To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 元朗,對於好似我呢d九龍人嚟講,真係可以用陌生去形容,除左知道要坐好耐車先去到,其他野真係唔太清楚。印象中幾次入元朗食野,感覺都係"友達以上 ,戀人未滿"。食既餐廳係唔錯,但就無刻骨銘心既感覺。其實一路都知道元朗有一間上左神枱既餐廳,好多元朗人都識,可惜入元朗既次數少得可憐,唔通真係要等到2046先食到?"機會嚟啦飛雲!"唔近地鐵既一間餐廳,餐廳外觀充滿神秘感,雖然係日式風格,但真係唔知裡面咩葫蘆賣咩藥。裡面地方唔大,坐位唔多,唔book位真係恕不招待。餐牌好簡單,廚房發辦。先嚟一個前菜蟹肉柚子蒸蛋,看似普通既蒸蛋裡面真係1d都唔普通。打開蓋先會見到金光閃閃既金薄,即時令蒸蛋升level。再加上蒸蛋裡面有柚子同埋蟹肉,諗到以柚子既味道撞蒸蛋再加上金薄,令食蒸蛋既時候驚喜十足。食刺身之前叫左枝日本酒。其實平時食飯間唔中都會叫下日本酒,但今次特別在佢既斟酒方法。將酒倒入一個好似漏斗即裝置,再用下面既盒載住酒,然後倒入酒杯。刺身只有三種,但全部都好吸引,秋刀魚中拖羅,清酒煮鮑魚,三樣食法各有不同。秋刀魚由於本身魚味重,所以稍加柚子汁已經味道出眾。中拖羅可以配番壽司豉油,本分肉同脂肪比例好好,

清酒煮鮑魚食法最特別,因為呢度配左個以鮑魚膽整成既醬,鮑魚除左爽口之外,配上呢個醬亦令鮑魚味道更加突出。平時食鮑魚多數都唔會配醬汁,咁樣食法都係第一次,耳目一新又出奇地夾。

最後會以呢個鮑魚醬撈飯,形成第二種食法。撈過鮑魚醬之後,整個飯變成好似意大利飯既質感,望落好似好少既飯,食落十分之溜。

壽司有五件,貴精不貴多 。每一件都好新鮮。有石門貝,點紋牡丹蝦,中拖羅,醋鯖魚,油甘魚。

石門貝仲活生生識郁,用筷子掂佢會有反應 。

點紋牡丹蝦壽司既牡丹蝦多肉又爽口。

中拖羅壽司雖然無中拖羅刺身咁澎湃既感覺,但食落絕對不比中拖羅刺身遜色。

醋鯖魚壽司師傅細心咁配上昆布,緩減鯖魚既腥味,食既時候令醋鯖魚既魚味得以平衡。

另外仲有油甘魚壽司

天婦羅帶子

就咁睇你未必一下子就估到佢係炸天婦羅帶子。大大粒既炸帶子,一口都食唔晒。入口外脆內軟,啖啖肉,炸粉亦唔過火,同時紫菜又係脆脆脆。

白身魚手卷,望住佢我第一個關注既並唔係手卷裡面既係咩,而係包住手卷既紫菜究竟係咪脆,因為對於咁大條既手卷,如果紫菜淋左,一定先扣50分。果然無令我失望,紫菜脆口,白魚味道都能夠突出,無比紫菜味蓋過。

最後食埋佢既甜品 - 靜岡密瓜,又係一個季節性既甜品,又係一個特別既食法。店員會以一枝噴霧,將白蘭地噴上哈蜜瓜。店員解釋呢個食法可以令到哈蜜瓜既味道更突出,而且食落都唔係好覺有白蘭地味。

所謂聞名不如見面,今日係鮨文的國度,實在令我大開眼界。

原來元朗呢個地方真係臥虎藏龍,抵你上神枱!
