To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 脆薄雞皮片片相疊,紅亮誘人,鹹香飄逸,連帶著晶瑩雞油,齒頰留香
而且鹹度合宜,負擔不重,配著透薄濕潤的卷皮,煙韌而不漏醬餡,亦稍減膩感
相對於同樣是片皮食,我最喜愛的北京烤鴨,片皮雞少分膻味,油香更加濃郁

生菜包雞鬆 Sauteed Minced Chicken Meat with Chinese Lettuce Wrap
一雞二吃,延續肉脂香味,加入蔥花及果仁碎,換個方式烹調就呈現了別樣的感覺
雞鬆不會過乾而涸喉,滲有淡淡的甜味,用生菜包起平衡調味,食感清爽

香芒糯米卷 Chilled Mango Glutinous Rolls
糯米皮軟糯細緻不黏牙,緊實裹起芒果,挾起亦不會金蟬脫殼
芒果肉厚無筋,清甜多汁,不是催熟的乸口甜味,配合椰絲淡香更有熱帶風情

蛋白杏仁茶湯丸 Almond Cream with Egg White and Glutinous Dumplings
雖然此行未有再會杏汁湯,但透過甜品也得償所願嚐到陣陣杏香
內附一口芝麻湯丸,外皮完整不爛,餡心未有澎湃流沙,不過不失
