香箱蟹肉+柚子啫喱+靜岡果茄香箱蟹鮮味相對突出,口感比較豐富,配而柚子啫喱 和 靜岡果茄,整個口感偏向相對清甜清新,作為前菜相當開胃九洲石門鯛+紫蘇花石門鯛油香較為重身,師傅今次用紫蘇花作為配搭並且教我地要將紫蘇花籽先壓一壓 再連石門鯛一齊食。整個感覺好特別,食落去好清新而且仲帶有少少花香味。吞拿魚他他配芽蔥和牛油果吞拿魚他他拌左少許醬汁,牛油果粒 同埋 芽蔥,並且配上薄脆撻皮。三者加埋一齊,口感味道相當豐富,相當熱愛這道菜。北海道(帆立貝+赤貝)北海道赤貝和帶子皇刺身,帶子皇十分鮮甜,可以將橘子片先搽係帶子到再食,味道好清新,而且橘子味唔會搶走帶子既鮮甜,相當開胃。師傅將赤貝切成一串既樣貌,相對易入口,赤貝既鮮甜和香氣相對濃郁,幾岩重口味既人去食。鞍魚魚肝 醃製奈良西瓜第一次試奈良西瓜配搭魚肝,魚肝味道相當鮮甜配上咸咸地既西瓜漬,一甜一咸兩者好搶既味道竟然可以平衡到,濃而不膩白子配辣椒蘿蔔蓉 白子口感綿密,食落口個感覺有啲似海膽,相對creamy,而且師傅在底部擺放昆布,令到白子食落口既時候,都會帶有少少昆布味道,更加帶出白子鮮味熟八魚八爪魚口感軟腍又有鮮味,配上少許芥末,整個口感層次亦都提升左!北海道鰆魚 香煎後鰆魚油脂味更加濃郁,師傅有提及過鰆魚屬於白肉魚類,口感同肉質細嫩,味道較為清淡,反而魚香味會重過同突出過其他魚。Sushi剝皮魚+生魚肝+細蔥 :剝皮魚壽司,配上生魚肝。整個配搭特別,剝皮魚本身既油份幾香,魚肝突出魚肉香濃既味道北海道凹貝(響螺):肉身豐厚,口感柔軟細膩關鯖魚:肉質較為紮實,口感富有彈性,油脂感較為重生八爪魚 岩鹽 柚子:師傅先在八爪魚切幾刀,再淋上岩鹽同柚子汁,口感軟淋,好清新。炙燒梭子魚:師傅在上菜前先火炙過魚身表面,帶出魚油香味同口感,食落口外脆內軟中拖羅+岩鹽:岩鹽配上中拖羅,食落充滿咸鮮味。口感層次好特別海膽:淺橙黃色既海膽,味道濃厚,反而回甘強勁,食落口好鮮甜。師傅都有話冇任何添加劑,極新鮮!食完壽司之後就有一道暖暖嘅魚湯師傅講話,成條魚先烤過再煮湯,所以味道鮮甜而濃郁 豆腐雪榚配oreo餅碎和紫蘇花:清新豆腐味雪榚配上oreo餅碎,令整道甜品口感層次感多左,再配上紫蘇花既花香味,完美地為整個晚餐劃上一個完美既句號…Read More

自從香港通關可以去旅行之後,都少左話食日本菜之類。今次就有朋友介紹在中環九如坊食一間Omakase,環境相對清靜 適合同朋友一齊傾計 而且仲可以欣賞到師傅廚藝手勢。前菜-靜崗蕃茄,松葉蟹肉,魚子醬,海膽前菜亮麗矜貴,用玻璃杯盛載,靜崗蕃茄配搭鮮甜既松葉蟹肉,加上魚子醬及土佐醋啫,在味蕾變化上,酸味比較突出,作為前菜相當醒胃。前菜-合鴨煮合鴨煮即是汁煮鴨肉,店員介紹 廚師用鹿兒島鴨胸 昆布醬油及酒醃味,無諗到廚師會故意保持鴨肉生嫩並且配柚子胡椒、山椒葉及九條蔥,加強左鹹甜對比撞擊既味道。日本九繪魚配蘿蔔蓉日本九繪魚配昆布漬和酸汁、柚子胡椒及蘿蔔蓉,味道帶酸 食落去係有梅子味道,肉質爽口。鰹魚.蘭王蛋豉油漬鰹魚相當肥美,魚味偏濃厚,蛋黃漬非常濃稠、完全係整道業既靈魂所在,而且仲要無蓋過魚味 兩全其美。季節燒物-玉味珍燒這道菜式算係其中一個亮點,師傅燒緊龍蝦肉既時候 已經烤香撲鼻,茄子裡面係有帶子 尖椒 松茸 深海赤肉魚 粟子。整體所有菜都有炭火既香味 原個茄子原皮原整,卻燒至內心的肉全軟,燒功出色。而且整個茄子係可以連皮食!!油物-炸松葉蟹肉忌廉 青椒 魷魚炸丸子內藏蟹肉,味道鮮甜蒸物-宮崎和牛肉涮涮鍋湯底鮮甜 和牛脂肪相當豐富,入口即溶。九品壽司(魷魚 金目鯛 秋刀魚 牡丹蝦 北寄貝 吞拿魚 拖羅 海膽及江戶前玉子)第一次食秋刀魚嘅刺身 食落口感好爽口 魚味特別濃郁 幾特別椀物-麵豉魚鮫湯 魚鮫增添咗湯嘅鮮味甜品 - Creamchesse奶凍 焦糖燉蛋(蘭王蛋)和高山柿 密瓜…Read More

地道韓式燒烤

雖然開咗關,但係作為打工仔 ,邊有咁易請到假去旅行。韓國癮起,唯有搵番間道地嘅韓燒店食啦!一入到去,唔同種類嘅小菜吸引咗我,最基本嘅泡菜、醃蘿蔔、黃豆芽,而且係無限任拎。佢地肉類都有好多唔同部位選擇,揀咗好多人推薦嘅喜來烤肉同護心肉。一search 發現原來護心肉呢個部位好珍貴,隻豬只係有200g。護心肉其實就係佢地橫隔膜同肝之間嘅肌腱,難怪食落去比較有筋道但又好爽口,油脂都比較少。而喜來烤肉就油脂好平均分佈,食落去完全係融化係個口入面。怕唔飽所以嗌咗啲碳水化合物,嗌咗個泡菜煎餅同蟹籽手握飯團。泡菜煎餅香脆得嚟又唔會乾,辣得嚟帶少少泡菜嘅酸味,唔怕愈食愈膩!…Read More

I happened to be around TST last weekend and came across this Japanese restaurant with some history in the town. Without much hesitation, I have decided to pay a visit to it with one of my closest friends. The entrance of the restaurant is surrender by traditionally izakaya design, giving out classy and chill vibes. We were shortly greeted by a friendly waitress who has taken us to our seats. After welcoming us, we were presented with the menu and we decided to order a few popular dishes that we thought would be a good call. We first got the seasonal sashimi plate on the table. It consists of three types of sashimi, each is seasonally, freshly caught, and served. All of them were fresh and thick-cut. Especially the tuna has a very distinctive, fish-oil taste profile. We then were served Japanese fried chicken. Contrary to the Korean style, the Japanese fried chicken is less saucy when compared; it tastes equally, if not better, favored. I guess the chicken has soaked in the favor while being cooked, and so it relies less so on the sauce. The roasted beef salad was unique in the sense that it was a passionate attempt to combine the green and roasted beef in one go - usually, people do it with the chicken. I thought it tasted well, but it would taste significantly better if the beef could be cooled down a bit before putting it on the salad.The toyo roll was kinda Japanese-western fusion, which using the wrap replacing rice. The combination was quite impressive.Also we order a few skewers. They are well-grilled and seasoned. Very juicy!!And we finished with the fish soup udon. It got a attractive visual which the soup looked like creamy and milky. In all, the food was surprisingly tasty. We had about 6 dishes and two drinks. The final bill was slightly over 600 HKD.
