上一次來已經是幾年前的事了,上次也是跟飯局而來,事隔多年再來光臨,仍然對其蔗蝦、牛河等美食有極深印象。還記得幾個月前朋友問起那裡有比較高檔、環境舒適的越南餐廳,我第一時間就想到這裡,因為位於酒店的法式越南料理,在香港真的很少。餐廳的樓底極高,位於酒店中庭,差不多有八層樓高,感覺寬敞開揚,柔和的燈光伴著淙淙的流水聲,還有樓下傳來的Live band唱的流行音樂,頗有度假的感覺。西貢春卷。用新鮮生菜包著炸成金黃色的春卷,春卷裡有紅蘿蔔絲、粉絲、芋頭絲,配著特製魚露伴吃,絕對是一道香脆可口的小食。堤岸蔗蝦。 有說蔗蝦是由潮州人帶過去的,不過現在就成了其中一種越南代表食物。把蝦膠卷著新鮮的甘蔗再拿去煎,啖啖鮮美彈牙的蝦肉,帶出淡淡的香茅味和甘蔗的甜味, 好吃!燒豬柳米紙卷。米紙卷裡除了豬柳,還加入了九層塔,吃之前醮一些魚露,一件一口,簡單美味;越南蝦多士。多士炸得超脆,一點也不油膩,上面鋪著好像 一座小山丘的蝦膠,蝦肉比蔗蝦的更彈牙!越式牙車快沙律。是很傳統的越南沙律,材料有雞絲、椰菜絲、紫洋蔥等等,口感爽脆,味道清新,在吃完蔗蝦、多士後 清一下味蕾就最好不過。美酒火焰燒鵪鶉。選用來自法國的鵪

美酒火焰燒鵪鶉。選用來自法國的鵪鶉,侍應會在席前淋上Rum酒點火,好將鵪鶉的肉汁鎖住。 鵪鶉肉質軟腍,帶Rum味的甜味,用火烤過更帶焦香。

香茅鮮茄牛尾煲伴蒜蓉包。用砂鍋上桌的牛尾煲,熱度很夠,牛尾炆得夠腍夠入味 , 蕃茄醬汁非常濃郁,完全滲進了牛尾裡面,煮過的車厘茄也鮮甜多汁,另外一客有四件的蒜蓉包也想追加,因為丁點醬汁都不想浪費,所以有食友額外點了白飯配醬汁一起吃。

海鮮糯米飯。一上檯就聞到很香的蒜蓉味,海鮮配料有魷魚、蝦和帶子,糯米飯加入了蟹羔去炒,雖然未算炒得很乾身,但勝在材料豐富。

越南生熟牛肉、牛筋湯金邊粉。牛河最重要就是湯夠熱,這裡就完全做到。牛味湯底濃郁不油膩,除了生熟牛肉和牛筋,還有牛丸、蘿蔔、牛柏葉, 整體上不錯,只是略嫌鹹了一點。

海鮮蕃茄湯米線。湯底紅通通,濃濃的蕃茄湯滲出陣陣蟹肉鮮味,其實蕃茄湯才是這碗米線的主角,所以就算吃不完米線也要把湯喝完。

香芒涼粉。特別之處是糖水裡加入了一點鹽,味道獨得,而且吃起來也沒那麼甜,大口大口的吃著切成小粒的涼粉和芒果,滿足!

多年沒來水準依然,能一直保持水準實在不易,而且香港較少有這種精緻的法式越菜,吃慣了粗獷派的傳統越菜,不妨來這裡試試吧!
