令人難以忘懷既松露餐廳

回想返當年去巴黎旅行公幹,最令人難以忘懷既美食,一定係松露同鵝肝。一知道香港開咗首間artisan de la truffe就急不及待黎回憶。話眀係松露餐廳,所有菜式都會有松露做配料。首先前菜我地叫香煎鴨肝配紅酒蘋果野莓醬松露(Foie Gars poele )一端上枱已經聞到好香既松露同鴨肝,鴨肝肥美入口即溶。好簡單煎香鴨肝兩面,鴨肝底下墊左塊香脆既多士,配埋一齊食非常一絕,鴨肝既油分滲落多士,減低鴨肝既油膩感,加埋松露既香氣,好好味。爽甜既紅酒蘋果同野莓既甜酸,可以清一清味蕾。主菜方面,分別係澳洲M6和牛西冷配松露(Steak de boeuf wagyu)同埋意大利飯配蘑菇松露(Morel mushroom risotto)和牛熟成度剛剛好,牛肉表面佈滿格紋烤得好靚好吸引呀,和牛保留到肉汁同嫩口感,份量亦適中。和牛既肉味加埋松露,做到畫龍點精既效果,另外伴碟同賣相好精緻,係法國菜既一大特色。另外松露意大利飯亦好出色,好creamy,鋪滿大量松露片,飯粒軟硬度適中,食落有咬感。加埋蘑菇既菇香,整體好ok。最後緊係甜品啦,就叫咗法式焦糖燉蛋配松露雪糕(creme brûlée),焦糖面微微金黃色而且脆口,香滑既燉蛋亦有濃郁既雲妮嗱味道,做得好出色。最估唔到嘅係松露片可以配雪糕,好特別而且好味,打破以往既傳統。…Read More
