福建炸雞卷同土筍凍,聽就聽得多,香港比較少地方有得食嘅,有一晚行北角發現呢間野,仲要10蚊件土筍凍咁平,就梗係入去試吓。原來佢個形狀成舊砵仔糕咁,又整得幾有喜感,我諗其他地方嘅土筍凍唔係呢個形狀?其實成舊野係冇乜味嘅啫喱黎,靠少少醋黎提味(果然係冷盤吓),啲土筍口感似蜆肉,有好輕微嘅腥味啦,唔算係好食,但都過得去。雞卷真係有啲失望,其實只係肉碎撈馬蹄做餡嘅炸物黎,都足料嘅,不過口感唔豐富,食完會覺得酒樓嘅雞絲炸春卷先至係王道。反而因為想試多樣野,而同雞卷做雙拼嘅炸醋肉係幾特別。佢有啲似上海排骨嘅做法,但上海排骨咸而炸醋肉酸,醋味其實好中和到食炸物嘅膩感,所以食落幾清新。我諗如果可以同上海排骨撈埋黎食就好玩喇。最後嗌多個大路嘅炒粉絲做主食,炒得算有鑊氣,但都係唔夠味,要撈啲豆辦醬先好食,可能呢間野整體都係走清淡路線啦。
