To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 到荃灣「潮江春」食滷水是常識吧。我今年去了很多間美心食府,最欣賞就是「潮江春」,因為她們的製作有潮州特色之餘,又配合香港人口味,所以特別出色。「潮江春」的蠔仔粥, 不像廣東粥那種綿綿質感, 潮州粥就是最適合 我這種不喜歡煲至綿爛口感的人.... 粥內的蠔肉, 體形雖然不大, 但外表飽滿, 食落鮮甜嫩滑, 也放得份量頗多, 伴以肉碎、、葱花, 足料鮮味. 我們兩人各食了四碗,對於無粥不歡的我是滿足。滷水鵝, 滷水是靈魂, 如酒一樣是陳年佳釀, 每天加入配料, 浸鵝同時也吸收鵝肉味道, 經年累月, 是精華,「潮江春」的滷水鵝食出有滷水的芳香, 而且鵝是新鮮熱辣... 雞有雞味, 鵝有鵝味....是常識吧, 但滷水鵝有鵝味呢? 似乎難度高一點, 滷水鵝要做得有鵝味...又有滷水味, 的確難度...., 她們的滷水不是太鹹, 所以不會蓋過鵝的味道, 滷水雖然略淡, 但不失清香, 鵝味與滷水味, 完全平衡。我特別欣賞鵝肉,美味肉厚, 肉質嫩滑也帶嚼口, 伴碟的滷豆腐也夠淋夠滑, 非常好滿意吧!
