To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 這間食肆坐落於紅磡的富貴屋苑裡,而且店名「名廚」看起來似是有著一股氣派。以前小妹都有來幫襯過,水準屬中上。今次再來,發現內部裝修過,燈光變得光猛點,環境比以前茶記格局提升了一點點。不過原有的卡座和方桌都「有得留底」。不過慳妹原則:入來食店不是「食環境」的。所以在午市期間叫了一個「碟頭飯」,餐牌依然是包羅萬有,而其中每日都有五款被納入午市快餐,賣平D,送餐來得快D咁啦。即使叫單頭在午市都會送湯和餐飲(熱飲)的,所以不少街坊和附近工作的人會湧到這店來吃。員工都係快手快腳。配合新裝修,也改了用一個兜來盛放餐具。我吃了一個簡單的豆腐斑腩飯。碟頭飯依然是大大碟(小妹忘記了叫「少飯」),數埋都有四﹑五件豆腐和兩大塊加一小塊斑腩魚塊。用料依然豐富。伴飯的獻汁稠度適中,有琉璃獻的晶瑩度。味道不太鹹,可以。而豆腐清清淡淡,外皮薄而內裡嫩滑。斑塊有薄薄的脆漿包裹著來炸成,不過炸得較為乾身,若然沒有沾上獻汁便顯得無味。飯較硬身,間中有一塊塊「飯團」。
