【Aged Quail】香芹根泥/沙嗲酱
沙嗲酱在桌边浇上,别看小小几勺,落在味蕾的瞬间迅速放大浓缩了很多倍的鲜味,浓厚的花生香气与浓稠质地相呼应。这里的沙嗲酱出乎意料有点重口,辣度吊得很深,随鲜味在嘴里伴随始终。Sides是藕甜藕甜的香芹根泥和清新的酸奶洋葱,恰到好处的平衡和清口。

鸽胸熟成一周,吃起来幼嫩多汁、肉质紧致,小心包裹着它的是鸽腿肉做的肉派,煎出几分诱人的焦色,厚蛋烧一样的弹润口感非常特别。难忘的一鸽两吃,造型也很优雅,唯一不足就是鸽子本身的咸鲜有点被浓郁的沙嗲酱掩盖。

【Dry Curry Laksa Mee】日本对虾/参巴酱
不是第一次吃干拌叻沙,但这是第一次吃到干叻沙用的是laksa leaf(参巴叶)制作的面条!颜色有点像海藻面,碱味略重,根根爽弹。

拌面的是咖喱喇沙虾酱,趁着一口热气腾腾,迸发出浓郁咸鲜的发酵香气。单独配一小碟参巴辣椒酱,我觉得不太辣,更多是油润滋香。香酥的南丫岛虾干黏上面条,口感很销魂。

【Pandan Chiffon Cake】开心果冰淇淋/椰糖卡仕达
斑斓戚风虽然元素不复杂,但味型清晰,层次丰富又融洽,所以好吃。蛋糕体润泽绵密,蓬松的质地海绵般地汲取着冰淇淋融化后的甜蜜,底层铺满酥脆的开心果碎粒,痛快挖起冰冰凉一大勺,甜品师也是懂口感叠加的。

【Mignardises】
迷你玛德琳揉合了坚果碎,姜味平衡了甜味,黑蒜酱夹心巧克力花纹很美,但蒜味没怎么感觉出来。

年轻的Chef态度比其他人都要好,餐毕后鞠躬送到电梯口。细节做得不错,但每两道菜间隔时间过长。环境主打一个优雅和幽静,氛围还是比较轻松,不过光线略暗。
