在外國生活了十多年,喜歡西餐的原汁原味。喜歡下廚,要做到能吃能煮。 香港係美食之都,以前用遊客的身份來食,現在回來啦,慢慢的食盡香港。 香港食物和服務質素不斷下滑,最大成因係無良歛財業主狂妄,導致幾好嘅餐廳都要放棄, 選擇撐落去嘅餐廳最終逼住採購次一級食材,用雞粉、味精搭救… 最恐怖係乸過嘅肉同海鮮… 平價魚塊同蝦來貨已浸藥水,根本放唔入口,最後變廚餘~格硬食同慢性 cancer 無分别。 連鎖嘅一採用中央工場模式,廚師都淪為成傭廚!只求出單追kpi, 失去烹飪嘅靈魂。 有時,食得原始,可能更滿足。

無法理解嘅米芝蓮推介

雖然點心的潮流近年已遍佈酒樓與點心店, 但因成本和租金問題, 相對地大部分食肆選擇於食材上開刀, 節省成本。可惜, 花了時間, 花了人力, 花了食材, 卻加了味精、雞粉、鬆肉粉、發粉。。。顧客吃到的, 只是一件虛殼。由於我的愛人鍾情於麻蓉包, 一款傳統但於香港變得罕見的點心, 踏破香港, 於天水圍Albert Yip 驚喜找到。 (如果唔認識滿庭芳, 其實他們曾經在網上成名一時, 就是當年的Albert Yip 事件, 所以我不以為意地將此酒樓名記為Albert Yip。) 因此這兩年都經常光顧。 此店點心種類繁多, 大多值得一讚。 包點方面, 包皮煙韌,質量十足, 絕非偷工減料的發粉空氣澀口包皮, 而麻蓉包餡料則幼滑兼充滿原粒芝麻, 雙重口感。 最近推出雙色芋蓉包, 外表內涵兼備,不失驚喜。 個人很喜歡吃腸粉, 對上一次吃到好食的, 諷刺地不是在香港,反而是在6年前於英國, 由一對夫妻檔點心師傅手藝上吃到, 可惜自從他倆回中國家鄉後, 從此失去聯絡。當在Albert Yip吃到皮滑彈牙的叉燒腸時, 美味的回憶不禁在腦海中湧現。燒賣用的是切肉,鮮蝦和香菇,彈牙又鮮味,實屬難得。總括而言,Albert Yip點心水準不錯,價錢合理,愛好一盅兩件的朋友不妨一試。…Read More

星期六放假,跟個朋友一起到上環逛逛, 經過孖沙街,我倆都對這條短短的一條街吸引住。有好幾家餐廳,各有特色,最後選了吃日菜---無敵家。 店面的裝修到不差,幾有日本的風情。講回吃的,我點了碗豚骨湯拉麵, 而我朋友就點了串燒定食, 再share一份餃子,溏心蛋和豚角煮。豚骨湯拉麵賣想不差,都幾大碗。他們用了一些紅紅的辣椒絲做裝飾都幾好看。湯底遍為清淡,但仍然能來帶有豬骨湯的鮮味。喝了不會喉乾,那湯應該沒有被味精污染。麪都很爽很有筋度,叉燒不是一般的圓圓薄薄的,而是小塊厚厚的,隱約吃到好像燒肉的烤味。不過到差不多吃完時,覺得湯底好像少了一種味道,就是麻香味,原來調味盤有一瓶芝麻給客人自己家,但我錯過了。溏心蛋是冷serve 的,都好溏心。豚角煮就有點像中式的東波肉,肥而不膩。不想東波肉有八角的香味,豚角煮就比較清新,不濁,吃到日本醬油、味醂和清酒的香。朋友的串燒定食好豐富啊,串燒種類蠻多,而且我試了幾塊,味道幾好。那些漬物單吃就有點鹹,但用來陪飯應該會好吃點。最後, 不得不推薦的是餃子。 餃子煎好香脆,皮薄,餡不油,肉餡好moist, 汁鎖住在肉裏, 但又不會像其他餃子裏面充滿著不知是汁還是油爆汁出來的那款。總之好食,值得試!不過不過,最可惜是午市是沒有串燒和其他燒物order的,試不到想吃的。價錢都算ok, 在中上環地帶不覺得貴。而且菜式和湯底都食得出有用心去煮,所以是值得一試!…Read More
