To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 今天要介绍的是坐落在铜锣湾闹市的太湖,分电梯一开,一副90年代香港茶楼的样子。大部分都是熟客,洋洋洒洒一大家子的温馨。因为人多,就将点菜的重任交到餐厅领班的手上。以下就细数一下热情领班推荐的硬菜。冬瓜盅:采用传统做法,半只冬瓜切开,将鲜虾,竹笙,冬瓜肉放入挖空的冬瓜里面,煲煮,消暑去水腫,口感清甜不腻。三弄回味牛肉:用鹵,炸,澆汁三种手法操作,濃郁的滷水滋味,炸過之後外面一層皮有點脆脆的,澆上濃汁。感覺很像大塊,外焦裡嫩的牛肉乾(片),少辣。大鲍鱼:鲍鱼就不多说了,新鲜,味道均匀的分布到鲍鱼的每个角落,弹牙带有胶质。暴雪藏龍:也就是斑球蒸蛋白。重点不止在魚🐟,蒸蛋白也平分秋色。蒸蛋白显嫩火候掌握得很好,充裕着浓浓的魚鲜。斑球被蛋白煨煮,肉質不會變硬,非常嬌嫩,薄薄的魚皮厚厚的魚胶轻轻的粘住嘴唇。海鲜餐厅不可少的主力担当:粉丝蛏子,这道菜说简单也不简单,要求颇多。粉丝不能太多抢了蛏子的风头,蛏子要新鲜,清甜,肉肥,沙子要吐干净,打开外壳的时候不能弄碎了。多方面考虑又要迅速呈上,也是对师傅功力的考验。炒飯:一部分米飯是炸過的,香脆,大號的蝦米和葱花满口留香。性价比非常高的一家酒家,看得出师
