如何能 和你 就從此不相見 有時還會恨然後我有我生活 然後你再愛別人如何能 和你認了不相襯 有時仍不忿如若要愛你 是這樣靠天份這世上 除了我 誰能愛你除了共你 可與誰熱吻當大家各自有各自生活,但有天我在某熟悉的環境,突然在腦海中浮現出我倆的回憶……我又忍不住想你了……但我不敢打擾你,因為有些現實是需要接受的,你可以愛上她,我可以愛上他,但他永遠不及你…… 最後我不敢找你,希望你可以慢慢從我的生活消失,我們就不再相見吧!今晚J帶我來到JanJan串揚專門店吃晚餐,我發現每次跟J也是吃日本菜,我們就是祟日的港女吧!Jan Jan Kushikatsu香港店位於灣仔皇后大道東100號2樓,是樓上舖來的,佔地1,000平方呎,大概有35個座位,是L字型的酒吧枱圍著半開放式的廚房,除了吧枱位,還有兩間廂房是要把鞋脫去的榻榻米位。而店內的行政總廚猜山英樹出生於大阪,曾於大阪Jan Jan Kushikatsu總店工作十多年。店內的串炸物種類繁多,包括肉類、海鮮、蔬菜、時令食品,以及日式串燒,招牌菜有手羽先唐揚、牛串揚、海老串揚、雞胸肉紫蘇卷串揚及香港限定的咖喱飯串揚。串揚必備的當然是那醬汁,店內用上金屬容器盛著的醬油,而蘸醬油也是有規定的,只可以蘸一次,不可以翻蘸(ソースが二度漬け禁止),因為醬汁是客人一同共用的,如果醬汁不夠,可以用上椰菜盛載醬汁加在串揚上。「串揚」(串揚げ)其實是沾上炸漿油炸的炸品串。炸串揚嘅油要混合 3 款日本入口嘅油調成,因應唔同食材用唔同溫度製作,炸漿是每天廚房調好再發酵半天才可使用。每個細節位也很講究,所以不能少看日本人的專業及態度啦!高湯雞蛋卷前菜點了店內人氣之選,用上高湯製作的雞蛋卷,外賣比一般雞蛋卷來得濕潤口感豐盈,每口也帶蛋香加上高湯的味道,嫩滑的口感,一口接一口,吃過不停,加上蘿蔔蓉更滋味。螢光魷魚(刺身)這個季節就是要吃螢光魷魚,這配上柚子麵豉醬有種清新的感覺,螢光魷魚就是有種滑潤的感覺,入口鹹鮮味比較重,所以蘸醬會更好。手羽先唐揚店內第二人氣食品,用上秘製醬汁再炸過香脆,外層皮下油脂豐腴,雞肉肉嫩多汁,醬汁帶微甜更易入口。牛在大阪吃過一次就很難忘,因為串揚下的牛肉粒是肉汁豐盛,那牛味是香濃,炸皮薄身,蘸汁不會太鹹。這家的牛揚是肉質不會太難嚼,色澤帶點褐色內心卻是粉嫩色澤。雞肉丸這就是免冶雞肉加上雞軟骨製成,但廚師加上紫蘇葉令味道更特別,雞肉需要未算肉汁豐盛,但雞軟骨爽脆,加上紫蘇葉獨特香氣,這個雞肉丸串都頗特別,謹記生雞蛋是要向店員要求加的,如果想更有濕潤口感,一定要加生雞蛋。羊架羊架是選擇一份大的,加上黑椒等調味,入口濃烈味道,不是羶味是惹味的燒烤味,脂肪跟肉份量均衡,用上錫紙包著骨位,方便食客用手吃用,也不會沾上半點油膩。牛舌牛舌肉厚每粒大小勻一,入口滿滿肉汁,加上檸檬汁更帶出鮮味,外層焦焦的邊皮更脆口,外脆內嫩的牛舌。蘆筍蘆筍是一條長條,加上沙律醬中和,新鮮富水份的一道串揚,入口那層炸皮薄似一層膜,每一口都是蘆筍的露水。蓮根(蓮藕)在大阪吃過串揚也是愛上了蓮藕這個菜色,日本的蓮藕是不是全部都是爽脆鮮甜的,每次吃到都覺得蓮藉脆口不會軟腍,那鮮嫩感只有日本蓮藕才有吧。半熟煮玉子半熟煮玉子,這就連蛋也可以作串揚,在蛋白外蘸上炸漿,如果炸香而不影響蛋內的蛋漿變熟,也是技巧的一種。上菜用上匙羹盛載,把雞蛋一分為二,那蛋漿慢慢流出,入口要小心熱騰騰,入口還是能嘗到香濃蛋味,口感滑溜。這晚一串接一串串揚很快就把肚子填滿了,吃到最後店家會奉上熱茶供客人,這也是一個貼心的舉動。最後飲飽食醉當然要去個洗手間才離開,想不就的事就發生了,在洗手間內有漱口水供應,所以你看看日本過江龍不只把食物帶來香港,還把那細心的服務帶到來香港的。店內的服務是貼心的,我們把各串揚吃過,那竹籤桶只有一個,但離我太遠,但經理看到我吃得這般狼狽,他拿多一個給我放竹籤,這不就是我不說你也懂吧,服務就是要這樣。 continue reading

我當燒飯團係主菜,一碟有二舊,我地叫左二個口味,味噌口味同醬油味,食落差吾多味道,不過味噌係比較偏咸少少。咬開後,你會發現有爽脆既木耳喺中間。外面煎到好似飯蕉既脆脆,好正!呢個天使蝦既賣相已經值門票價了,每一隻炸蝦都有一個小木碟裝住,好精緻。個樣靚,但味道都好好,又係新鮮都爆,又大隻,絕對係抵食。平時食燒牛肉串就算吾全熟都會又乾又韌,但今次呢個牛串揚,真係咬落去,係會感覺到啲牛肉馬上喺你口腔溶化甘,一層脂肪一層肉。員工教我地邊啲炸物應該要沾佢地個秘制醬汁。聽佢地介紹呢個炸半熟蛋係好考厨師既技術,面頭果層炸面又吾會同隻蛋飛離,個要係留心蛋,好味吖。金黄色既炸帶子帶俾我一個驚喜,佢既帶子肉好大粒,好新鮮,加上中間會有幾片蒜片,我本身係吾食蒜既,但今次又覺得佢二樣野又幾夾,不過吾食得蒜既朋友仔要留意下了。我地叫左個柚子雪葩做甜品,清清的味道,清清係指清新,吾係冇味!食完甘多甘香口既美食,呢個可以幫助消化吖,冇甘濟! continue reading

「串揚」其實係沾左炸漿油炸嘅炸物串,係日本大阪好出名!今日黎左為於灣仔嘅串揚店,食得好過癮~ 介紹以下幾樣野我覺得一定要試嘅野!半熟煮玉子 $23呢個真係驚喜!佢好薄嘅皮底下係一個流心蛋,爆哂蛋黃出黎,好滿足。老闆仲教我同朋友咬左第一啖之後要加少少鹽, 吊哂啲蛋香出黎😍手羽先唐揚 $35雞翼控必色,超juicy,帶點微辣,加點白芝麻令成件事好香口✌🏻炸鮮蠔$38通常出去食炸蠔都會食到又腥又細,食完又肚痛嘅差蠔。但呢到個蠔係十分鮮,炸過之後都好大粒,加佢地嘅他他醬食就perfect!炸蓮藕$27食落好爽口同咪好清,重唔會因為炸過之後乾哂。食左咁多炸野之後覺得呢個冇咁濃同重味,好適合係食物之間做個過渡。釀香菇$29香菇釀左雞肉係上面,佢地烤個時菇會嗦哂啲雞嘅汁入去,口感好rich continue reading
