用心制作的手切滷肉

很喜歡台灣的滷肉飯,上一次去台灣旅行11日,由台北食到高雄,滷肉飯更是主食。。台灣滷肉的質素良莠不齊,有些滷肉8成係肥油,用攪碎的肉,欠缺咀嚼感,而且油膩,加上滷水汁太咸,感覺很差。。也有一些用心之作,手切的猪腩肉,方丁,一致,一口6到7粒肉丁,滷水汁甜香,加上肥肉比例好,猪肉滲透岀油脂甘香在滷水汁上,味道細膩。。在香港要找好的滷肉飯更難,何況要找用心制作的手切滷肉?。筆者來了葵涌3年,又點會走漏眼。台灣客棧老闆娘係台灣人,老闆就唔太清楚。他們很用心的制作台灣美食,而最令人難忘的就係筆者花了很多編覆講的-手切滷肉。。(筆者情有獨鍾的還有咖哩雞排飯-中辣)…Read More

真台客一開張,我已經被她一絲不苟的食物吸引住,鹽酥炸雞香口不油膩,牛肉麵湯頭一流,客飯的酸菜不是一般餐廳可以食到的,淡淡的香醋,甜甜的滋味,台灣來的妹妹,很有熱誠,最重要的是食飽但肚不脹。這兩次再去,見不到台灣妹妹,也見不到台灣老師傅,只見到香港肥妹,廚房內只有一個香港肥仔同水吧似的姐姐,造岀來的鹽酥雞很油很多粉,牛肉麵很蘇沒有層次的鹹味,喝了湯會口渴,酸菜用的醋像用最普通的中國白醋醃制似的,只有酸,台灣臭豆腐很乾,柯仔煎沒有了誠意,放入口就知沒有了靈魂。我問他們,是否頂了手,完全的變差了。他們只係講唔好意思,會同老細反映。很失望,沒有了台灣味,沒有了真誠,還能叫真台客?柯仔煎的菜相就係咁。…Read More

想著蒙混過關,很不用心的早餐

一般水準的就不用多描述,早餐想找點港式的,見到鋪仔細細就入去食。是次叫了很經典的-沙爹牛肉公仔麵配腸仔太陽蛋一般香港人都對沙爹牛肉麵很熟悉,很平凡的早餐,但要做得好很難。最基本要用心,很多餐廳想要蒙混過關,是是但但煮一個hea 麵欺騙食客。👎🏻👎🏻👎🏻👎🏻👎🏻👎🏻👎🏻唯一冰室的沙爹牛肉沒有心思是即食罐頭不加工,而且涼著的不熱,牛肉沒有咬口,沒有味道,沙爹也沒有味道,閉上眼放入口咀嚼不會知道吃的是甚麼,令人不禁聯想到某國的假肉。公仔麵用最廉價的批發麵,一口油膱味,煮的過耐,滿口溶爛的,味精雞湯很淡但食完涸喉,很差勁。👎🏻👎🏻👎🏻👎🏻👎🏻👎🏻👎🏻腸仔用小紅腸鎅花煎,太陽蛋用易潔平底鑊煎,多士有烘乾但像是三個鐘前已經烘好的一樣,又涼又un。腸仔一早煎定,只食到油味,太陽蛋用平底鑊煎就係岀事令蛋白不乾脆蛋黃也半熟。👎🏻👎🏻👎🏻👎🏻👎🏻👎🏻👎🏻凍檸茶不說了,有如茶餐廳洗筷子用的茶,有色冇茶香。👀是日早餐34元,性價比很低,我定價為22元…Read More

平日返工已經好忙,今日唔知咩事特別多野做,放工時心情很沉重,想搵一啲香口嘅嘢食,本身諗住去麥當勞食薯條,但係行經古月比我見到星馬嘢食,見到入面食客啲嘢食,同埋食客滿足嘅樣子,我忍唔住行左入鋪頭。入到去,職員好友善介紹餐廳嘅嘢食,見我以俾咗杯凍水我飲,我等咗一陣等心情平靜下來,睇咗陣餐牌,揀咗我最想食嘅東西,李先生炸雞椰漿飯。椰漿飯我食唔少,平實嘅嘢食,配搭上花生鹹魚仔同埋辣醬如雞蛋,會令人一食難忘。椰漿飯,係馬來西亞嘅國餚,用椰絲拌入咪中煮,配搭小鹹魚,青瓜,炸過嘅花生,同埋辣醬,當然仲有主題菜式,由簡單嘅炸雞翼到比較複雜嘅薑黃咖喱雞都有。今次嘅李先生炸雞椰漿飯,用嘅就係馬來咖喱薯仔配搭上炸雞同椰漿飯,令到成個餐都很豐富。鹹魚size比較大好有咬口,咖喱汁另外上唔會蓋過椰漿飯嘅香味,炸雞分量十足非常可口,花生十分鬆脆,辣醬鹹香食過返尋味👍🏻成個餐配埋吉仔水就very good !唯獨吉仔水唔夠馬來西亞靚仔順酸,有一定的差別…… …Read More

日日返工放工食飯訓覺起身再返工放工.....生活就係好公式化,工作很刻板,食飯也很刻板,畢竟煮飯給你的人也刻板地工作。走遍了公司附近,不外乎大眾口味的米線,打工仔食膩了的什扒飯,半溫不熱的燒味飯.... 飯盒食完了,肉體飽足,但靈魂還是飢渴,情況就好似口乾口渴時有飲可樂一樣,短暫舒緩口渴感覺,但過了一陣會更口渴,沒甚麼好得過來一杯清純的水來得滋潤喉嚨。走到金來,門面老舊,食店氣味有點老,有點霉,工作的是一對老夫婦,伯伯專心煮食準備材料,老媽幫忙招呼落單,二人一絲不苟,由落單到上菜都認真都親力親為,熱情推介。老媽推介了四寶河,四寶係腍肉,雞肉,牛肉同扎肉,(老伯千叮萬囑問牛肉要生上就落單時提岀),咁我就恭敬不如從命,叫了四寶金邊粉。老伯在上菜時細心問湯粉要唔要加檸檬,加咗會有啲酸,唔係每個人都接受到。我就緊係要酸啲啦。四寶金邊粉上到,望上去很平凡。我先飲牛骨淆制的湯底,很樸實但豐厚,沒有用味精增加鮮味。金邊粉粗幼一致,不油膩,煮的恰到好處,不溶爛,入口彈牙。雞肉平凡的給予蛋白質,增加飽滿感。至於主角札肉同腍肉,我先回憶札肉。札肉本來就係法式香腸,製法簡單,把肉打碎,加上香料,札實蒸煮。但要造出好札肉就要從調味選料入手,造出香口不涸喉,肉實不鬆散就是功夫。不似一般菜瀾推薦的連鎖越南菜館,金來的札肉薄薄的一片片的,肉很札實,入口咀嚼後,滿口香草味,十分有心思。而腍肉係用猪肉和酸菜札實蒸煮而成,酸菜配上肥猪肉碎令金邊粉更有風味層次。最後問老媽要了一杯自家冰凍菊花茶,在午餐劃上句號,輕輕的甜美完善了整個下午,一碗粉,一杯菊花茶將我乾涸的靈魂滋潤過來。…Read More

約了朋友入禾輋村八點食飯,一聽禾輋村就知我去陳根記食。滿心歡喜一放工就飛巴士入村,點知好早到咗,眼見太陽未落山,一陣陣暑氣由地面滲透上頭頂,額頭開始冒汗,望住陳根記㕑師炒野大汗疊細汗,身邊村民行過時發岀的汗味,兩個師奶不停說好熱。我個心開始熱亂了,我要找個地方舒適的等到八點。我自轉了一圈,找到了禾輋商場,入到去見到有檔雞蛋仔檔可以堂食。即刻入去食。入到鋪頭,第一時間俾朱古力味吸引住,我叫了一個咖啡朱古力雞蛋仔,朱古力粒粒滿滿的在雞蛋仔中,很滿足,啖啖的朱古力香氣在口中。加上一杯珍珠奶茶,在鋪頭入面坐着吃,暑氣全消,一路等着朋友的到來。…Read More
