🥩The "Tartare”
呢款以「沙爹牛肉米粉」做靈感,用鹿兒島A4和牛製作的牛肉他他,加入微辣嘅沙爹味汁,搭配鵪鶉蛋和魚子醬,味道好豐富!師傅將米粉blend左變成漿,再炸成薄脆,用嚟配和牛他他一啖食入口,感覺好新奇,係法式沙爹牛肉米粉呀!


🐥Pigeon
用低溫慢煮法製作嘅乳鴿胸肉保留咗肉汁,口感嫩滑多汁,而外皮煎到香脆。配上烏梅汁和淮鹽,香酸甜鹹,非常衝擊味蕾!炸春卷包住油封鴨腿肉同鴨肝醬,入口鴨肝味香濃,炸得乾身唔油膩。


✨Main
🥩The "Wagyu" Wellington
香港街頭美食「柱侯牛腩蘿蔔」為靈感,用柱侯醬將和牛頸脊碎炒香,做包煮牛肉嘅醬汁。用酥皮包住包心菜、醬汁同和牛肩肉,焗至金黃酥脆。和牛肩肉油脂香十足,入口即化。而旁邊嘅大根清甜無渣,搭配脆片牛根分子料理,獨特而美味!


🐙Octopus
八爪魚以叉燒汁炭燒,燒製過程中吸收了叉燒汁,而下面嘅小米係椰菜花切碎成粒,搭配叉燒汁燒製嘅八爪魚,好似食緊法式嘅叉燒飯咁!


✨Dessert
🍞French Toast
呢樣甜品係奶醬多配鴛鴦,又係好特別嘅玩法!法蘭西多士用傳統做法,唔係炸,而係煎同焗,所以係超級soft同軟滑,而且仲係流心㖭!而西多個面係搽左花生醬成為奶醬多,哈哈。中間有一球奶茶雪糕,配上咖啡粉,mix 左就成為鴛鴦!


🍫Chocolate Choux
我諗大家都應該係茶餐廳食過波蘿包同飲過黑牛,但係法國餐嘅甜品出現呢兩樣東西又真係好奇妙!用泡芙加上波蘿皮去焗,再中間夾住朱古力雪糕,低下係用可樂做成嘅Gel,配合就成為左黑牛。
