先來冷的海蜇頭,產自浙江省直核市舟山,擺在眼前是葵花部分,是稀有的水母口部,活動多所以特別爽口,廚師處理得夠涼亦爽脆,不難消化,連我也可吃上幾片。涼菜在當地不乏熱吃的,如這道熗虎尾做得爽滑亦保留著黃鱔的鮮味,昔日在紫玉蘭嘗過原條上做法,風味遠不及只取最嫩的魚尾雋永。
