新年食翻餐勁嘅,由於新年有利是錢,所以決定要食餐好嘅。呢間係灣仔嘅hEat我嚟遲好耐啦,有朋友介紹過,話佢d野好好食,仲話有乾式熟成牛扒。平日自己有時都會煎下牛扒,但都係一般冰鮮嘅,未試過乾式熟成牛扒。講咁耐到底咩叫乾式熟成⋯⋯將牛肉分切後,外表不加包裝,靜置於攝氏0度上下、濕度50~85%的恆溫、恆濕且保持空氣流動的熟成室中,利用牛肉本身的酵素和外在的微生物作用,熟成20~45天不等;在具有紫外線殺菌器的冷藏熟成室。熟成後會提升牛肉嘅鮮甜,肉味更濃郁。唔講咁多⋯⋯呢度地方唔細,空間感十足,入面仲有好多位,我諗如果係度開party一定好正。埋位,大理石紋嘅碟,相當有品味,配搭一本皮面嘅菜牌。好有質感,型格,粗獷。選擇都幾多下。生蠔,來自法國,雖然比較細隻,但好鮮甜,味道好。煮蜆,配法包,蜆好大隻,煮完完全唔會縮,味道亦好鮮味,法包蒜味重,燒完有一陣陣焦香,沾上蜆汁,配合得好有層次。龍蝦🦞,燒嘅,肉質好結實,應該好新鮮,調味適中,帶出到龍蝦嘅鮮味。一流。主角登場,45日乾式熟成嘅肉眼,配兩個汁,係蒜味&橄欖味。個肉眼扒,油脂分佈得都幾多,肉味好香濃,啖啖油香,表皮香脆,簡直係一場盛宴。仲
