食左羲和雅苑既烤鴨差唔多十次,期間試過古🎹雅苑,城&美中🦆子,仲有其他酒樓既烤鴨,但都係羲和雅苑最得我心,會心思思想再食,主要係佢既食法糅合左傳統同新派食法,傳統美食得以傳承同時為食材帶黎新鮮感。作為羲和三寶之狀元——烤鴨係每次必食之選「會跳舞的烤鴨」:可以一鴨三食,第一食係鴨胸皮點藍莓醬同爆炸糖,香酥既鴨胸皮加上藍莓醬爆炸糖,微酸中帶甜又有咬口,好啱做前菜。第三食既鴨腿肉肥美鴨香濃,唔會好似好多酒樓既烤鴨有騷味脂肪會食到好膩。傳統食法青瓜絲、京蔥絲、甜麵醬,口味大眾化,好味冇得輸。個人鍾意新派食法,山楂條、紫洋蔥、藍莓醬,酸甜味提升鴨既香味。第二食鴨胸肉配酸中帶甜既秘製黃芥末,同樣係頭盤開胃菜之選。探花——獅子球以前食過,肉質嫩滑鎖住肉汁,係送飯之選。下次要試埋榜眼——黃扒魚肚😆
