星期四的晚上卻只有兩台客。今次點了$1,880的有刺身、壽司和和食等,第一二道前菜賣相都很精緻,只能說看得出擺盤用心,味道卻很一般。刺身先上的是劍魚腩, 口感不錯, 吃得出食材新鮮:到下一款是生蠔, 配上酸汁, 味道和口感皆一般, 只能說比起其他一流的omakase 還有段距離到時令的秋刀魚, 相比下, 這款口感尚算軟滑,也不會太腥:不記得這款是不是白海膽, 覺得味道很淡也不甜, 口感也比一般的馬糞海膽/紫海膽參次, 有待改進, 。Sushi Ima的Omakase的刺身比較多, 壽司較少, 但壽司也沒什麼大驚喜, 就不個別評論。總括來說,從裝潢到餐桌, 再到食物的Presentation 都很讚, 但實不相暪它的賣相和其味道實在有太大出入, 服務也不算好, 收這個價錢, 有很多地方可以有改善。…Read More

今次試香港Wagyumafia主打和牛懷石料理, 試過日本的, 當然心入面一定有比較, 差不多$3000人均, 除了看整體感觀享受, 牛的品質, 最重要是看每一道菜師傅也能發揮得和日本元祖一樣水準。最令我surprise的是每位在場的師傅很投入對每位食客傳情, 介紹每一款和牛,每位食客也邊吃邊看著大廚料理的實況。全和牛Omakase由刺身吃到吉列和牛三文治再吃到和牛烏冬。第一道菜是和牛刺身, 肉質好鮮嫩:第二道和牛餃子和春卷, 有自家製的Wagyusco,改良自TABASCO, 都幾夾, 但整件事沒有太大驚喜。到主打吉列牛三文治, 日本麵包夾著厚切和牛, 再加上特製甜甜酸酸的醬汁, 油花豐腴。除了三文治, 其他牛的料理也陸續送上, 這道牛用炭烤方式炮製和牛扒,烤後再分成薄切, 但我覺得有點焦, 但牛的水準實在是太好, 每一口都入口即溶。已經吃到八成飽, 個人覺得驚喜的竟然是最不起眼的這個烏冬, 湯底用牛骨煮成, 再加上和牛粒, 飽到嘔也再加碼。最後, 連雪糕也是和牛脂肪做的,配上黑醋和鹽有點奇怪,不過不失吧!價錢的確是有點貴,坦白說談食物整體悿不上日本總店, 但吃的不止食物, 還有整體享受, 來一次也無訪!…Read More

經過海港城都沒有多加留意這間法國餐廳,說到星級法國餐廳我猜人們只會第一時間想起amber/petrus/amigo等,如果你覺得amber是10分的話,這間ÉPURE我會給11分。無論是服務、環境都是很貼心和每一道菜都是超高水準,像藝術品般精緻,完全達到色香味俱全。我今次選了八道菜的Signature Tasting Menu..手掌般大的法國生蠔做前菜,配上酸汁和肉粒整口吃口感很飽滿,雖生蠔很新鮮但個人認為肉粒有點破壞其鮮味..這個擺碟很吸引,看上去好似每種食材都格格不入。中間厚切的煙三文魚跟平時吃的有很大分別,油脂偏低口感比較厚實但魚味卻很重,配上奶油、vodka果凍條、魚子醬和蛋糕一起吃很有層次,想到這個配搭真是個天才哈哈!法國菜當然也少不了鵝肝醬配toast,沒有太大的驚喜但不錯。蜆肉配上白汁和蘆筍,第一口吃下去完全吃不出是蜆肉,肉質很鮮𣙙肥美,很新鮮。到主菜也沒有令我失望,難度超高的pigeon 也煮得肉質很細𣙙,醬汁配搭很好,完全不會覺得有騷味。看似很悶的sobert甜品卻最令我驚喜,配上糖霜餅不太酸很消滯.. 最後送上的精緻甜品也一點也不馬虎,每一件都'好睇又好食'。總結,這一頓法國菜真的物超所值,各方面都做得很有水準,有機會會再來!…Read More

zuma係英國進駐嘅fusion日本料理,係倫敦既時候我已經食過,諗住香港既水準都keep到所以黎試下。呢度裝修佈置好特別,用左好多落地玻璃,樓底好高,但就好嘈,話佢係高級餐廳又唔係,似係比人飲酒談歡多啲,仲要大部份人都係鬼佬多。聽好多人講都話要試佢地嘅刺身,今次我點左兩個都係tartar,刺身牛同幾款唔同既壽司卷物等..先試呢個salmon tartar配上魚子醬,下面有醬油浸住,加d檸檬汁上去撈埋黎食好好味,真係好新鮮..跟住到otoro同salmon既tartar combo,上面都係有魚子醬再加d蔥粒,淨係睇賣相都一流,油脂分佈均勻,放係炸蓮藕片一齊食好正,比上面既更加滑同口感黏啲..到呢個松露片配刺身和牛,包埋d青瓜口感好清新,但醬料好普通,尚待改善。其他壽司卷物好一般,不值一提。感覺呢一間係名過於實,雖然食得出用料上乘,但因為價錢太貴而且唔值所以唔推薦,不過同客食飯都係唔錯既選擇但一定唔會自己黎,想食正宗既日本料理更加唔會揀呢間。值得一讚既係呢度既服務,都算幾專業嘅,每上一道菜都會為我地講解。…Read More

見到雜誌介紹呢間只係$288價錢相當貼地既omakase,即刻打電話book枱.. 入到去間餐廳一眼望哂10個位都無,師傅都係得一個,就係老闆本人,師傅已經一早安排好哂omkase lunch set,包左前菜、茶碗蒸、刺身、壽司、手卷、甜品等... 先試個茶碗蒸,無咩特別,同出面既味道各樣都差唔多..再試個刺身,有三款:吞拿魚、 墨魚同白身魚,刺身都係厚切可見手法好正宗,最讚係墨魚,爽口鮮甜,加上師博既刀法切到好幼,都算容易咀嚼到壽司環節,每一款既魚味我都覺得係偏淡,但魚肉幾爽口,全部壽司師傅都建議用手食,好正宗呢!其實最令我深刻既係個魚湯但無影到相,真係好好飲,魚味十足好濃好香,一d腥味都無,係用左魚骨、魚頭熬製而成,絕對唔係坊間既普通面鼓湯。最後送上豆腐雪糕作為甜品總結,咁貼地既價錢食到omakase,配上新鮮食材加師傅正宗既手法,絕對值得一試,希望下次去可以keep住水準唔會愈做愈差啦~…Read More
