一直都想搵個機會來這間始創店朝聖,碰巧舊同事在這裡返工於是約於此食飯。舊同事說想慢慢嘆咖啡同吹水晚市絕對是最佳時機,平日午膳時間一位難求,隊尾最起碼到店外的扶手電梯。可惜當晚 single origin brew 及 手沖咖啡都賣光了,L 退而求其次選了一杯由自家烘焙的咖啡豆沖制的 flat white,這款自家豆較 nutty 配合鮮奶味道均衡,而且很順滑。舊同事 D 則選了一杯 mocha , 巧克力與 nutty 的咖啡亦都很平衡。甜品則選了自家制咖啡胡桃蛋糕,與一口熱咖啡完美配搭,胡桃份量亦算多。至於另一款甜品都幾特別,生酮花生醬黑巧克力忌廉卷花生醬味道不會蓋過黑巧克力的味道。口感不錯不會太乾亦不會因為冷凍下變得太過濕潤。雜菌黑松露醬芝士意大利三文治包含了大量的菇,加上黑松露入口香濃。暖暖的芝士亦滿瀉。另外一份是檸檬汁烤雞煙肉意大利三文治, 檸檬汁平衡了肉的油膩感。置身於此環境享用一杯咖啡,慢慢談天真的不錯!…Read More

到海港城血拼後與闊別多年的舊同事 N 晚飯聚會,細說當年往事。N 選了厚切意大利煙肉配卡邦尼意粉配 Espresso TonicN 更分享了他歐遊後對Carbonara(卡邦尼)的理解,原來這一詞源自意大利文Carbone(煤炭),卡邦尼意粉的起源傳言19世紀時,由於煤炭工人需長期間待在煤礦採煤,為了方便保存食材,就將芝士、煙肉等製作出飽肚的意粉料理,所以卡邦尼意粉又有Coal Miner's Pasta(礦工意粉)的別稱。煙肉的油香對卡邦尼意粉尤其重要,所以餐廳特意用厚切的煙肉增加油香,配上大的忌廉令意粉更掛汁又不會太乾,口感微微彈牙。而 L 則選了菠菜芝士意粉配忌廉汁配手沖咖啡咖啡品種來自哥倫比亞,入口有點像威士忌,帶有橙、蜂蜜及花香的味道,那種回甘確實令人回味。原來於 2023 年的世界咖啡師冠軍於獲勝比賽中曾經使用這款咖啡豆參賽,而這咖啡店更於今年二月獲得首屆「世界百大咖啡館(TOP 100 Coffee Shops)」之一。菠菜意粉份量很足,菠菜份量幾乎多過意粉,味道偏淡但與芝士平衡恰當,素食者最愛。最後甜品則選了一客生酮宇治抹茶忌廉卷,採用杏仁粉做出無麩質,口感鬆軟幼滑。抹茶味濃郁,入口微微茶的苦澀及餘甘。頂部一塊金箔點綴更顯高貴。服務很貼心,特別是手沖咖啡送上一杯清水清清味蕾。環境有如置身沙漠中的綠洲,在煩囂的商場找到一個可以暢談的空間確實難得。…Read More

朋友 S 想去日本旅行想到瘋啦,好啦,就搵個Lunch time 相約稍聚一個午餐,在鮨境預先訂了位,由職員帶位安排了面向窗口位置,我們耐心地等候師傅的安排。同師傳口中得知,師傅已有三十多年日本料理經驗,且新鮮食材都是空運來港,貫切對食物品質的要求,令我們二人都好期待。第一道Omakase 前菜是天使蝦、海蜇、柿餅,天使蝦彈牙,海蜇爽口,配上香軟柿餅,三者之間恰到好處。然後開始上刺身,伊佐木,新鮮肉質實淨;北海道櫻花蟹,一絲絲蟹肉,鮮甜無比;北海道象拔蚌,象拔蚌口感爽甜,放少少芥末更提升味道層次;縞池魚,色澤晶瑩,比較油香;當造的鰆魚,口感軟滑甘香;墨烏賊伴烏魚籽,是時令當做的,烏魚籽提升了墨烏賊的鮮甜;最後一款刺身是吞拿魚腩,中吞拿魚腩夠滑無筋👍,食得津津有味。繼而到壽司,甜蝦壽司、當造的梭子魚,火炙過尤其甘香、帶芝麻香且肥美的赤身、魚油豐富的大吞拿魚腩、鮮甜的北海道馬糞配紫菜、以及香蔥吞拿魚腩手卷,吞拿魚腩是多到滿瀉。除了凍食,師傳亦安排了一道熱食,燒鰤魚鮫,外皮燒得微微焦脆,肉質軟滑多汁。的確,這個質素需要多少年功夫才做到出來,雖然未能去日本旅行,但都望梅止渴著先。…Read More

收工後天寒地凍加上不可外出晚飯,在家打邊邊就是最好。二人份量的麻辣雞煲,選了小麻及小辣。份量則有多無小,而且質素亦算不錯。清甜的蜂蜜菊花露及潤喉桂花烏龍各一支而且很解辣,另外選了入口彈牙火鍋川粉。先說說雞煲,雞肉份量不算多但肉質確實不錯而且很入味。日本黑豚片肉味香濃而且不會有過多油脂,相對健康。牛板腱比肥牛更香濃而且亦很快熟。當然不少得火鍋常吃的配料響鈴、蟹棒、鮮冬菇及油麥菜。人和月的雞煲套餐好體貼,懶人包的組合實在很方便。連翻熱的罐裝油都可買到,基本上成套買去露營都食到。外賣有折,人均不用兩百,吃得方便又滋味。全日套餐都很吸引,下次食晏又多一個好選擇。…Read More

老闆說今年大家都辛苦,聖誕節前先吃個晚餐。主菜為日本A5雪室熟成和牛一道「日本A5雪室熟成和牛」端上桌面。由於稀有的關係,牛的部位會不定期變更,視乎來貨。雪室和牛逐塊疊高,底層是煎脆的日本米飯糰及法式手指薯,豆腐蓉繞在周邊點綴一番。醬汁以日本豆腐及黑蒜調成,連牛肉面的蔥絲也以京蔥、乾蔥及芽蔥三種組成,帶出不同口感。將和牛放入口,牛肉經熟成後肉汁更飽滿、口感更鮮嫩軟腍,肉質相對一般牛肉更軟腍、肉味更細膩。所謂雪室熟成和牛由日本人製作,以新潟縣兩百年歷史的傳統技術「雪室(yukimuro),蓋了特殊空間的建築,牛肉如陳釀紅酒般靜置,以時間來提煉出濃郁的肉味。牛隻在屠宰後,肌肉會逐漸僵硬,而牛肉本身含有的蛋白酵素會逐漸崩解膠原組織與肌肉纖維。讓牛肉自然軟化,提升嫩度就是所謂的熟成。將和牛靜置在長期維持低溫及濕度高的環境下熟成,牛肉表面既保留多水分,同時亦有乾式熟成的絕佳風味。另外一道主菜為希臘乳酪醃法國牛仔肉,相對熟成和牛此道菜肉質較結實,牛仔肉則充滿油香,乳酪的酸度平衡牛仔肉的油膩感;加上野菜天婦羅配菜,正正代表餐廳的法日風格。烤迷你蔬菜伴豆腐醬,外在有烤焗口感,內裡保持蔬菜的水份,控制熱度不容易。配菜都很高質,焗牛骨髓伴忌廉粟米及牛肉他他,這個入口有點油膩,但都不失為一個好的嘗試。前菜招牌阿拉斯加蟹肉牛油軟包,更有粗薯條伴碟。阿拉斯加蟹肉牛油軟包令人想起於倫敦泰晤士河畔吃著龍蝦包野餐的美好日子,現在由龍蝦換成鮮嫩甜美的蟹肉,鬆軟的軟包,一解英倫之愁。蟹肉以鯷魚醬提味,甜中帶點鹹香。值得讚是這裡自家制麵包,配上炸海苔好好吃。甜品是日本柚子奶凍伴白朱古力雪糕,賣相相當特別,白朱古力不會太甜,配上柚子奶凍酸酸甜甜的。另一道甜品反映廚師的大膽創新的精神,味噌芭菲伴杏仁檸檬嗜喱再沾上味噌醬,為舌尖開拓了不一樣的畫面。順帶一提,原來「BIFTECK」在法文意指牛扒。…Read More

好友聚舊,選了汀汀烤活魚。選了烤筍殼魚鍋(選了香辣味酸菜,小辣)鍋底以蘿蔔片、芽菜等墊料盡吸麻辣湯。烤魚上桌前預先經過烤到七至八成熟,表面更有孜然粉調味再將魚的兩邊攤開再放進鍋內,煮約五分鐘待魚肉熟後就可以吃。大量芫茜及大蔥鋪在魚上,侍應建議從魚腩那邊較多肉的部份先吃。湯底與魚肉,可能選是小辣不的原因,配搭起來不刺激但香口。瞬間整條魚就吃掉只剩魚骨。外層魚皮香脆,想內裡魚肉入味及吃得嫩滑就要快點吃了。除了烤魚,這裡更有烤食選擇。燒雞泡魚乾沾小小沙律醬,佐酒小吃一流。燒豬頸肉惹味黃金蝦餅外脆內軟烤魚及烤物吃過後想加點蔬菜平衡一下,加上湯後打邊爐追加娃娃菜。一人到罐蘆薈爽,正!…Read More
