作為城市人生活緊張,有壓力,有時候找一間舒服的餐廳,吃吃美食,已經是十分美好的事情,除了最近到訪了一間位於旺角的cafe,甚有後花園的感覺外,還有這間— Maison ES。作為花花控,在Maison ES的那分柔和感和花花的夢幻,是連同行的朋友們也大讚喔!跟朋友們於平日的晚上到訪,悠閒的吃吃$998的Le Shanghaïen四道菜晚餐~Baby Beet這是為火箭菜、藜麥、沙葛和芝麻細的組合,味道合乎預期,以fine dinning來說賣相方面是可以再加強呢~The Not-So-Shanghaines Foie Gras Shangai Wantons當晚最喜歡的該是這個雲吞吧,該是個fusion的菜式,餃子皮內是飽滿的鵝肝,來得動人。Melting Onion Quail這是一個頗有實力的主菜既有脆身的質感,也有那嫰滑的肉~Edamame主打的該是那一顆顆的意式小麵糰,還有已經切成片狀的小紅蘿蔔,是清新的。Dutch Veal Cheek這個牛面頰肉賣相是很好的,假如味道稍為淡身一點定會附合大眾化的口味呢~Dessert Surprise甜品方面質素是穩定的~ 該是抹茶好味的芝士蛋糕,配上半碟的水果有點少女的夢幻感。環境優雅,該特別適合愉虐閨蜜聚會,個人覺得價錢定位是有點點進取的...食物方面也有更好的進步空間。聽說有另一個tasting menu是會更好吃的呢,那就有待大家發掘了~Maison ES continue reading

對Maison ES的認知僅止於網絡上的資訊,法式,花草,少女味十足 也正因如此,一直覺得與自己的取向有異,所之未曾將其列入To Eat清單之上 直至某夜親身到訪,與預想的粉紅奶白配色完全不同,一問至知數月前經歷大翻新 裝潢保留法式風情,毅然不走原有的粉色花草調調,換上較為大眾化的面孔 最近推出的特色餐牌是用以紀念創辦人Chef Tata, Esther Sham踏足飲食業十週年 首波Japanese Tasting Menu限定供應至4月22日,$688(四道菜) $988(六道菜) 當中有來自Ta Pantry,即Chef Tata起家的私房菜餐廳的人氣菜式,更具意義 以Hokkaido Scallop Ceviche打響頭炮,北海道貝肉質嫩滑不韌,味道清甜溫和 得到三文魚子的一點鹹鮮作對比,加上柚子蜜糖醬汁締造Ceviche的開胃酸感 另有甜粟、水菜及秋葵等蔬食點綴,整體輕盈無膩,並且讓人意猶未盡 Foie Gras Tamago Custard with Asian Mushrooms賣相讓人想起cappuccino 鵝肝泡沫香氣意外地濃郁到位,吃起來夠味但又比直接品嚐鵝肝來得少點脂感膩意 蒸蛋紥實帶蛋香,唯底部氣泡較大,幸未算鞋口,伴上入味甜美的菇菌可謂畫龍點睛 打從在葡萄牙回來後似乎沒有吃過馬介休,一味Bacalaos Confit喚醒回憶 店方即席澆上熱香高湯。湯品本已有濃郁魚鮮鹹香,相配之下鮮美盡現 鹽醃鱈魚自帶鹹香,加上鋪面的香口蒜碎很惹味,搭一片微脆魚皮,更有特色 Uni Spaghetti少有地以乾爽炒意粉伴海膽,不像坊間常見加入厚滑忌廉拌醬的成品 食感自然清新得多,而意粉每條都煙煙韌韌,也不會過於油膩 調味頗甜,有幾分味醂醬油的感覺,添上紫菜碎更有日式風味,喜愛與否就看個人口味 Grilled USDA Prime Short Ribs的擺盤無疑有著小心機,如此粉嫩,叫人食指大動 外表烤至微焦,帶香又不燶苦,肉間大理石紋理無聲顯現其肥美狀態,香口好嚼 牛香不膻,調味偏甜,友人說它似叉燒也是有因的,多吃易滯(圖中為兩人份) 幸好雖然配菜烤南瓜及菠菜等均帶甜,但滲有微微辣味,刺激味蕾,解救膩感 迎來Dessert Surprise及Petit Four,然而一頓下來已甚豐盛,友人都幾乎要投降 前者是薄脆有致的千層酥,夾有滑稠吉士餡,甜度恰到好處 而Petit Four就顯得濃重些少,但這是朱古力啊,割捨不了,好在只是一口大小不飽滯 continue reading

十年,人生有很多,不過,十年可以成就的事,不是個個有很多。 歌手會搞場演唱會,公司會為你食餐飯送個金牌,老婆會和你慶祝你做到個好老公,如果入廚十周年,言簡意賅,要慶祝就一定係準備一個特別的餐單吧。 Esther Sham在主理了Masion ES一段時間,這位於星街的法國餐廳一直很受拍拖的人士歡迎,今年剛剛是Esther入廚十周年,佢就為左呢件事準備左個非常受歡迎的六道菜晚餐。 六道菜的晚餐,你以為這些西餐一定會貴夾唔飽而且味道普通,我告訴,是絕對令你有驚喜,就算拍拖黎食都一定會食得飽。 餐廳的環境是典型的法國式溫婉細膩,女孩必定會愛上的,男孩們愛不愛沒所謂,最重要是身邊的女士喜歡。 先來杯醒胃的cocktai l,清酒margarita,聽到知道有親奇色彩,配合那杯邊的鹽,更顯味覺特別,兩者配合得剛剛好。 前菜係北海道帶子,你以為是簡單的一件帶子加點醬汁俾你食? 當然不是,一眾配角如栗米,秋葵,柚子啫喱和三文魚籽,加上那裝飾的水菜,整體感覺很清新脫俗,非簡單一種味令整個菜式不同,女人的角度,總是帶點不同。 然後是一個魔術表現,你看似是湯品但原來佢係一個鵝肝蒸蛋,當你去欣賞這個蒸蛋的時候,吃不到一口一口的鵝肝,但在吃那蛋的感覺,除了那口菇和實在的蛋外,你從來沒吃過實在一塊鵝肝,原來佢幻化成那泡沫為了添上味覺,完全想像不到的驚喜。 之後另一精緻又令人驚豔的佳餚,那道Bacalaos絕對是全晚的驚喜,以大件的鱈魚肉配上那帶濃郁的湯品,配合蜆肉,做出的湯是非常獨特,而其魚肉之鮮甜也無法挑剔,比剛剛的蒸蛋是更大驚喜。 可能你吃過海膽意粉都是比較濕和充滿creamy風格的,不過這裡吃到的卻是沸騰的鑊氣,每條意粉都是乾身而帶有生氣和力量,那件海膽的味道和那意粉渾然天成,我包保你未曾吃過這味道的海膽意粉。 我想然後的USDA prime short rib都是男人的世界吧,如果是肚子較小的女孩應該吃不了這道菜,short rib燒得是非常嫩滑的粉紅,最重要先得香而溫度質感都是剛剛好,牛肉的味濃得叫人欲罷不能,最重要另外上的配菜已甜甜的蜜糖南瓜帶點辣的菠菜,中和了整個口感,成個經歷更豐富。 最後的甜品上相對前段對比,對我來講就沒有這麼大的吸引力,但吃下去也是精品,只不過太飽吃不了太多欣賞不了甜品的美。 這樣很容易可以感受到Esther這10年的心血應該可以說是超值來形容,聽說這個餐單會供應到今個月的22號,如果你之前曾經在這裏有個美麗的晚餐回憶,或者很懷念Ta pantry 的名品,來打個電話,就可以用一晚來感受到十年飲食的一個小總結,來給味蕾來個震動。 continue reading

傳說中的 Maison ES ,表裏一致完全是一位女生,女性化的佈置配合脫俗的菜式,來到門前,依稀感受到。 位於星街橫巷近盡頭,與鄰居並肩自成一角,門外單車及花卉佈置,給予我的感覺如一個歐式的家。 店內裝潢簡約輕巧,天花的仿蠟燭水晶燈燿目,但沒有想像中的女性化。 坐下先來一杯清新的餐前飲品,Sake & Margarita 的混合,玫瑰花瓣碎漂釀在雞尾酒中,令我想起 spa,喝一口,冰涼清甜,與杯邊的鹽粒兩極衝擊,若然天氣悶熱,這一杯必能即時解暑減累。 老闆兼主廚 Esther Sham 就是店名 ES 的由來,Maison 是家的意思,所以今晚我們就是來到 Esther 的家,她亦正是由私房菜開始,與其他人分享自己喜歡的菜色。 今年正好是 Esther 變身為女廚的第十個年頭,因此,她刻意把當年的私房菜招牌菜式列在餐單上,10th Anniversary Tasting Menu by Chef Tata 既然遇上,我們順應點選。 先來的餐前麵包,我覺得比較普通,沒有不妥,只是無謂花 quota,留位更精彩的。Hokkaido Scallops 女仔就是喜歡靚,亦喜歡繽紛,同時又要內斂, 這一道菜正正反影了這個矛盾。 撥開面頭的水菜,北海道帶子同伴眾多,有晶瑩的三文魚子、爽甜的粟米粒及健康的秋葵,再配合香酸醒神的柚子啫喱,多元化的清新組合,豐富不繁複。 北海道帶子,刺身的質素,非常鮮甜香嫩,真是一道完全符合女生要求的前菜。 Foie Gras Tamago Custard 接下來的,很容易被泡沫誤導,疑似一道湯,但卻是個蒸蛋。 別在蛋內尋鵝肝,魔法女廚已把鵝肝化成泡沫,吃到的只有味道豐富的菇菌及香滑的蒸蛋,但同時又滲透出霸氣的鵝肝豐腴感。 本來分子料理的泡沫,今時今日已經不是什麼新鮮事,但配合得宜,依然有點不平凡,無需吃進肥膩質感的食物,卻又可有豐腴的滿足口感,不就是我們修身一族的願望嗎! Bacalaos 葡萄牙鱈魚,肉質肥美滑溜,帶着濃郁的鹹香,正好配合鮮甜無比的海鮮湯。 欣賞魚肉上鋪滿的蒜粒,尤其已經煎至金黃焦香,但我不喜歡魚肉太鹹,對我來說大打折扣。 海鮮湯非常鮮甜這個追回不少分,還有一些美味蜆仔,增層次。Uni Spaghetti 別於一般 Carbonara 做法,這個醬汁完全沒有忌廉,意麵是用油炒的,炒得頗香,混合紫菜及海膽刺身吃,味道鮮美香甜,中西糅合的精品。 USDA Prime Short Rib 煎至粉紅半熟的美國頂級牛肋肉,以鋼網及熱石保暖著,是心思的安排。 牛肉香嫩肥美,脂肪比例吸引,但我覺得過生了點,口感有些韌,如果這是 medium rare,稍為熟一點 medium 會更好。Desserts 吉士脆餅誘惑。 吃得出是女廚的心思,輕描淡寫的魔法令菜式輕盈漂亮,並不驚為天人,但脫俗不凡,不妨一試。 continue reading

Maison ES is led by Esther Sham more popularly known as Chef TATA.The 6-COURSE TASTING MENU I had is available until the end of this month which has been created to celebrate her 10th year at Maison ES.This restaurant is tucked away behind Star Street with beautiful French Vintage decor which makes it a perfect get away from the city.I was quite impressed by the experience because every course was well executed.We were a table of 12 and considering there were so many of us, everyone's dish was still hot and we all got them at the same time.Here was the [6-COURSE TASTING MENU]+++Started with the [HOKKAIDO SCALLOP ceviche] topped with salmon roe, sweet corn, okra, mizuna and honey yuzu dressing.Dinner started off well with this ceviche because everything tasted in harmony, especially the sweetcorn puree which was really comforting and the sweetcorn pieces which were a bit like Mexican corn while the okra added the charred taste to the whole thing and the silky scallops.+++FOIE GRAS TAMAGO CUSTARD with Asian mushroomsSteamed egg and foie gras sounds heavy but the foie gras has been turned into foam which turns into liquid when you spoon the egg hence every spoonful is infused with foiegras and the earthy mushrooms on top makes it even more delicious.***BACALAOS confit served with chorizo garlic crumbs, clams, steamy dashi fish broth & charred spring onion oilFor this dish, I like the way they have selected Bacalaos which is a slightly salted fish topped with crispy chorizo garlic crumbs and surrounded in a clams fish broth. Hence strong flavours here.The crispy fish skin is real good!***UNI SPAGHETTI topped with noriUnlike other pastas, this one is not creamy, again rich flavours in play here.I think I could taste ground dried scallops as something made it quite sweet.***USDA PRIME SHORT RIB grilled served on hot spring stone with acacia honey roasted pumpkin & spicy nanami spinachAlthough, the beef was the star of the show, the vegetables were just as good because the spinach was really flavourful with a hint of spiciness and the pumpkin was out of this world.I have never tasted pumpkin as delicious as this because it was so soft that it just melted in your mouth and there were other flavours infused in the pumpkin.***DESSERT SURPRISE:Finished with the dessert which was a great ending.I would definitely recommend this place as all the courses were fantastic. continue reading
