黨參北芪燉羊頸湯

因為母親煲湯有一手,不時會對應體質煲出五花八門的老火湯,潛移默化下,令自己對湯的要求高了。

羊肉煲湯,也許會令人覺得太羶,但今次配合了石斛、黨參及北芪清燉4小時以上,湯色依然清澈見底,加入了蘿蔔片,用來吸走多餘的油份,更是神來之筆,每口都充滿了肉味與及藥材的幽香,用時間換來的味道,真是偷懶半分也不成。

賞心蝦球

選用新鮮褪殼的大虎蝦,肉質爽彈,醬汁調教得恰到好處,酸甜度平均,又有一陣辛辣,豪邁度十足。

其實伴碟的蓮藕酥亦非常吸睛,造型不單近似,咬落鬆化酥脆,有水準。

鹽烤羊腿

事前要用海鹽水泡浸一天,所以每天只能限量供應,即烤即上檯,可以有兩種食法,先把表層帶焦香的薄片,加入京惹絲及青瓜,塗點海鮮醬,再用糢糢皮包起,一啖咬落,不單有羊肉的羶香,又有京惹的清新,風味獨特,大廚更會先將第一層薄切完,再把羊腿重新烤一次,目的是每羊肉每層都有肉香及保溫,細心度十足。

客人亦可直接把羊肉片蘸點孜然粉或即刨岩鹽,味道會更鮮,亦更有漠北風情。

羊腩汁燴時蔬

可說是魔鬼天使混合體,生菜選取了最甜嫩的芯位,但竟然澆上濃稠的羊腩汁,惹味到不得了。

麻香担担麵

帶有川菜中的麻辣味道,濃稠的担担湯,掛滿了麵條之上,入口帶柔韌,三扒兩撥便見底,實在太耐沒踫上如此具水準的同類麵條了,

牛油果珍珠露

絕對是店方名物,牛油果露清甜滑溜又潤喉,幾顆珍珠增加了口感,冰涼透心的感覺真好。

雖然整餐飯差不多都以羊作穿插,但卻展現了不同風格,由前菜到甜品都毫無冷場,令人絕不覺膩,在這個秋冬的日子,大家可不愁寂寞。
