應友人之約,來到位於灣仔,位置就在第一代法式薄餅名店 La Creperie之下的過江龍居酒屋「Jan Jan串揚專門店」,一試這店子源自日本的串揚風味。 這兒地方並不太大,環境氣氛甚有大和風情,處身其內,幾讓自己幻想置身於扶桑之中。 「串揚」其實是介乎串燒與天婦羅之間的一種炸物,把食材串起後再在外面炸得金黃而成,在大阪甚受歡迎,是當地的地道食品,講究的是食材夠新鮮,所用的油也要好,才能把串揚炸得像是披了一層薄薄的美麗金衣。「串揚」雖然看似熱氣,但只要在吃時蘸以醬汁,再以椰菜包著來吃,便不必為此而擔心。先來兩串一牛一豬的串揚,兩款都頗好吃,而我較喜歡的,則是以日本黑毛豬為材料的一款。 「手揚先唐揚」的雞翼肥大肉厚,炸得外脆內嫩,甚有水準。「高湯雞蛋卷」用的是來自日本的雞蛋,味濃而滑,趁熱吃,最好。另一道蛋類菜式「半熟煮玉子」,薄薄的金黃炸漿內,是嫩滑的半熟日本雞蛋,吃時下點鹽在流心的玉子蛋漿上,味道更佳。「北海道海膽湯葉卷」在炸腐皮包紫菜上面放上海膽與少許日式芥末,一口把它吃下,豐富的口感充盈口中,感覺滿足。「黑松露芝士薯蓉」香口熱燙,芝士、薯蓉、黑松露與火腿的組合,顏色配搭鮮

挺喜歡這兒的串揚並非只得肉類,而是有大量的蔬菜,就像這晚,我與友人們便先後點了蘆筍山芋紅薯蓮藕等蔬菜,當中尤以爽甜的蓮藕與長條的蘆筍最得我的歡心。
