To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 我平常很喜歡到上水的潮江春吃晚飯,因為環境真的很棒,地方寬敞而且裝潢偏向西式豪華設計。而且這是一間吃潮州菜的餐廳呢,平時吃潮州菜都是想起打冷舖,能在這麼優雅的地方吃潮州菜,真的是享受~這天我跟男友二人來潮江春吃晚飯,店內客人不算多,店員先奉上功夫茶,男友很愛,但我就覺得很苦。再來是每檯一定會有的開胃前菜,我很喜歡這酸菜,帶點微辣又酸度適中,真的很開胃。而且還有青瓜、木耳及花生。這道是我們每次必點的菜式 - 方魚炒芥蘭,方魚即是大地魚乾,味道很濃郁而且帶有大地魚的鮮咸香味,而且芥蘭處理的很好,沒有苦澀味,很清甜。方魚拌炒爽脆的芥蘭,將咸香味注入每條芥蘭,將鮮甜味更加提升。我最愛的香煎小黃魚(2條起),每次在上海菜館或潮州菜館都一定會點的菜式,因為將小黃魚的外皮炸得香脆,但內裡魚的肉質纖維依然保持細緻嫩滑,魚肉肉汁更是鮮甜,潮江春處理的也不錯,所以也是值得推薦的菜色。吃潮洲菜怎少得了「滷水鵝肉」呢~這個鵝肉跟鵝片是不一樣的,每塊鵝肉都是啖啖肉,而滷得相當入味,而且連墊底的豆腐亦嫩滑入味。他們的鯊魚湯魚蛋河粉亦相當好味,湯底充滿魚的鮮甜味,而且已經煮成奶白色,可見湯底相當濃郁。魚片及白魚蛋亦
