職業關係我常有相機在身,隨時作工作紀錄亦隨心記下週邊點滴,當然現在手機拍攝功能也很勵害,不過個人比較老派,還是喜歡單反的光學原理.拍攝食物照,速度要快,避免食物放涼,和儘量不影響其他食客,亦因此較少拍攝環境照,好的照片不單捕捉到歡樂時刻,有時候簡直能將佳餚味道凝固下來,重看也彷彿嗅到令人垂涎的香味.跟友人到Flint晚飯,我們吃得早,到埗時天色泛藍還沒有暗下來,客人不多,對若干朋友來説可能剛剛下午茶完畢正在伸懶腰.我們先點了礦泉水和白酒De Martino Sauvignon Blanc.再慢慢細選餐點.頭盤分別如下:{Flint's Signature Tableside Ahi Tuna Tartare}侍者將盛有各式材料的trolley推到客人跟前,稍作介紹後因應需求將食材混拌,然後放在盛満碎冰玻璃器皿上,黃鰭金槍魚,牛油果,蔥粒,酸薑,跟譽為"lime caviar"原產澳洲的Finger Lime搾汁與芝麻醬各味道層層叠叠,襯以紫菜脆餅,口感渾然天成,每一口都儼如滿載海洋味道.{David Hervé Oyster Ceviche}半打

半打歐洲生𧐢面淋以鮮茄油醋汁,𧐢隻個別比較瘦弱,好像餓了幾天似的,若然夠肥美,添上少許檸檬汁已足夠矣,不過現在添味增香也不賴.

10oz肉眼扒伴以焗蒜頭和Old Bay洋蔥圈,西洋菜及牛扒汁,牛扒煎烤技巧不容置疑,Flint一向水準穩定,炸洋蔥圈以Old Bay Seasonings調味,加入啤酒batter講求light和效果要crispy,論質感炸漿比夠厚不失個性,可能店方要的效果就是這樣.
