To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 咁多個國家,我都係鍾情日本菜。唸唔到喺中環LKF California Tower 都有一家幾有心思的日本小店,主打由日本不同地方運到的食材,可以話係用一餐飯價錢和你遊歷整個日本,呢份誠意絕對啱我呢個日本通!好掛住日本啊!餐廳叫FUMI 漢字是文 希望把不同地方的文化帶到香港。今次黎食係佢的summer 8-course tasting menu 加sake pairing ! 係全日本當日新鮮的食材,好期待!鍾意飲清酒嘅人就唔可以錯過。店入邊嘅環境都好舒適,唔單止好似西餐廳一樣咁舒服,仲加入左唔同日本嘅文化元素。先上菜!頭盤打頭陣的先係博多海鰻配魚子醬和青檸,千兩茄子海膽田樂和富山灣的白蝦壽司。最驚喜是白蝦,入口鮮味非常,小小的一件,就足夠打開今次晚餐的味蕾。海膽入口鮮甜,出色同茄子好夾。係我最期待嘅刺身的部分。今次除咗有鯖魚、仲有鰹魚,鯛魚及拖羅。拖羅入口有油香,好肥美呀!而且每樣都有兩件,淨係呢份刺身都已經值回票價。感受到係新鮮時令的食材!加上手磨的wasabi 絕對係高級的象徵。茄子炸左咗之後加入車海老,海膽等等食材,再用上湯燴好,就成了這個煮物。鮮甜可口,加埋茄子可以吸左湯汁

係我最期待嘅刺身的部分。今次除咗有鯖魚、仲有鰹魚,鯛魚及拖羅。拖羅入口有油香,好肥美呀!

茄子炸左咗之後加入車海老,海膽等等食材,再用上湯燴好,就成了這個煮物。鮮甜可口,加埋茄子可以吸左湯汁,好特別啊,第一次食,可以飲埋d湯不過有d甜。

而燒物方面,就係用咗香川縣嘅白露荀,每年嘅五六月都係呢個珍貴食材的嘅當造季節,當加入左豬腩肉之後,配上溫泉蛋,入口甜甜地,燒肉汁亦都好夾,好有日本去左居酒屋嘅感覺,加埋來自福島縣嘅純米酒,一大享受。

天婦羅
天婦羅可能係最普通不過嘅食材,不過當中部份最令人感到驚喜就係蓮藕包住打碎左嘅蝦肉,令到整個蓮藕嘅層次更加分明。

另外,小鮎魚都係第一次食,入口甘甘地,記得唔好食個頭因為感覺有啲苦,特別!

宮崎牛,入口肥瘦平均,入口雖然有份油香,而且軟淋淋,肉香都好濃,但係唔會食到好膩。得三塊真係好唔夠喉
加埋煮過嘅洋蔥,甜甜地,點埋啲汁簡直係一流。

一餐飯又點可以冇啲飯落肚呢?

加上三文魚籽,而且仲有鹽漬左嘅昆布,飯係日本嘅米,好出色。

最後就係用日本生果來做結,免頭嘅食用花,原來係可以食,不單單是裝飾,仲令到成個甜品好似一件藝術品一樣。包括有時令嘅蜜瓜、櫻桃、山梨縣嘅蜜柑,再加多杯梅酒,成為一個完美嘅句號。
