To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 最近出不到國到日本吃Omakase,留在香港也找到了一間不錯的選擇!鮨燐在上環及尖沙咀都有分店,地理位置方便。我們就選擇了$1488的廚師發板套餐~ 店員好細心會問我哋有啲乜嘢唔食,我敏感唔食蝦,所以都會特別安排!前菜有胡麻豆腐配芥末豉油、春菜(蕨菜)及白梅貝,胡麻豆腐將兩者混為一體,輕微鹹香好開胃!春菜配上蒟蒻非常爽口清新。而白梅貝則味道鮮甜彈牙,值得一試再試!針魚是葉形狀,點上薑豉油即可享用,肉質彈牙鮮甜,甚有鮮味。石鯛薄造,配以酸汁、紫蘇、萬能蔥及辣蘿蔔蓉,吃起來滿口豐腴油脂及細膩口感。日本岩手縣米崎蠔(真蠔),土佐醋啫喱,大大隻蠔身肉質爽口肥美,味道偏重海水味,帶子位亦相當甜,加上啫喱令味道更清新。間八魚,後面那件有燒香,厚切,質感前面好爽彈(正!),後面一件更有口感!好味到不得了!鰆魚是Seasonal魚,口感較林,入口即化,頗有鮮味。鱈魚BB配脆口的薑類植物花,令軟林質感的鱈魚加多一重層次。中吞拿魚腩配喜馬拉雅山岩鹽,脂肪比例較高,魚香持久!腦天吞拿魚,一條魚只有兩片,油脂充足入口即化,口感軟滑魚味濃郁。柚子燒竹纖魚,配京都辣椒及龍珠果,燒得外皮香,裏面的魚質緊實飽滿,味道

柚子燒竹纖魚,配京都辣椒及龍珠果,燒得外皮香,裏面的魚質緊實飽滿,味道鮮美,亦有充分鹹香,餐廳安排了三大塊魚,我認為兩塊都夠了!

青檸啫喱清一清味蕾,之後就到壽司部份了。

活赤貝鮮味十足,又爽口!(朋友是寶蝦,蝦籽)
深海大池魚質感爽滑,入口魚油甘香細膩!
活北寄貝貝肉又香又鮮甜,肉厚爽脆,平日很少可以品嚐到!
赤鯥魚是燒過,肉質好嫩滑,鮮甜無比!
大吞拿魚腩無筋,油脂十足入口即化!
馬冀海膽入口相當鮮甜即溶,全餐飯的大滿足!
