一行三人前來,散點了四份前菜小點,另挑了三款主菜分享品嚐。

Caprice Salad (Mix Green, Heirloom Tomato, Balsamic Caviar, Sesame Dressing) 是第一道送上的冷盤前菜,色彩自然奪目,菜式的重點顯然落在一眾 Heirloom Tomato 。筆者自問對 Heirloom Tomato 無甚研究,只知是擁有特別基因的特色蕃茄或以不同蕃茄配種而成的新種蕃茄。因基因和一般蕃茄不同,所以不論賣相、型狀、顏色、質感與味道都多款多變。是日吃的蕃茄有紅黃綠三色,普遍茄心比較結實,水份比一般蕃茄少一點,但甜香口味依舊。如無記錯的話,黃色的蕃茄明顯較為爽實。純粹品嚐蕃茄的話,部份朋友可能會覺得口味太原始單調,有見及此,主廚特意引入充滿醋香味道的 Balsamic Caviar 作點綴,清新醒胃的感覺頓時提升不少。

要盡興品嘗日本料理,刺身卷物這些美食當然絕不能少,但作為新派菜館,單純一碟刺身實在不能滿足大家,反而一道經過細意裝飾調味的 carpaccio,明顯是一個兩全其美的好選擇。菜式 Seafood Carpaccio with Plum Sauce (Snapper, Salmon, Scallop, Shark Cartilage, Balsamic Vinegar),賣相比 Caprice Salad 更華麗,矜貴的魚子醬與金箔襯飾比比皆是。菜式主要用上三文魚、鯛魚及帶子三款魚生片,要品嚐重一點魚香味道要吃三文魚;著重爽實口感要嚐鯛魚;着眼鮮甜味道的話帶子是不二之選。大小魚子、蟹籽及酸黃瓜粒與魚生片湊合一起,味道更豐富,口感更見層次。

卷物 Cima Spring Roll (Wagyu Beef, Caviar, Avocado, Sea Urchin) 是「重口味」之選,何解?因當中不論魚子醬、海膽、吞拿魚腩與和牛皆能獨當一面。在云云珍品食材中,尤愛甘甜味濃的海膽及鬆軟化口的肥牛。至於下方的牛油果卷物,賣相相對平平,予人少許鬆散之感。另外,整份卷物亦予人上重下輕及亮點失重之意。

接下來是一道炸物 Japanese Oyster Topped with Sea Urchin (Deep-fried Oyster, Sea Urchin, Perilla Leaf)。用上的鮮蠔產自日本,體型雖不算很大隻,但蠔身都算飽滿肥美,只可惜的油炸外層口感實身,脆感不足,失了炸物最重要的賣點。

主菜 Braise Boston Lobster (Morel, Edamame, Shimeji Mushroom, Sea Urchin),以波士頓龍蝦入饌,口感結實彈牙,雖然蝦香味道不及南龍或澳洲龍蝦,但在澆上大量鮮黃甜美的海膽汁後,兩者差距頓時收窄得可以忽略。當然,以海膽做汁是否太奢華又是另一問題。

今天點菜的話事人是牛痴,稍為看漏眼一頓純牛宴已放在眼前,都怪點菜時只顧四處拍照... 繼和牛卷物外, Cima Wagyu Burger (Tomato, Onion, Cheddar Cheese with Beetroot Sauce) 是另一和牛菜式,以大路的蕃茄片、洋蔥及車打芝士作配菜。醬汁方面,主廚棄用常見的茄醬芥末或沙律醬,而用上紫紅色的紅菜頭汁,健康又特別。至於主力和牛漢堡扒,基本上差不多熟透,肉香確實比一般漢堡扒濃郁一點,但肉汁有欠豐盈,有點美中不足。

最後一道主菜還是和牛佳餚,而且更是正正式式的和牛牛扒 Grilled Wagyu Beef Steak (Smoked Mash Potato, White Radish, Leek, Black Truffle) 。肉色粉嫩的和牛,透白的脂肪層清晰可見,牛味夠香夠濃。置於口中細嚼一番,豐碩的油花源源溢出,奇怪... 和牛扒的質感雖未至於韌,但沒預期般鬆軟也是事實,究竟是選材部份或烤煮問題則有待考究。

作為新派日菜,各菜式的賣相與配搭確能給予驚喜,用料選材亦富一定質素。今回午市到訪只試了數度美饌,下回有機會再和好友再來 Happy Hour 試試各式佳釀與佐酒小吃。
