順德,又有漁米之鄉之稱,獨有的地理優勢令河鮮盛產,也就得來不少河鮮名菜。他們用最平凡及家常的材料,炮製出一道道不平凡又風味十足的美食來。說菜式簡單卻不是,講求大廚的功夫及廚藝,好像是炒鮮奶,原料鮮奶及蛋白,炒得過火蛋會老,控制得不好很易焦,所以要做到軟、嫩又滑是絕不容易。早前,收到了天際萬豪酒店的邀請前來試試他們新推出的順德菜,並於客席主廚餐宴Chef Guest Table上供應,這次更與Portrait Winemaker & Distillers合作,來個順德菜與酒的配對,實在是新鮮又特別的體驗。三色拼冷盤,有順德煎魚餅,冰鎮百靈菇拼海蜇。順德鯪魚產量豐富,居民喜愛把鯪魚起肉再打成鯪魚餅,魚餅表面煎得微脆,又彈牙,跟上還有一點炸紫薑。而海蜇爽口,冰鎮百靈菇肉質爽而滑,伴上芥末豉油,少許辛辣,不太刺激,味道不錯。這頭盤跟了Farm girl Syrah Rose,2009,果味香濃,口感較乾身,感覺清爽,配合起來溫和。淮杞螺頭燉竹絲雞,燉湯清澈見底,味道香濃,螺味甘甜,也有雞肉鮮味,感覺十分滋潤,十分愛喝湯水。喝湯同時,來一杯Belle Racer Sauvignon Blanc,

淮杞螺頭燉竹絲雞,燉湯清澈見底,味道香濃,螺味甘甜,也有雞肉鮮味,感覺十分滋潤,十分愛喝湯水。喝湯同時,來一杯Belle Racer Sauvignon Blanc,2011,它的味道不太酸亦不太搶,沒有把湯味覆蓋了。

生啫魚雲煲,個人一向少吃魚雲,因很怕吃到很腥的味道,但這個魚雲煲卻令人吃得津津樂道。以小瓦煲奉上,並加了小火保溫,以免魚雲快涼後變腥。用了大量蒜及薑來炒魚雲,味道十分香,既沒有泥味,入口又惹味,魚雲膠質豐富,黏著口的,十分滑溜,很好吃。

大良炒鮮奶,鮮奶炒得十分嫩滑,光亮潔白,淡淡奶香,蝦仁爽口味鮮,加入了少許炸江西米絲,又帶來點咬口,吃得很滋味。魚雲及炒鮮奶都配上Debutante Melange,2009,這酒入口順滑,帶點梨香,與海鮮味道相夾。

順德煎排骨,排骨煎得香口,肉質不會韌,不太油膩,亦不會乾身,吃下還有點肉汗,味道香濃,排骨跟上的是Chorus Girl Grenache,2010。

生啫薑蔥雞煲配絲苗白飯,生啫時令菜煲,雞件以薑蔥及蒜頭來炒,香氣十足。雞肉入味,肉質嫩而不精糙,加上菜及白飯,吃得很飽。這主菜跟了兩款酒,Grand Reserve Cabernet Sauvignon,2009及Aviator Meritage,2009。

最後甜品是薑汁撞奶,薑汁味道不太明顯,如喝口酒,好像更把薑味蓋過。但奶是很滑,如薑味可以再濃一點就好吃。跟上的是Ringmaster Riesling Icewine,2010,入口非常香甜,最令我喜愛的口味。

這晚的六道菜,真的令人吃得很飽,個人特別喜愛生啫魚雲煲。看看價錢每位不配酒是$365,如配酒則另加$338。而每晚只會做一檯客席主廚餐宴Chef Guest Table,有興趣的朋友也要提早預訂。
